Steps

Before you start
  • Marinate chicken in yogurt mixture for at least 2 hours (or up to 8 hours) in the refrigerator before cooking.
  • Preheat oven to 375°F (190°C) 15 minutes before baking the burritos.
  • Brew saffron threads in warm water so they release their color and flavor.
  • Have all spices measured and ready before you begin cooking the rice.
  1. Marinate the chicken

    • In a large mixing bowl, combine yogurt, ginger-garlic paste, cumin, coriander, garam masala, turmeric, salt, and black pepper.
    • Mix until smooth.
    • Add the chicken pieces and stir until evenly coated.
    • Cover and refrigerate for at least 2 hours, preferably 4 to 8 hours, so the spices penetrate the meat.

Ready when: Chicken is evenly coated and has absorbed the yogurt mixture

Tip: Longer marinating time (6–8 hours) yields more flavorful, tender chicken. You can marinate overnight.

  2. Toast the whole spices

    • Heat the vegetable oil in a large skillet over medium heat.
    • Add the sliced onions and cook for 3 to 4 minutes, stirring often, until they soften slightly but are not yet golden.
    • Add the cardamom pods, cinnamon, cloves, and bay leaf.
    • Toast for 1 minute, stirring constantly, until fragrant.
    • Watch carefully so the spices don't burn.

Ready when: Spices are fragrant and onions have softened slightly

Tip: Toasting whole spices releases their essential oils; don't let them scorch or they'll taste bitter.

  3. Cook the biryani rice

    • Add the rinsed basmati rice to the skillet with the toasted spices and onions.
    • Stir gently for 2 minutes to coat the rice in oil and toast it lightly.
    • Pour in the water and add salt.
    • Bring to a boil over medium-high heat, then reduce to medium-low, cover tightly, and simmer for 12 to 14 minutes until the water is absorbed and rice is tender.
    • In a small bowl, pour the saffron threads and their steeping liquid over the rice just before removing from heat.
    • Stir gently with a fork to distribute the saffron color throughout.

Ready when: All water is absorbed, rice is tender, and saffron is distributed throughout

Tip: Keep the lid on during cooking; peeking lets steam escape and slows cooking. Use a tight-fitting lid or cover with foil if needed.

  4. Cook the marinated chickenOven 165°F / 75°C

    • Heat 1 tablespoon of vegetable oil in the same large skillet over medium-high heat.
    • Working in batches if needed to avoid crowding, add the marinated chicken pieces and cook for 8 to 10 minutes, stirring occasionally, until the chicken is cooked through and no longer pink inside.
    • An instant-read thermometer should read 165°F (74°C) in the thickest piece.
    • If the yogurt marinade sticks or chars, reduce heat to medium.
    + Show details

Ready when: Chicken is opaque, firm, and registers 165°F (74°C) on a thermometer

Tip: Don't overcrowd the pan; cook in batches if needed so the chicken sears rather than steams. The yogurt will caramelize on the exterior, adding deep flavor.

  5. Combine rice and chicken

    • In a large bowl, gently fold the cooked chicken into the saffron-infused rice along with any pan juices.
    • Taste and adjust salt if needed.
    • Stir in the fresh cilantro and mint if using.
    + Show details

Ready when: Ingredients are evenly mixed and fragrant

Tip: Fold gently to keep the rice grains separate and the chicken moist.

  6. Assemble the burritos

    • Warm the flour tortillas by wrapping them in a damp paper towel and microwaving for 30 seconds, or warming them one at a time in a dry skillet.
    • Lay a warm tortilla on a cutting board.
    • Place about ¾ cup of the chicken-rice mixture slightly below the center of the tortilla.
    • Sprinkle with about ¼ cup shredded cheddar cheese.
    • Fold the bottom edge of the tortilla up over the filling, then fold in the left and right sides, and roll tightly away from you to form a burrito.
    • Place seam-side down in the prepared 9×13-inch baking dish.
    • Repeat with the remaining tortillas, filling, and cheese until all 6 burritos are assembled in the dish.

Ready when: All six burritos are tightly rolled and arranged seam-side down

Tip: Warm tortillas are pliable and won't tear. Don't overfill, or they'll burst open during baking. Tuck in the sides firmly so they don't unroll.

  7. Brush and bakeOven 375°F / 190°C

    • Preheat oven to 375°F (190°C).
    • Brush the tops of the burritos with melted butter.
    • Bake for 15 to 20 minutes until the tortillas are golden brown and the filling is heated through.
    • The burritos should be warm throughout and slightly crispy on the outside.
    + Show details

Ready when: Tortillas are golden brown and filling is steaming hot inside

Tip: If the tops brown too quickly, tent loosely with foil for the last 5 minutes. The melted butter helps the tortillas crisp and brown evenly.

  8. Rest and serve

    • Remove the baking dish from the oven and let the burritos rest for 2 to 3 minutes before serving.
    • This firms them up slightly so they're easier to eat.
    • Serve warm, garnished with extra cilantro, mint, or a dollop of yogurt on the side if desired.

Tip: A brief rest makes the difference between burritos that hold together and ones that fall apart.

Good to know

Tips
  • Saffron threads are expensive but essential to the biryani character. A little goes a long way; steep them in warm water to release their golden color and delicate floral note.
  • Don't skip the longer marinating time if you have it. Overnight marinating allows the yogurt and spices to deeply penetrate the chicken, making each bite tender and aromatic.
  • Keep whole spices in the rice rather than picking them out; they're edible and add bursts of flavor. Diners can push them aside if they prefer.
  • For a spicier version, add ½ teaspoon of cayenne pepper to the yogurt marinade, or serve with a fiery red chutney or hot sauce on the side.
Make ahead

You can prepare this recipe in stages for entertaining. Marinate the chicken overnight (up to 12 hours). Cook the rice and chicken up to 4 hours ahead; let them cool, cover separately, and refrigerate. Assemble the burritos and refrigerate them, covered, for up to 8 hours before baking. Bake from cold for an extra 5–8 minutes to ensure the filling is heated through (cover with foil if the tortillas brown too quickly).

Storage & reheating

Room temperature: Store leftovers in an airtight container for up to 2 hours. Refrigerator: Cover and refrigerate for up to 3 days. Reheat on a baking sheet at 325°F (163°C) for 12–15 minutes, covered with foil, until warm. Freezer: Wrap each burrito individually in foil and plastic wrap; freeze for up to 3 months. Thaw overnight in the refrigerator and reheat as above, adding 5–10 minutes to the baking time.

Substitutions
  • basmati rice → jasmine rice or long-grain white rice. Use the same quantity; jasmine rice is slightly softer and will give a gentler texture, while long-grain white rice will be a touch firmer.
  • sharp cheddar cheese, shredded → Monterey Jack, Oaxaca, or mozzarella cheese. These cheeses melt smoothly and won't overpower the biryani spices. Avoid very sharp varieties that compete with the cardamom and saffron.
  • saffron threads → turmeric (use ½ teaspoon for color) or omit. Saffron is irreplaceable for authentic flavor, but turmeric gives color and a hint of earthiness if saffron is unavailable or too expensive.
  • fresh ginger and garlic paste → 2 tablespoons (15 g) minced fresh ginger plus 3 minced garlic cloves, combined. Fresh ginger-garlic paste is ideal for quick marinating, but this fresh combination yields nearly the same result if you mince finely.
