Ramadan Lantern Pistachio Phyllo Rolls with Spiced Honey

Crispy phyllo pastry rolls shaped like traditional Ramadan lanterns, filled with toasted pistachios and wrapped with spiced honey syrup. These elegant pastries combine the rich, nutty flavors of cardamom and cinnamon with the bright crunch of roasted pistachios. Perfect for iftar celebrations or Ramadan gatherings, they're made by layering phyllo sheets with melted butter, forming them into lantern shapes, baking until golden, and finishing with a warm aromatic honey syrup infused with cardamom, cinnamon, and clove.

Steps

Before you start
  • Thaw phyllo dough in the refrigerator for at least 4 hours or overnight
  • Toast the pistachios in a dry skillet over medium heat for 3–4 minutes until fragrant, then let cool before chopping
  • Position oven rack to the middle and preheat to 350°F (175°C)
  • Have melted butter ready (keep it warm but not hot)
  1. Make the spiced honey syrup

    • In a small saucepan, combine the water, sugar, honey, lemon juice, crushed cardamom pods, cinnamon stick pieces, whole cloves, and salt.
    • Bring to a simmer over medium heat, stirring occasionally, for 8–10 minutes.
    • The mixture should become slightly thickened and fragrant.
    • Remove from heat and stir in the rose water if using.
    • Set aside to cool to room temperature (about 15 minutes).
    • Strain out the whole spices before serving, or leave them in for a more rustic presentation.

Ready when: Syrup is fragrant, slightly thickened, and coats the back of a spoon

Tip: Don't overcook the syrup—it will thicken more as it cools. A slightly thin syrup is better than one that's too dark.

  2. Prepare the phyllo and filling

    • Remove the phyllo box from the refrigerator and let it sit at room temperature for 30 minutes.
    • Meanwhile, measure out the chopped toasted pistachios into a shallow bowl.
    • Have the melted butter nearby in a small dish.
    • Lightly dampen a kitchen towel and place it nearby—you'll use it to cover phyllo sheets as you work to prevent them from drying out.

Ready when: Phyllo is pliable and room temperature

Tip: Working quickly with phyllo is essential—exposed sheets dry out within minutes, so have everything ready before you start assembling.

  3. Assemble the first lantern roll

    • Unroll the phyllo and place one sheet on a clean, dry work surface.
    • Using a pastry brush, lightly brush the entire sheet with melted butter.
    • Place a second sheet directly on top and brush it with butter as well.
    • Sprinkle about 2 tablespoons (15 g) of the chopped pistachios evenly over the two-layer base, leaving a ½-inch border on all sides.
    • Starting from one short end, tightly roll the phyllo into a log, tucking in the sides slightly as you go so the filling is secure.
    • This roll should be about 1 inch (2.5 cm) in diameter.
    • Immediately transfer it to a parchment-lined baking sheet.

Ready when: Roll is compact and firmly wrapped

Tip: Keep the unused phyllo stack covered with the damp towel at all times. Work as quickly as you can—phyllo dries out within 3–4 minutes of exposure.

  4. Form lantern shapes

    • To create the lantern shape, gently bend the assembled roll into a tall oval or loop, bringing the two ends toward each other without pressing them together.
    • The roll should stand upright and resemble a traditional lantern handle.
    • You can support it with a small piece of crumpled foil on the inside if needed.
    • Repeat the assembly and shaping process with the remaining phyllo sheets, butter, and pistachios to form 11 more lantern rolls.
    • You should have 12 rolls total, each on the baking sheet, spaced about 1 inch (2.5 cm) apart.

Ready when: All 12 rolls are shaped and arranged on the baking sheet without touching

Tip: If the rolls begin to dry out as you work, cover them loosely with plastic wrap until you're ready to bake.

  5. Brush and bake the lanternsOven 350°F / 175°C

    • Once all lanterns are formed, brush each one generously with any remaining melted butter, especially on the outer seams and the handle.
    • Place the baking sheet in the preheated 350°F (175°C) oven and bake for 22–25 minutes.
    • The lanterns should turn a deep golden-brown color and feel crispy to the touch when done.

Ready when: Lanterns are deep golden-brown and crispy; phyllo sheets are firm and no longer soft

Tip: Rotate the baking sheet halfway through baking if your oven tends to brown unevenly. If the lanterns are browning too quickly, lower the oven to 325°F (160°C) for the remaining time.

  6. Cool and drizzle with syrup

    • Remove the baking sheet from the oven and let the lanterns cool for 5–10 minutes at room temperature.
    • While they are still warm but no longer steaming, slowly and generously drizzle the cooled spiced honey syrup over each lantern, allowing it to soak in slightly.
    • You can drizzle syrup down the handle and over the sides, or present it on the side for guests to drizzle to taste.
    • Serve the lanterns warm or at room temperature.

Ready when: Lanterns are warm but cool enough to handle; syrup is soaked in but pastry remains crispy

Tip: Drizzle the syrup while the pastry is still warm—this allows the phyllo to absorb the honey and spices without becoming limp. Cold lanterns won't absorb as much syrup.

Good to know

Tips
  • Phyllo dough is delicate and dries out quickly. Keep unused sheets covered with a barely damp towel at all times. Cold phyllo is easier to handle than room-temperature phyllo, so you can work with a few sheets at a time and keep the rest chilled.
  • If you don't have whole green cardamom pods, you can substitute 1 teaspoon of ground cardamom, but whole pods give a fresher, more aromatic flavor to the syrup.
  • The lantern shape is traditional for Ramadan, symbolizing the lamps lit during the holy month. If you prefer, you can shape the rolls straight and cut them into 2-inch (5 cm) pieces after baking for a more traditional baklava presentation.
  • For a special presentation, sprinkle a few finely chopped pistachios or a light dusting of cinnamon on top of each lantern just before serving.
Make ahead

Lantern rolls can be assembled up to 4 hours ahead of baking and kept covered with plastic wrap at room temperature. The spiced honey syrup can be made 1 day ahead and stored in an airtight container in the refrigerator; warm gently before serving.

Storage & reheating

Store baked lanterns in an airtight container at room temperature for up to 2 days. They will remain crispy for the first day but will begin to soften slightly by day two. Do not refrigerate. To reheat, place on a baking sheet and warm in a 300°F (150°C) oven for 5–7 minutes to restore crispiness. The spiced honey syrup keeps in an airtight container in the refrigerator for up to 1 week; warm before serving.

Substitutions
  • raw shelled pistachios → chopped blanched almonds or walnuts. Use the same weight. Toast them the same way. The flavor will be milder but still delicious.
  • green cardamom pods → 1 teaspoon ground cardamom. Add ground cardamom to the syrup at the end of cooking instead of using whole pods. The flavor will be slightly more intense.
  • rose water → orange blossom water or 1 teaspoon vanilla extract. Use the same amount. Orange blossom water is traditional in some regions; vanilla gives a warmer note.
  • honey → light agave nectar or white corn syrup. Use the same amount. The syrup will be less floral but still aromatic with the spices.
