Ramadan Iftar Lentil and Date Sauce
A naturally sweet and protein-rich lentil sauce enriched with dates, garlic, and warm spices. Traditionally served over pasta during Ramadan iftar, this sauce delivers deep umami and subtle sweetness in under 30 minutes using an Instant Pot. The dates add natural richness and help create a silky texture without cream.

- About 3 cups sauce, serves 4 over pasta
Steps
Before you start
- Pit and roughly chop the dates ahead of time
- Have your vegetable broth ready (room temperature or warm)
- Start cooking pasta separately just as you begin sautéing aromatics
Sauté aromatics
- Turn the Instant Pot to sauté mode on high heat.
- Add the olive oil and heat for 30 seconds until shimmering.
- Stir in the minced garlic and cook for 1 minute, stirring constantly, until fragrant.
- Do not let it brown.

Ready when: Garlic is pale, fragrant, and beginning to lighten in color
Tip: Burnt garlic tastes acrid and will ruin the sauce. Keep the heat high but watch carefully.
Add spices and toast
- Add the ground cumin, cinnamon, paprika, salt, and black pepper.
- Stir continuously for 30 seconds to bloom the spices and release their oils.
- You should smell warm, fragrant spices.

Ready when: Spices are fragrant and darkened slightly
Tip: Blooming spices in fat amplifies their flavor. Don't skip this step.
Add lentils and broth
- Pour in the vegetable broth and scrape the bottom of the pot with a wooden spoon to deglaze any browned bits.
- Add the rinsed red lentils and chopped dates.
- Stir well to combine.

Ready when: All ingredients are mixed together; no lumps of lentils visible
Tip: Deglazing captures all the caramelized flavor from the spices and aromatics.
Pressure cook
- Cancel the sauté function.
- Close the lid, make sure the vent is set to 'sealing.' Cook on high pressure (15 PSI) for 8 minutes.
- The pot will take 2–3 minutes to build pressure before cooking begins.
+ Show details− Hide details
Ready when: Cooker reaches pressure and the timer counts down 8 minutes
Tip: Don't open the lid early or the lentils won't cook evenly and the sauce will be grainy.
Quick release pressure
- Once the cooking time is complete, turn off the Instant Pot.
- Wait 1 minute, then carefully move the vent to 'venting' to release pressure.
- Do this slowly so hot steam doesn't splash on you.
- Once the float valve drops, open the lid.

Ready when: Float valve has dropped completely; steam is no longer escaping
Tip: A quick release is safe here because the lentils won't curdle. Face away from the pot when venting.
Blend sauce smooth
- Using an immersion blender, blend the sauce in the pot for 1–2 minutes until completely smooth.
- If you don't have an immersion blender, carefully transfer the sauce (in batches) to a standard blender, blend until smooth, and return it to the pot.
- The sauce should have no visible lentil pieces.

Ready when: Sauce is silky, uniform, and no granular texture remains
Tip: Blending the sauce emulsifies the dates and creates a naturally creamy, luxurious texture without dairy.
Season with lemon juice
- Stir in the fresh lemon juice.
- Taste the sauce and adjust seasoning if needed—add more salt for depth or more lemon juice for brightness.
- The sauce should taste savory with subtle sweetness and a gentle citrus edge.

Ready when: Lemon juice is fully stirred in; flavors are balanced
Tip: Lemon juice brightens the sauce and prevents it from tasting flat or one-dimensional. Taste before serving.
Good to know
Tips
- Serve this sauce over pappardelle, rigatoni, or any sturdy pasta that can hold the thick sauce. It also pairs beautifully with couscous or rice for a grain-based bowl.
- For a luxurious finish, drizzle a small amount of extra-virgin olive oil and top with toasted pine nuts and fresh cilantro or parsley.
- If the sauce is too thick after blending, thin it with a splash of warm broth or water (¼ cup at a time) and stir well.
- Make a larger batch and freeze in portions. It reheats beautifully and is perfect for quick iftar meals during Ramadan.
Make ahead
This sauce can be made up to 2 days ahead. Cool it to room temperature, store in an airtight container in the refrigerator, and reheat gently over low heat or in the microwave (stirring every 30 seconds) until warmed through, about 2–3 minutes.
Storage & reheating
Room temperature (up to 2 hours in an airtight container), refrigerator (up to 3 days in an airtight container), freezer (up to 3 months in a freezer-safe container). To reheat from frozen, thaw overnight in the refrigerator or defrost in the microwave, then warm gently over low heat until heated through.
Substitutions
- Medjool dates, pitted → Deglet Noor dates or raisins. Deglet Noor dates are less moist; increase the amount to 1 cup and add an extra ¼ cup broth. Raisins work but add less sweetness and body.
- red lentils, rinsed → Yellow lentils. Yellow lentils break down similarly to red and yield a sauce with a faintly earthy tone. Cook time remains the same.
- vegetable broth (or chicken broth) → Chicken or beef broth. Chicken or beef broth adds more savory depth. Use the same amount; taste and adjust salt after cooking.
- ground cumin → Caraway seeds or fennel seeds, ground. These offer a different aromatic profile but maintain the Middle Eastern character. Use the same amount but taste and adjust.
