Steps
Before you start
- Measure all spices before starting
- Have the Instant Pot ready with the trivet inserted
- If using dried chickpeas, soak overnight and drain before cooking
Sauté aromatics
- Turn the Instant Pot to Sauté mode on high heat.
- Once hot, add olive oil, diced onion, and a pinch of salt.
- Cook for 4–5 minutes, stirring occasionally, until the onion softens and becomes translucent at the edges.
- Add minced garlic and grated ginger, stirring constantly for 1 minute until fragrant.

Ready when: Onion is translucent and aromatics are fragrant
Tip: Don't let the garlic and ginger brown; they'll turn bitter. Stir constantly.
Add spices and tomato paste
- Add ground cumin, turmeric, and cinnamon to the pot and stir for 30 seconds.
- Then stir in the tomato paste and cook for another minute, coating the onion mixture.
- This blooms the spices and removes the raw paste flavor.

Ready when: Spices are fragrant and tomato paste is incorporated
Tip: Blooming spices in fat unlocks their flavors; don't skip this step.
Add chickpeas and broth
- Pour in the vegetable broth and stir well, scraping up any browned bits from the bottom of the pot with a wooden spoon.
- Add the drained chickpeas and chopped dried apricots.
- Stir until combined.
- Add salt and black pepper to taste.

Ready when: All ingredients are combined and liquid is bubbling slightly
Tip: Scrape the bottom to prevent any burned bits from affecting the sauce flavor.
Pressure cook
- Press Cancel to exit Sauté mode.
- Lock the Instant Pot lid in place and set to high pressure for 8 minutes.
- The pot will take about 3–4 minutes to come to pressure.

Ready when: High-pressure indicator shows and cooking time counts down
Tip: The pot will hiss and steam as pressure builds; this is normal.
Release pressure
- When the cooking time ends, carefully turn the pressure release valve to Venting (quick release) or let the pressure release naturally for 5 minutes, then finish with quick release.
- Be careful of hot steam.
- Once the float valve drops, carefully open the lid away from your face.

Ready when: Float valve is down and lid opens freely
Tip: If quick-releasing, place a kitchen towel over the valve to shield yourself from the steam.
Finish sauce
- Switch the Instant Pot to Sauté mode on medium heat.
- Stir in the fresh lemon juice.
- Simmer for 2–3 minutes, stirring occasionally.
- The sauce should be glossy and slightly thick, with chickpeas and apricots visible throughout.
- If it's too thin, simmer for another 1–2 minutes.
- If too thick, stir in a splash more broth.

Ready when: Sauce is glossy, smells fragrant, and clings lightly to a spoon
Tip: The lemon juice brightens the warm spices; don't skip it, even if using canned broth.
Garnish and serve
- Turn off the Instant Pot.
- Taste the sauce and adjust salt, pepper, or lemon juice as needed.
- Ladle into bowls or serve over cooked pasta, rice, or couscous.
- Top with fresh cilantro if desired and a drizzle of olive oil.

Tips
- This sauce freezes well—make a double batch and freeze half for a quick meal later. It's perfect for weeknight dinners after Eid celebrations.
- For a creamier sauce, stir in 2–3 tablespoons of tahini or coconut milk at the end of step 6. It adds richness without overwhelming the spices.
- Serve with cooked pasta, rice pilaf, couscous, or crusty bread. It's also wonderful over roasted vegetables like eggplant or zucchini.
- The balance of warm spices and sweet apricots is key to this dish. Taste as you go in step 6 and adjust the lemon juice or salt to suit your preference.
Make ahead
This sauce actually improves when made a day ahead, as the spices and apricot sweetness develop further. Prepare through step 5, cool to room temperature, and refrigerate in an airtight container. Reheat gently in the Instant Pot on Sauté mode (medium) for 3–4 minutes, adding a splash of broth if needed, then proceed with step 6.
Storage & reheating
Refrigerator: Keep in an airtight container for up to 5 days. Reheat gently on the stovetop or in the Instant Pot, adding broth if the sauce has thickened. Freezer: Freeze in freezer bags or containers for up to 3 months. Thaw overnight in the fridge before reheating. Not suitable for room-temperature storage longer than 2 hours.
Substitutions
- canned chickpeas → Canned white beans or lentils. Use the same quantity. Lentils will break down slightly more; white beans give a creamier texture. Both work beautifully and cook in the same time.
- dried apricots → Dried figs, raisins, or prunes (chopped). Use the same quantity. Figs are closest in sweetness and texture; raisins and prunes are slightly tangier but still delicious.
- vegetable broth → Chicken broth or water with 1 teaspoon of bouillon. Chicken broth adds depth; water works but will be less flavorful. Adjust salt to taste.
- fresh ginger → ½ teaspoon ground ginger (plus ¼ teaspoon additional for intensity). Ground ginger is more potent. Use ½ teaspoon total for milder warmth, or go up to ¾ teaspoon if you like bold spice.
