Steps
Before you start
- Preheat your oven to 425°F (220°C)
- Have a small skillet ready for tempering the cumin seeds
- Trim okra just before roasting to prevent moisture loss
Roast the okraOven 425°F / 220°C
- Place trimmed okra on a rimmed baking sheet.
- Drizzle with 3 tablespoons (45 ml) oil, then sprinkle with ¾ teaspoon (4 g) salt and ¼ teaspoon black pepper.
- Toss until every piece is lightly coated.
- Spread in a single layer.
- Roast at 425°F (220°C) for 15–18 minutes, stirring once halfway through, until the okra is golden-brown and tender with crispy edges.
- The pods should collapse slightly when pressed but not fall apart.

Ready when: Okra is golden-brown, tender inside, with crispy outer edges
Tip: Don't crowd the pan—okra needs space to crisp up. If pieces touch, they'll steam instead of roast.
Cool and blend
- Remove the baking sheet from the oven and let okra cool for 2 minutes.
- Transfer to a blender or food processor along with ¾ cup (180 g) Greek yogurt, 1 large minced garlic clove, and 1½ tablespoons (22 ml) lemon juice.
- Pulse until chunky-smooth—you want some texture, not a completely smooth purée.
- The dip should look creamy with visible flecks of okra.

Ready when: Mixture is creamy and chunky, not fully smooth
Tip: Don't overblend—you want the dip to have a pleasant, grainy texture that shows the roasted okra.
Temper the cumin seeds
- While the okra blends, heat 2 teaspoons (10 ml) ghee in a small skillet over medium heat.
- Once shimmering, add 1½ teaspoons (4 g) cumin seeds.
- Toast for 30–45 seconds, stirring constantly, until fragrant and the seeds darken slightly and start to pop.
- If using chili flakes, add ¼ teaspoon now and toast for another 15 seconds.
- Remove from heat immediately—the residual heat will keep cooking them.

Ready when: Seeds are fragrant, darkened, and beginning to pop; aroma is nutty and toasted
Tip: Watch the seeds closely—they burn quickly. The moment they're fragrant and popping, pull the pan off heat or they'll turn bitter.
Finish and serve
- Transfer the okra-yogurt blend to a serving bowl.
- Drizzle the hot tempered cumin seed mixture (ghee and all) over the top.
- Scatter fresh cilantro over the dip if desired.
- Serve immediately with vegetable crudités, pita chips, or flatbread.
- The warmth of the ghee will slightly soften the top layer while keeping the rest cold and creamy.

Tip: Pour the hot cumin-ghee mixture over the dip right before serving so the seeds stay crispy and the flavors are bright.
Good to know
Tips
- Okra releases mucilaginous liquid when cut; trim just before roasting and avoid washing until necessary to keep it as dry as possible before cooking.
- For a spicier dip, add ½ teaspoon of Kashmiri chili powder to the yogurt blend or increase the red chili flakes topping.
- Serve the dip slightly chilled or at room temperature—not hot—so the yogurt's creamy texture shines. The warm cumin-ghee topping provides contrast.
- Make this dip up to 2 hours ahead, cover, and refrigerate. Add the fresh cilantro and cumin topping just before serving to keep flavors bright and the seeds crispy.
Storage & reheating
Store in an airtight container in the refrigerator for up to 3 days. The cumin-ghee topping can be made separately and kept in a small jar for 5 days, then warmed and poured over chilled dip just before serving. The dip (without cumin topping) can be frozen in a container for up to 1 month; thaw in the fridge overnight and top with fresh tempered cumin before serving.
Substitutions
- plain Greek yogurt, full-fat → plain whole-milk yogurt or sour cream. Use the same quantity. Sour cream will make the dip tangier and slightly less thick.
- ghee or clarified butter → unsalted butter or olive oil. Use the same amount. Butter will add richness but won't have quite the nutty depth of ghee.
- cumin seeds → toasted sesame seeds or nigella seeds. Use the same quantity. Sesame adds a different flavor profile; nigella is more peppery and works beautifully too.
- fresh okra → frozen okra, thawed and patted very dry. Use the same weight. Frozen okra may release more moisture, so pat extra dry and roast 2–3 minutes longer.
