Pomegranate Seed & Walnut Milk

A velvety, naturally sweet hot drink made by blending toasted walnuts and pomegranate seeds into warm milk, finished with cinnamon and a touch of honey. Steps

Before you start
  • Have pomegranate seeds ready (fresh or thawed frozen)
  • Measure all ingredients before you begin
  • Use whole milk for richest texture, or half-and-half cream for extra indulgence
  1. Toast the walnuts

    • Heat a small dry skillet over medium heat for 1 minute.
    • Add the 0.5 cup (60 g) walnut halves and toast, stirring occasionally, for 3–4 minutes until fragrant and lightly golden.
    • They should smell nutty and warm.
    • Spread on a plate to cool slightly for about 1 minute.
    • This step deepens the walnut flavor and reduces any bitterness.

Ready when: Walnuts are fragrant, lightly golden, and warm to touch

Tip: Do not over-toast; walnuts can turn bitter quickly. Stop while they still smell fresh and nutty.

  2. Blend walnuts and pomegranate

    • Add the cooled toasted walnuts and 0.5 cup (95 g) of the pomegranate seeds to a high-speed blender or food processor.
    • Blend on high speed for 45–60 seconds until the mixture is very finely ground and looks like wet sand or a coarse paste.
    • Stop and scrape down the sides once if needed.
    • Do not overblend into a smooth butter; you want texture and slight grittiness to remain.
    + Show details

Ready when: Walnut and pomegranate mixture is finely ground, wet and granular, not smooth or oily

Tip: A high-speed blender (like Vitamix) works best for this, but a food processor is fine; just pulse rather than continuous blend to avoid heating the mixture.

  3. Heat the milkOven 160°F / 70°C

    • Pour the 1.75 cups (420 ml) whole milk into a small saucepan (2-quart / 2 L).
    • Heat over medium heat, stirring occasionally, for 3–4 minutes until steaming and tiny bubbles form around the edge, but before a full boil.
    • The milk should be hot enough to scald your tongue if you touch it—around 160°F (70°C).

Ready when: Milk is steaming, tiny bubbles form around the edge, it's very hot but not boiling

Tip: If using half-and-half cream, watch closely as cream can boil over more easily. Stir occasionally to ensure even heating.

  4. Combine and blend smoothly

    • Remove the saucepan from heat.
    • Carefully add the blended walnut and pomegranate mixture to the hot milk, stirring with a whisk as you pour to begin breaking it up.
    • Return the saucepan to the stove over medium heat and whisk constantly for 1–2 minutes until the mixture is well combined and no clumps of ground walnut remain.
    • The drink will become creamy and pale pink in color.

Ready when: Mixture is creamy, pale pink, and no visible lumps or clumps remain

Tip: Whisking prevents lumps from forming and helps emulsify the walnut oils evenly throughout the milk.

  5. Strain for smoothness (optional)

    • For a completely smooth drink, pour the mixture through a fine-mesh strainer lined with cheesecloth set over a clean bowl, pressing gently with the back of a spoon to extract all liquid.
    • This removes walnut pulp and pomegranate seeds for a silky texture.
    • For a more rustic texture with bits of pomegranate and walnut, skip this step.
    + Show details

Ready when: All liquid has passed through the strainer; only dry pulp remains in cheesecloth

Tip: If you skip straining, the drink will have pleasant texture and feel more substantial, but pieces may settle at the bottom of the mug.

  6. Season and sweeten

    • Stir in the 0.25 teaspoon (0.5 g) ground cinnamon, a pinch of salt, and the optional 2 teaspoons (10 ml) honey (or more to taste).
    • If using, add a small pinch of ground cardamom for warmth.
    • Stir well to combine.
    • Taste and adjust sweetness or spice as needed.

Ready when: All spices and honey are fully dissolved and distributed

Tip: Add honey last so it blends smoothly into the hot liquid without clumping.

  7. Serve warm

    • Pour the drink into 2 mugs (about 10 oz / 300 ml each).
    • Top each mug with the reserved 0.25 cup (45 g) fresh pomegranate seeds and a sprinkle of cinnamon if desired.
    • Serve immediately while steaming hot.

Tip: The tart pomegranate seeds on top provide a burst of bright flavor and a lovely visual contrast against the creamy pink drink.

Good to know

Tips
  • Toasting the walnuts is key—it deepens their flavor and prevents the drink from tasting raw or bitter.
  • High-speed blending is crucial; a food processor will work but may leave the texture grittier. Pulse rather than blend continuously to avoid heating the mixture and destroying the pomegranate's delicate flavor.
  • For a thinner drink, add an extra 0.25 cup (60 ml) milk after straining. For a thicker, more indulgent version, use half-and-half or add 2 tablespoons (30 ml) heavy cream.
  • This drink is naturally sweetened by the pomegranate and walnuts; honey is optional. Taste first before adding sweetener.
Make ahead

Walnuts can be toasted up to 2 days ahead and stored in an airtight container at room temperature. The blended walnut and pomegranate paste can be made up to 4 hours in advance and refrigerated in a covered bowl. Reheat the milk fresh when ready to serve and combine with the chilled walnut mixture, whisking well over medium heat.

Storage & reheating

Best served immediately. Leftover drink can be stored in an airtight container in the refrigerator for up to 2 days. The mixture may separate as it cools. To reheat: pour into a saucepan and warm over medium heat, stirring often, for 3–4 minutes until steaming, or microwave in a mug for 45–60 seconds, stirring halfway. Freeze is not recommended as the texture becomes grainy upon thawing.

Substitutions
  • whole milk → half-and-half cream or oat milk. Half-and-half makes a richer, creamier drink; oat milk creates a lighter version and works well for dairy-free needs. Use the same amount.
  • raw walnut halves → blanched almonds or raw hazelnuts. Almonds create a milder, sweeter base; hazelnuts add earthiness. Toast the same way and use the same weight (60 g).
  • pomegranate seeds (arils) → dried tart cherries or dried cranberries (rehydrated in warm water for 5 minutes). Use 0.75 cup (100 g) of rehydrated dried fruit; blend only 0.5 cup (65 g) and reserve the rest for topping. Flavor will be slightly more tart.
  • honey → maple syrup, date paste, or agave nectar. Use the same amount (2 teaspoons / 10 ml) or adjust to taste. Date paste adds Middle Eastern authenticity.
