Steps
Before you start
- Measure all ingredients before starting.
- Use unsalted roasted pistachios for best flavor; avoid heavily salted varieties.
- Have a fine-mesh strainer ready to catch pistachio solids.
- If serving chilled, prepare this recipe 30 minutes ahead so it cools to room temperature.
Toast and release pistachio oils
- In a medium saucepan (3–4 quart), add the roughly chopped pistachios.
- Toast over medium heat for 2–3 minutes, stirring frequently with a wooden spoon.
- You'll notice the aroma deepen and the pistachios become slightly more fragrant.
- Do not let them darken or burn—you're simply warming them to release their oils.

Ready when: Pistachios are warm and smell distinctly nutty; no browning yet
Tip: Toasting boosts flavor dramatically. Watch carefully—pistachio oil burns quickly if left unattended.
Add milk, sugar, and spices
- Pour the whole milk into the saucepan with the toasted pistachios.
- Add the granulated sugar and a pinch of fine sea salt.
- If using cardamom, add the 3 lightly crushed pods now.
- Stir well to combine and distribute the sugar throughout the milk.

Ready when: Sugar is fully dissolved and ingredients are evenly mixed
Tip: Crushing the cardamom pods slightly helps release their aromatic oils into the milk.
Simmer gently
- Increase the heat to medium-high and bring the mixture to a gentle simmer, stirring occasionally to prevent scorching on the bottom.
- Once small bubbles break the surface steadily, reduce the heat to medium-low and continue simmering for 8–10 minutes.
- The milk will take on a pale greenish hue from the pistachios, and the aroma will become increasingly floral and nutty.

Ready when: Milk is steaming gently, with a pale green tint and a rich, nutty-floral aroma
Tip: Keep heat at a gentle simmer to avoid a film forming on top and to prevent the milk from boiling over.
Remove from heat and add rose water
- Turn off the heat and remove the saucepan from the stove.
- Add the rose water (1 tablespoon / 15 ml) to the warm milk.
- Stir well to incorporate.
- The fragrance will bloom as the rose water mingles with the warm pistachio milk.
- Let the mixture rest for about 1 minute off the heat.

Ready when: Rose water is fully incorporated and the mixture smells balanced—nutty and floral
Tip: Add rose water off heat to preserve its delicate floral notes. High temperature can make it taste medicinal.
Strain the milk
- Set a fine-mesh strainer over a large measuring cup or pitcher.
- Slowly pour the pistachio-infused milk through the strainer, capturing all the finely chopped pistachio solids.
- Use the back of a wooden spoon to gently press on the solids to extract as much creamy liquid as possible, then discard the solids.
- The strained milk should be smooth and pale green.

Ready when: All milk has passed through the strainer; solids are fully extracted and dry
Tip: Don't force too hard or you'll push the solids through the strainer. Gentle pressure yields the smoothest milk.
Serve hot or chilled
- Pour the strained rose water pistachio milk into serving cups or mugs.
- If serving hot, pour immediately and top with finely chopped pistachios as garnish.
- If serving chilled, allow the drink to cool to room temperature, then refrigerate for 30 minutes or until cold.
- Stir well before serving, as the milk may settle slightly, and top with chopped pistachios.

Ready when: Drink is at desired temperature and garnished
Tip: Serve immediately while hot for the fullest floral aroma, or chill for a refreshing summer drink.
Good to know
Tips
- Toast the pistachios before adding milk to deepen and round out their flavor—this is the key to a rich, satisfying drink.
- Use quality rose water (food-grade, not perfume-grade). A little goes a long way; rose water can overpower if over-added.
- Strain thoroughly for a silky texture; any grit will detract from the creamy mouthfeel. A fine-mesh strainer is essential.
- This drink is naturally sweet from the pistachios; you can reduce the sugar to 2 tablespoons (25 g) if you prefer a more subtle sweetness.
Make ahead
You can prepare this drink up to 1 day ahead. Refrigerate the strained milk in an airtight container; reheat gently in a saucepan over medium heat, stirring often, until steaming (do not boil). Or serve chilled directly from the fridge.
Storage & reheating
Refrigerate in an airtight container for up to 3 days. The drink may separate slightly; stir well before serving. Do not freeze, as the milk texture will break down. To reheat, warm gently on the stovetop over medium heat, stirring occasionally, until steaming.
Substitutions
- whole milk → 2% milk or unsweetened almond milk. Use 2% milk for a lighter version with similar body. Almond milk will reduce the richness but keeps the drink dairy-free; simmer for 12–14 minutes to ensure full flavor infusion.
- granulated sugar → honey or agave nectar. Use 2–2.5 tablespoons (30–37 ml) of honey or agave for similar sweetness. Add after the milk has cooled slightly off the heat, as high temperatures can alter honey's flavor.
- rose water → orange blossom water. Substitute 1 tablespoon (15 ml) orange blossom water for a citrusy, floral note instead of rose. The drink will have a lighter, brighter character.
- green cardamom pods → a small pinch of saffron threads or 1/4 teaspoon ground cinnamon. Saffron adds an earthy luxury; cinnamon brings warmth. Either enhances the Persian character without overwhelming the pistachio and rose.
