Pineapple Coconut Slush
A frosty, tropical mocktail that tastes like a vacation in a glass. Fresh pineapple juice blends with creamy coconut milk and crushed ice, brightened with tart lime and a hint of vanilla. Serve immediately for the perfect slushy texture—thick, refreshing, and naturally sweet with a silky coconut finish.
Steps
Before you start
- Chill your serving glasses in the freezer for at least 10 minutes
- Use fresh pineapple juice (not concentrate) for the best flavor
- Have all ingredients measured and ready before blending
Combine base ingredients
- Pour the 1.5 cups (360 ml) chilled pineapple juice and 0.5 cup (120 ml) chilled coconut milk into a blender.
- Add the 2 tbsp (30 ml) fresh lime juice and the optional vanilla extract if using.
- Stir the coconut milk well before measuring to ensure the cream is evenly distributed.

Ready when: All ingredients are in the blender pitcher
Tip: Chill the pineapple juice and coconut milk ahead so the slush reaches the right icy texture without watering down.
Add ice and sweetener
- Add 2 cups (480 ml) crushed ice to the blender.
- If using honey or simple syrup, add the 1 tbsp (20 ml) now.
- Taste first—the pineapple juice may already be sweet enough without added sweetener.

Ready when: Ice is piled in the blender
Tip: Crush the ice in a food processor or blender first if you only have ice cubes—crushed ice blends faster and creates the ideal slushy texture.
Blend until slushy
- Cover the blender and blend on high speed for 45–60 seconds, until the mixture is thick, slushy, and smooth with no large ice chunks remaining.
- The texture should be thicker than a juice but still pourable.

Ready when: Mixture is thick and slushy with no visible ice chunks; a spoon stands up slightly in it
Tip: Stop halfway through and scrape down the blender sides if needed, especially if using cubed ice. Do not over-blend or the drink will become thin and watery as the ice melts.
Pour and serve immediately
- Pour the slush into the 2 chilled glasses, dividing evenly.
- Work quickly so the mixture stays thick and frozen.
- Top each drink with a lime wheel or pineapple wedge if desired.

Ready when: Both glasses are filled and garnished
Tip: Serve right away with sturdy spoons or wide straws—this drink is best eaten and sipped while still icy and thick. It will separate and thin out quickly at room temperature.

Tips
- For a boozy version, add 1–2 oz coconut rum, white rum, or Pisquois to each drink before blending—the alcohol lowers the freezing point slightly, so reduce ice by 1/4 cup.
- Make a bigger batch for a crowd: multiply all quantities and blend in two batches if your blender is smaller than 6 cups (1.4 L) capacity.
- Use fresh or frozen pineapple chunks instead of juice—blend with 1/4 cup (60 ml) water and coconut milk for a thicker, more intense tropical slush.
- Freeze small glasses with a rim of shredded coconut and a few drops of lime juice for an extra-special presentation.
Storage & reheating
Best served immediately. If you must make ahead, freeze the blended mixture in an ice cream maker for a sorbet-like consistency, or freeze in a shallow container for 1–2 hours and stir with a fork every 30 minutes to keep it slushy. Not recommended for next-day storage as flavors fade and texture separates.
Substitutions
- fresh pineapple juice, chilled → Fresh mango juice or a blend of equal parts pineapple and orange juice. Mango creates a richer, sweeter drink; citrus blend adds zing. Both work beautifully with coconut milk.
- canned full-fat coconut milk, chilled → Coconut cream (thinned with 2 tbsp water) for a richer drink, or coconut yogurt for a tangy twist. Cream makes it decadent; yogurt adds tartness and protein. Adjust the water ratio to reach your desired thickness.
- fresh lime juice → Lemon juice or passion fruit juice. Lemon is more subtle; passion fruit adds tropical depth and tartness. Use the same amount.
- pure vanilla extract → 1/4 tsp coconut extract or 1/4 tsp rum extract. Coconut extract deepens the tropical flavor; rum extract adds warmth and sophistication without alcohol.
