Steps

Before you start
  • Chill two glasses in the freezer for at least 15 minutes, or fill them with ice while you prepare the drink
  • Squeeze fresh lemon juice if possible—bottled works, but fresh delivers better flavor
  • Have sparkling water cold and ready to pour
  1. Prepare glasses with ice

    • Fill two chilled 10–12 oz glasses halfway with ice cubes.
    • If using fresh blueberries as garnish, add 3–4 berries to each glass now.

Tip: Pre-chilled glasses keep the drink colder longer and prevent excessive ice melt.

  2. Pour blueberry juice and lemon juice

    • Pour 3 oz (90 ml) of blueberry juice into each glass.
    • Add ¾ oz (22.5 ml) of fresh lemon juice to each glass.
    + Show details

Tip: Fresh lemon juice makes a noticeable difference in brightness and flavor compared to bottled.

  3. Stir in honey

    • Add ⅜ oz (12.5 ml) of honey to each glass.
    • Stir vigorously with a bar spoon for 20–30 seconds until the honey dissolves completely and the mixture is well combined.
    • The drink should have a pale purple hue.
    + Show details

Ready when: Honey is fully dissolved and the mixture is uniform in color with no streaks

Tip: Stir well to fully dissolve the honey, which can otherwise settle at the bottom of the glass.

  4. Top with sparkling water

    • Pour 2 oz (60 ml) of chilled sparkling water into each glass, pouring slowly to preserve the carbonation.
    • Stir gently once or twice to combine, but not too vigorously or you'll flatten the bubbles.
    + Show details

Ready when: Drink is full of visible bubbles and reaches the rim of the glass

Tip: Pour the sparkling water last and keep it cold to maximize fizz in the finished drink.

  5. Garnish and serve

    • Garnish each glass with a thin lemon wheel perched on the rim, or drop it into the drink if you prefer.
    • Serve immediately with a long spoon or straw.

Tip: A lemon wheel both looks elegant and adds a fresh citrus note if the drinker squeezes it into the glass.

Good to know

Tips
  • For a pitcher version, multiply the recipe by 4 and make in a 2-quart pitcher. Add sparkling water just before serving to keep the drink fizzy.
  • Freeze fresh blueberries in ice cube trays with water to create blueberry ice cubes that add flavor as they melt instead of diluting the drink.
  • If your blueberry juice is very tart, increase the honey slightly (up to 1 oz / 30 ml per drink). Taste as you go.
  • For a beautiful layered effect, carefully pour the sparkling water down the side of the glass so the bubbles rise through the darker blueberry mixture.
Storage & reheating

Best served immediately while still cold and fizzy. If you must prepare ahead, mix the blueberry juice, lemon juice, and honey together (without sparkling water) up to 2 hours in advance and refrigerate; add ice and sparkling water just before serving to maintain carbonation.

Substitutions
  • blueberry juice, fresh or high-quality bottled → Blackberry juice or mixed berry juice. Blackberry juice will give a deeper color and slightly earthier flavor; adjust honey to taste since sweetness levels vary.
  • honey → Agave nectar or simple syrup. Agave nectar dissolves instantly and won't affect flavor; simple syrup (equal parts sugar and water, cooled) works the same way.
  • fresh lemon juice → Lime juice. Lime juice will shift the flavor profile to a more tropical, less bright direction but still works beautifully with blueberry.
  • sparkling water, chilled → Seltzer or club soda. Either will work identically; all three are unsweetened and carbonated. Avoid tonic water, which adds bitterness and quinine.
