Steps

Before you start
  • Chill glasses in the freezer for 5 minutes before serving (optional but recommended)
  • Have all ingredients ready and measured
  • If using fresh passion fruits, strain puree through a fine-mesh sieve to remove seeds
  1. Combine base ingredients

    • Pour the passion fruit puree, tamarind paste, cold milk, lime juice, and agave nectar into a blender.
    • Add the ice cubes.

Tip: Make sure the tamarind paste is well distributed in the blender—it can clump. Break it apart slightly with a spoon before blending if needed.

  2. Blend until smooth

    • Blend on high speed for 45–60 seconds, until the mixture is completely smooth, creamy, and frothy.
    • The ice should be fully broken down and incorporated.

Ready when: Smooth, velvety texture with no visible ice chunks or tamarind bits; slight foam on top

Tip: If the blender struggles, you may have too much ice. Add 1–2 tablespoons milk and blend again.

  3. Taste and adjust

    • Pour a little into a glass and taste.
    • Adjust sweetness with more agave or honey if needed, tartness with a squeeze more lime juice.
    • Add a pinch of sea salt if you want to amplify the flavors and add complexity.
    + Show details

Ready when: Balanced sweet-tart flavor with a hint of earthy tamarind and bright citrus notes

Tip: Sea salt is optional but highly recommended—it brightens tropical flavors and balances the sweetness without making the drink salty.

  4. Blend again and serve

    • If you made adjustments, blend for another 10–15 seconds to incorporate them evenly.
    • Pour into chilled glasses and serve immediately.

Ready when: Drink is cold, frothy, and ready to drink immediately

Tip: Serve right away—the ice melts quickly and dilutes the drink. If you're not ready, blend without ice and serve over fresh ice in each glass.

Tips
  • For a protein boost, add ½ cup (120 ml) plain Greek yogurt or 1 scoop vanilla protein powder when blending. This creates a creamier, more filling drink.
  • To intensify tamarind flavor without adding too much paste (which can make the drink grainy), add ¼ teaspoon of tamarind concentrate if available, or squeeze an extra ½ tablespoon of lime juice.
  • Passion fruit and tamarind are both tart; if your guests prefer sweeter drinks, increase agave to 1.5 tablespoons (22 ml) and reduce lime juice to ½ tablespoon (7.5 ml).
  • For a frozen variation, reduce milk to ¾ cup (180 ml), use 1.5 cups (225 g) ice, and add a splash of rum or coconut rum (1–2 tablespoons / 15–30 ml) for an adult version.
Storage & reheating

Best served fresh. If you must store, cover and refrigerate for up to 2 hours (the drink will separate and become less frothy). Stir before drinking. Do not freeze—ice crystals will create an unpleasant texture.

Substitutions
  • whole milk, cold → Heavy cream (use ¾ cup / 180 ml cream + ¼ cup / 60 ml whole milk or water for a richer shake) or coconut milk (full-fat canned). Cream creates a denser, more luxurious drink; coconut milk adds a tropical twist. Adjust proportions to taste.
  • passion fruit puree (fresh or thawed frozen) → Fresh passion fruit (4–5 whole fruits, seeds and pulp scooped out and strained through a fine sieve), or mango puree (½ cup / 120 ml) for a different tropical fruit. Fresh passion fruit gives a brighter flavor; mango creates a smoother, less tangy result. Adjust lime juice if using mango.
  • tamarind paste → 1 tablespoon (15 ml) tamarind concentrate or ½ cup (120 ml) fresh tamarind pulp, strained. Or omit and add ½ teaspoon of Worcestershire sauce for a savory-umami depth (optional).. Concentrate is more intense; use cautiously. Tamarind paste is the easiest option.
  • agave nectar or honey → Honey, maple syrup, or simple syrup (use equal amounts). Honey adds floral notes; maple is earthy; simple syrup is neutral. Adjust to taste as sweetness varies.
