Pantry Chocolate Avocado Mousse Pops

Rich, creamy chocolate popsicles made with ripe avocado, unsweetened cocoa powder, and sweetened condensed milk. No eggs or dairy cream needed—the avocado creates a luxuriously smooth texture. Ready to freeze in just 15 minutes of prep, these make an indulgent frozen treat that tastes far more decadent than the simple pantry ingredients suggest.

Steps

Before you start
  • Choose ripe but firm avocados—they should yield slightly to pressure but not be mushy
  • Assemble your popsicle molds and sticks before blending
  • Have ice water ready if your blender struggles to process the mixture smoothly
  1. Blend avocado and cocoa

    • Add the scooped avocado flesh and unsweetened cocoa powder to a blender or food processor.
    • Blend on high speed for 30–45 seconds until smooth and completely free of cocoa powder streaks.
    • Scrape down the sides with a rubber spatula and blend again briefly if needed.

Ready when: Mixture is uniform chocolate color with no visible cocoa powder streaks

Tip: If the mixture is too thick to blend smoothly, add 1–2 tablespoons of water at a time to loosen it. The avocado should fully incorporate into the cocoa, not remain chunky.

  2. Add liquid and sweetener

    • Pour in the condensed milk and cold water.
    • Add the vanilla extract (if using) and a small pinch of salt to enhance the chocolate flavor.
    • Blend on high speed for 30 seconds until completely smooth and well combined.

Ready when: Mixture is silky, creamy, and uniform with no visible cocoa lumps or separated texture

Tip: The water loosens the mixture to a pourable consistency while the condensed milk sweetens and enriches it without needing extra sugar or cream.

  3. Fill popsicle molds

    • Carefully pour or spoon the chocolate mousse mixture into prepared popsicle molds, filling each to just below the rim (about ¾ full to allow for slight expansion).
    • Use a rubber spatula to scrape the blender clean and distribute any thick mixture evenly among the molds.
    + Show details

Ready when: All molds are filled evenly with no overflow and no large air pockets visible at the top

Tip: If your molds have removable bases or lids, fill them before inserting the sticks. If using traditional stick molds, you may need to fill halfway, insert sticks, then top up.

  4. Insert sticks and freeze

    • If not already inserted, place popsicle sticks into the center of each mold, pushing gently until they stand upright.
    • Cover the tops with the mold lids (if your molds have them) or loosely cover the tray with plastic wrap.
    • Transfer to the freezer.

Ready when: Pops are completely frozen solid and unmold easily with a brief warm-water rinse on the outside of the mold

Tip: Freezing time depends on mold size and your freezer temperature. At 0°F (−18°C), most standard popsicles freeze in 4–6 hours; overnight is safest. Run warm water over the outside of the mold for 5–10 seconds to release each pop cleanly.

Good to know

Tips
  • Avocado creates the creamy body of these pops without any eggs, cream, or ice cream base—a clever pantry hack that yields restaurant-quality texture.
  • Choose avocados at peak ripeness (they should be soft enough to scoop easily but not browning inside). Underripe avocados will blend with a grainy texture; overripe ones may taste slightly fermented.
  • The chocolate flavor intensifies as the pops freeze, so taste the mixture before freezing—it will taste milder at room temperature than when frozen.
  • For easier unmolding, keep molds in the freezer for at least 4–6 hours and then briefly run warm water over the exterior. If sticks begin to slip, the pops are thawing; return them immediately.
Make ahead

Prepare the mixture up to 2 days ahead, store it in an airtight container in the refrigerator, and freeze in molds when ready. You can also freeze filled molds for up to 1 month.

Storage & reheating

Room temperature: not applicable. Refrigerator: store unmolded pops in an airtight container for up to 3 days (they will gradually absorb freezer odors and soften). Freezer: store unmolded pops in a freezer bag or airtight container for up to 1 month. To serve: let sit at room temperature for 1–2 minutes to soften slightly, or enjoy straight from the freezer.

Substitutions
  • sweetened condensed milk → coconut cream (¾ cup / 170 ml) plus 3 tablespoons honey or maple syrup. Creates a dairy-free, coconut-flavored version. Blend the honey in with the wet ingredients for even sweetness.
  • unsweetened cocoa powder → Dutch-process cocoa powder (same amount). Darker, more mellow flavor; slightly less bitter. Works equally well.
  • water, cold → chilled milk (dairy, almond, or oat milk). Adds creamier mouthfeel and slight dairy richness. Use the same amount.
  • vanilla extract → espresso powder (½ teaspoon / 1.5 g) for a mocha flavor, or omit entirely. Espresso deepens chocolate notes without adding bitterness. Completely optional in both cases.
