Steps
Before you start
- Chill a medium bowl in the freezer for 10 minutes
- Use cold milk straight from the refrigerator
- Have heavy cream cold before whipping
Whip the cream
- Pour the cold heavy whipping cream into the chilled medium bowl.
- Using an electric mixer on medium-high speed (or a whisk and elbow grease), beat for 2–3 minutes until stiff peaks form.
- The cream should hold its shape when you lift the beaters.
- Sprinkle in the sugar and vanilla extract (if using) during the last 30 seconds of beating.
- Transfer to a separate bowl and set aside.

Ready when: Cream holds stiff peaks when beaters are lifted
Tip: Do not overbeat or the cream will turn to butter. Stop as soon as stiff peaks form.
Combine pudding and milk
- In the same bowl you used for whipping (no need to wash it), pour the cold milk and add the instant pudding mix.
- Using a clean whisk or mixer on low speed, whisk for 1–2 minutes until the mixture is smooth and no dry pudding powder remains.
- The pudding will begin to thicken as you stir.
- Do not overbeat.

Ready when: Pudding is smooth and thickened, no lumps or dry powder visible
Tip: Whisk gently—overworking the pudding can make it grainy. Stop as soon as it reaches a soft, mousse-like consistency.
Fold together
- Pour the thickened pudding into the bowl of whipped cream.
- Using a rubber spatula, gently fold the pudding into the cream using broad, sweeping motions: scoop down to the bottom, across, up, and over the top, rotating the bowl as you go.
- Fold until no streaks of white remain and the mixture is evenly combined and airy.
- This should take 8–12 folds.

Ready when: Mixture is uniform in color with no white streaks, light and fluffy texture
Tip: Fold gently to preserve the airiness of the whipped cream. Overmixing will deflate the dessert.
Transfer to freezer
- Spoon the folded mixture into an 8×8-inch (20×20 cm) freezer-safe baking dish or similar container.
- Smooth the top with a spatula.
- Cover tightly with plastic wrap or a lid to prevent freezer burn.

Tip: Use an airtight cover so ice crystals don't form on the surface during freezing.
Freeze until solid
- Place in the freezer for at least 6 hours, or overnight, until the dessert is completely frozen and scoopable.
- The exact time depends on your freezer temperature.

Ready when: Dessert is frozen solid and holds its shape when scooped
Tip: If frozen overnight or longer, let sit at room temperature for 5 minutes before scooping for easier serving.
Scoop and serve
- Remove from the freezer and scoop into individual bowls or cups using an ice cream scoop.
- Serve immediately.
- If the dessert has been frozen for more than 8 hours, let it soften at room temperature for 2–3 minutes for a creamier texture.

Tips
- For extra flavor, crush 5–6 chocolate sandwich cookies or vanilla wafers and fold them in after combining the pudding and cream for a crunchier texture.
- To make individual parfaits, layer the pudding mixture with crushed graham crackers or cookie crumbs in small jars before freezing.
- If the pudding doesn't thicken within 2 minutes of whisking, your milk may have been too warm. Chill it for 10 minutes and try again.
- This dessert works well with chocolate, vanilla, butterscotch, and pistachio pudding flavors. Experiment with different flavors and toppings.
Make ahead
This dessert is designed to be made ahead. Prepare it up to 2 days in advance; freeze covered until ready to serve.
Storage & reheating
Store covered in the freezer for up to 2 weeks. Scoop and serve straight from the freezer. If you prefer a softer texture, remove from the freezer 2–3 minutes before scooping. Do not thaw and refreeze, as this will cause large ice crystals to form.
Substitutions
- instant pudding mix (any flavor) → Sugar-free or fat-free instant pudding mix. Use the same quantity; the texture and freezing time will be similar. Fat-free versions may be slightly less creamy.
- heavy whipping cream, cold → Whipped cream from a can (stabilized whipped cream). Use about 3 cups (720 ml) whipped cream, which is slightly more than 2 cups (480 ml) liquid heavy cream due to air. Fold gently to avoid deflating further.
- whole milk, cold → Half-and-half or 2% milk. Use the same quantity. Half-and-half will make the dessert richer; 2% milk will be slightly less creamy than whole milk.
- vanilla extract → Almond extract or a pinch of cinnamon. Use ¼ teaspoon extract or cinnamon for a subtle flavor variation without overwhelming the pudding.
