A fluffy Indian street-style omelette packed with sweet onion, fiery green chili, fresh cilantro and tomato, lightly spiced with turmeric and garam masala. Ready in 15 minutes and perfect with buttered toast or paratha.

Steps

Before you start
  • Cook one omelette at a time in an 8-inch (20 cm) nonstick skillet; keep the first one warm in a 200°F (95°C) oven or covered plate if serving together.
  • Chop all vegetables finely (about ¼ inch / 6 mm) so they cook quickly and don't tear the eggs.
  • Wear gloves or wash hands well after cutting green chilies, and avoid touching your eyes.
  • Have toast or paratha ready, since the omelette is best eaten right away.
  1. Prep the vegetables

    • Finely chop the red onion, seed and dice the tomato, mince the green chili, and chop the cilantro.
    • Pat the diced tomato with a paper towel so it adds flavor without making the eggs watery.

    Ready when: Pieces are about ¼ inch (6 mm) and the tomato looks fairly dry.

    Tip: Smaller pieces fold into the eggs and flip without tearing.

  2. Whisk the eggs

    • Crack the 4 eggs into a medium bowl.
    • Add the turmeric, garam masala, chili powder (if using) and salt.
    • Whisk vigorously with a fork for about 30 seconds.

  3. Add the vegetables

    • Stir the onion, tomato, green chili and cilantro into the beaten eggs until evenly distributed.

  4. Heat the pan

    • Place the 8-inch nonstick skillet over medium heat and add 1 tsp (5 ml) oil.
    • Swirl to coat the base.
    • Heat for about 1 minute.

    Tip: If the pan is too hot the omelette browns before the center sets.

  5. Pour and set

    • Stir the egg mixture once, then pour half into the pan.
    • Tilt the pan to spread it into an even round.
    • Cook without stirring for 1½ to 2 minutes, lifting the edges with a spatula and tilting so uncooked egg runs underneath.

    Ready when: Edges are set and the surface is mostly opaque with just a slightly wet sheen in the center.

    Tip: Stir the bowl again before pouring the second omelette, because the vegetables sink.

  6. Flip and finish

    • Slide the spatula under the omelette and flip it in one confident motion, or fold it in half.

Tips

Make ahead

Chop the onion, tomato, chili and cilantro up to 1 day ahead and refrigerate in an airtight container. Whisk the eggs just before cooking.

Storage & reheating

Best eaten fresh. Refrigerate cooked omelette in an airtight container up to 2 days; reheat in a nonstick skillet over low heat for 1 to 2 minutes or microwave 20 to 30 seconds. Not recommended to freeze, as the texture turns spongy. Leave at room temperature no more than 2 hours.

Substitutions
  • green chili (serrano or Thai) → ¼ tsp red pepper flakes or ½ finely diced jalapeño. Jalapeño is milder; adjust to taste.
  • red onion → Yellow onion or 2 tbsp sliced scallions. Yellow onion is a bit sharper; scallions cook faster and are milder.
  • neutral oil or ghee → Butter. Gives richer flavor but browns faster, so keep the heat at medium-low.
  • garam masala → Pinch of ground cumin. Gives earthy warmth though less complex.
