
Make-Ahead Freezer Lasagna
A classic beef-and-ricotta lasagna built in a 9×13-inch pan and frozen unbaked, so a hot, bubbly dinner goes straight from freezer to oven with no thawing. The noodles are slightly undercooked and the layers are a bit saucy, so they finish perfectly during baking.

Steps
Before you start
- Buy a deep, freezer- and oven-safe 9×13-inch pan (a disposable foil pan at least 2½ inches / 6 cm deep works well and frees up your baking dish). Check that it fits in your freezer, lying flat.
- Everything must be completely cool before assembly. Hot sauce or warm noodles melt the cheese, make the lasagna watery, and raise the freezer temperature. Plan on about 45 minutes of cooling.
- Total time includes a minimum 8-hour freeze so the lasagna is solid. The 40 minutes of prep and cooking happen on day one; baking from frozen takes 2 hours.
- Shred your own mozzarella or buy low-moisture, whole-milk shredded mozzarella. Fresh (wet) mozzarella releases too much water after freezing.
Brown the beef
- Heat 1 tbsp (15 ml) of the olive oil in a 12-inch (30 cm) deep skillet or Dutch oven over medium-high heat until it shimmers.
- Add the onion and cook, stirring, for 4 minutes until soft and translucent.
- Add the ground beef, 1 tsp salt, ½ tsp pepper, and the oregano (and red pepper flakes, if using).
- Break the meat into small crumbles with a wooden spoon and cook for 6–8 minutes until no pink remains and the liquid has mostly evaporated.
- Add the garlic and cook for 30 seconds until fragrant.

Ready when: Beef is fully browned with no pink, reaching 160°F (71°C), and the pan looks nearly dry.
Tip: If the beef releases a lot of fat (more than 2 tablespoons), spoon it off. Excess grease makes the frozen lasagna greasy.
Simmer the sauce
- Stir in the tomato paste and cook for 1 minute, stirring constantly, until it darkens slightly.
- Pour in the marinara, stir well, and bring to a bubbling simmer.
- Reduce the heat to low and simmer, uncovered, for 15–20 minutes, stirring every 5 minutes, until the sauce has thickened slightly.

Ready when: A spoon dragged across the bottom of the pan leaves a trail that closes slowly (about 2 seconds).
Tip: Keep the sauce on the saucy side. The noodles will absorb some moisture while freezing and baking.
Cool the sauce completely
- Transfer the meat sauce to a large shallow bowl or a rimmed baking dish so it cools faster.
- Stir every 10 minutes and let it cool for about 45 minutes, until it is no warmer than room temperature (below 80°F / 27°C).
- You can speed this up by placing the dish in the refrigerator.
- Cook the noodles while you wait.

Ready when: The sauce feels cool or neutral when you touch the back of a spoon to your wrist.
Tip: Never assemble with hot or warm sauce. It cooks the egg in the filling, melts the mozzarella into the layers, and is a food-safety risk before freezing.
Boil the noodles
- Bring a large pot with 5 quarts (4.7 L) of water and 1 tbsp (10 g) salt to a rolling boil over high heat.
- Add the noodles one at a time, stirring gently so they don't stick.
- Cook for 2 minutes less than the package directions (usually 6–7 minutes).
- Drain in a colander, then toss gently with the remaining 1 tbsp (15 ml) olive oil.
- Lay the noodles flat in a single layer on parchment paper, separating any that overlap, and let them cool.

Ready when: Noodles are pliable but still noticeably firm in the center, like very al dente pasta.
Tip: Slightly undercooked noodles are essential. They finish cooking in the oven, and fully cooked ones turn mushy after freezing.
Mix the cheese filling
- In a medium bowl, stir together the ricotta, beaten egg, ½ cup (50 g) Parmesan, parsley, ½ tsp salt, and ¼ tsp pepper until smooth and evenly combined.

Ready when: The mixture is creamy and uniform with no streaks of egg.
Tip: The egg helps the ricotta set firmly, so it holds together in neat slices after baking.
Assemble the layers
- Divide the cooled meat sauce into 4 roughly equal portions (about 1⅔ cups / 400 ml each).
- Spread one portion over the bottom of the 9×13-inch pan.
- Cover with 3 noodles, side by side, trimming or overlapping slightly to fit.
- Dollop one-third of the ricotta mixture over the noodles and spread to the edges with the back of a spoon, then sprinkle with 1 cup (113 g) mozzarella and top with a second portion of sauce.
- Repeat the layers (noodles, ricotta, mozzarella, sauce) two more times.
- You should end with the fourth portion of sauce on top of the last noodle layer, covering the noodles completely.
- Sprinkle with the remaining 1 cup (113 g) mozzarella and the ¼ cup (25 g) Parmesan.

Ready when: Three noodle layers are stacked, the top noodles are completely hidden under sauce, and the pan is filled to about ½ inch (1.25 cm) below the rim.
Tip: Make sure every noodle edge is covered with sauce. Exposed noodles dry out and turn hard when baked.
Wrap and label
- Press a sheet of parchment paper directly onto the surface of the lasagna so it touches the cheese.
- Wrap the whole pan tightly with two layers of heavy-duty foil, crimping it around the rim.
- Label with the date, the name, and the baking instructions: 'Bake from frozen: 375°F, covered 90 min, uncovered 30 min, until 165°F.'

Ready when: Foil is sealed tightly around the entire rim with no gaps.
Tip: The parchment against the surface prevents freezer burn and keeps the foil from sticking to the cheese.
Freeze until solid
- Place the wrapped lasagna flat on a level shelf in the freezer.
- Freeze for at least 8 hours or overnight, until completely solid.
- Once frozen, you can stack other items on top.
- It keeps for up to 3 months.

Bake covered from frozenOven 375°F / 190°C
- Position a rack in the center of the oven and preheat to 375°F (190°C).
- Remove the foil and parchment, then re-cover the pan tightly with a fresh sheet of foil (lightly spray or oil the underside of the foil to prevent sticking).
- Set the pan on a rimmed baking sheet and bake for 90 minutes without opening the oven, until the edges are bubbling and the lasagna has thawed through.

Ready when: Sauce bubbles around the edges and a knife slides easily into the center with little resistance.
Tip: Don't put a frozen glass dish into a hot oven. It can shatter. Use a metal or disposable pan, or let a glass dish sit at room temperature for 20 minutes first.
Uncover and brownOven 375°F / 190°C
- Carefully remove the foil (watch for hot steam).
- Bake, uncovered, for 25–30 minutes more at 375°F (190°C) until the cheese is melted, spotty golden-brown, and the sauce bubbles through the cheese.
- Check the center with an instant-read thermometer.

Tip: If the center is below 165°F (74°C) but the top is deeply brown, tent loosely with foil and keep baking.
Rest and slice
- Let the lasagna rest on a wire rack or heatproof surface for 20 minutes.
- Cut into 12 squares with a sharp knife, lifting each out with a wide spatula.

Ready when: The bubbling has stopped and a slice holds its shape when lifted.
Tip: Cutting right out of the oven sends the layers sliding. The 20-minute rest is worth it.
Good to know
Tips
- For clean freezer storage, line the pan with a sling of foil before assembling. Once frozen solid, lift the lasagna out, wrap it, and return it to the freezer, freeing up your pan.
- Freeze half-size portions in two 8×8-inch (20×20 cm) pans for smaller households. Bake covered for 75 minutes, then uncovered for 20–25 minutes, until 165°F (74°C).
- Use whole-milk dairy. Low-fat ricotta and part-skim mozzarella turn grainy and release water after freezing.
- If the top is browning too fast in the uncovered stage, move the rack down one position or tent loosely with foil.
Make ahead
"Assemble, wrap, and freeze up to 3 months ahead. To bake from thawed instead: move the wrapped pan to the refrigerator for 24 hours, then bake covered at 375°F (190°C) for 50 minutes, uncover, and bake 20–25 minutes more until the center reaches 165°F (74°C). The sauce and noodles can also be made 1 day ahead and refrigerated before assembling."
Storage & reheating
"Unbaked: freezer up to 3 months, tightly wrapped (best quality in the first 2 months). Baked leftovers: refrigerator up to 4 days in an airtight container; freezer up to 3 months in individual portions. Reheat refrigerated squares, covered, in a 350°F (175°C) oven for 20–25 minutes or in the microwave at 70% power for 2–3 minutes until steaming hot (165°F / 74°C). Thaw frozen portions overnight in the refrigerator first."
Substitutions
- ground beef, 85% lean → half ground beef and half mild Italian sausage (casings removed), or ground turkey. Sausage adds more seasoning, so reduce the salt in the sauce to ½ tsp. Turkey is leaner, so use 1 tbsp more olive oil when browning.
- whole-milk ricotta → small-curd cottage cheese, drained for 15 minutes in a fine-mesh strainer. Pulse briefly in a food processor if you want a smoother texture.
- regular (not no-boil) lasagna noodles → no-boil lasagna noodles (about 9 sheets). Skip the boiling step. Stir ½ cup (120 ml) water into the sauce when you simmer it so the dry noodles have enough moisture, and bake as directed.
- marinara sauce → 2 batches of your own homemade tomato sauce (about 5½ cups / 1.3 L). Homemade sauce should be thick, not thin, so reduce it until it coats a spoon.
