Instant Pot Soft-Boiled Egg and Asparagus Sandwich
Fresh soft-boiled eggs with tender asparagus and melted Gruyere cheese on toasted bread, made easy with the Instant Pot. A protein-packed breakfast sandwich that comes together in less than 30 minutes, perfect for a weekday morning or leisurely weekend brunch.
Steps
Before you start
- Fill a large bowl with ice water and set it aside before starting the Instant Pot
- Bring eggs to room temperature if possible (or use cold eggs—they cook just fine)
- Trim asparagus and have bread and cheese ready so you can work quickly once the eggs cook
Pressure cook eggs
- Add 1 cup water to the Instant Pot and place the steamer trivet in the bottom.
- Gently arrange all 4 eggs on the trivet, being careful not to crack them.
- Close the lid, set the valve to sealing position, and set the Instant Pot to high pressure for 5 minutes.
- The pot will take about 2 minutes to come to pressure before the timer begins counting down.

Ready when: Pressure indicator shows sealing, the display shows 5:00 and begins counting down
Tip: Room-temperature eggs cook more evenly than cold eggs; if using cold eggs straight from the fridge, add 30 seconds to the cooking time
Prepare ice bath and trim asparagus
- While the eggs cook, fill a large bowl with ice water and set it aside on the counter.
- Trim the woody bottom 1–2 inches from each asparagus spear—you can bend each one gently until it snaps naturally, or use a knife to cut at the point where the white stalk becomes greener.
- Rinse the trimmed asparagus under cool water and pat it completely dry with paper towels.

Ready when: Asparagus is trimmed, rinsed, and completely dry to the touch
Tip: Drying the asparagus thoroughly prevents water from sputtering in the skillet and helps the spears brown and caramelize properly
Quick release and ice bath
- When the Instant Pot timer beeps, very carefully turn the pressure valve to the venting or quick-release position to let steam escape (do this slowly and step back to avoid being burned by the hot steam).
- Once the pressure has fully released and you can safely open the lid, use a slotted spoon to gently transfer the eggs one at a time to the ice bath.
- Let them sit for 3–4 minutes; this stops the carryover cooking immediately and makes the eggs much easier to peel.

Ready when: Eggs are cool to the touch and no longer steaming
Tip: The ice bath is crucial—without it, the residual heat will continue cooking the yolk, and the eggs become harder to peel
Sauté asparagus until tender
- Heat a medium skillet over medium-high heat for 1 minute.
- Add the 1 tablespoon of butter and let it foam for about 30 seconds.
- Add the trimmed asparagus spears in a single layer (work in two batches if they're crowded) and season generously with kosher salt and freshly ground black pepper.
- Cook, stirring and turning occasionally with a wooden spoon, for 4–5 minutes, until the asparagus is bright green, tender when pierced with a fork, and has light golden-brown spots on the tips and sides.

Ready when: Asparagus is bright green, tender-crisp, and has light brown spots; a fork easily pierces the thickest part
Tip: Don't overcrowd the skillet—if needed, cook the asparagus in two batches so the spears have space to brown instead of steam
Toast bread slices
- While the asparagus cooks, place all 4 bread slices into a toaster and toast to light golden brown (adjust the time based on your bread thickness and toaster setting, usually 2–3 minutes).
- You want the toast crispy enough to support the weight of the soft-boiled egg and cheese without becoming soggy from the runny yolk.

Ready when: Bread is golden brown and crispy to the touch
Tip: Toasting the bread creates a moisture barrier that helps prevent the sandwich from becoming soggy from the runny egg yolk
Peel soft-boiled eggs
- Remove the eggs from the ice bath one at a time.
- On a hard surface or cutting board, gently tap and roll each egg all over to crack the shell into many pieces, starting at the wider end where the air pocket is located.
- Run cool water over the egg as you carefully peel away the shell and the thin membrane underneath, working from the wide end downward.
- The shell should come away in large, manageable pieces.

Ready when: Eggs are completely peeled, with no shell or membrane remaining; the white is set and the yolk is runny when halved
Tip: Older eggs (1–2 weeks old) peel much more easily than very fresh eggs; if your eggs resist peeling, they may have been laid recently. Starting from the wider end, where the air pocket creates a gap, makes peeling easier.
Assemble sandwiches
- Carefully slice each peeled egg in half lengthwise to expose the jammy yolk.
- Lay out all 4 toasted bread slices.
- On each of 2 slices, spread about 1 tablespoon of mayonnaise and ½ teaspoon of Dijon mustard if using.
- Top each with a slice of Gruyere cheese.
- Arrange 2 soft-boiled egg halves on the cheese, positioning them yolk-side up if you want a beautiful presentation.
- Fan 4–5 cooked asparagus spears over the eggs, allowing them to lean against the egg halves.
- Sprinkle lightly with kosher salt and black pepper to taste.
- Top with the remaining bread slice, press gently but firmly, cut diagonally if desired, and serve immediately.

Ready when: Sandwich is fully assembled with egg yolk visible and still runny
Tip: Serve immediately while the toast is still warm and the egg yolk is runny; the residual heat will keep the cheese soft and creamy
Good to know
Tips
- For the perfect soft-boiled egg in the Instant Pot, 5 minutes at high pressure on large eggs yields a fully set white with a runny, jammy yolk. If you prefer a firmer yolk, increase to 6 minutes; for an almost-set yolk, decrease to 4 minutes.
- The ice bath is essential—it stops the cooking instantly and also makes the eggs significantly easier to peel by creating a gap between the shell and the egg white.
- Don't skip drying the asparagus; wet asparagus will steam in the skillet instead of browning, and excess moisture makes the sandwich soggy.
- Assemble the sandwich just before eating to keep the toast crispy and the egg yolk runny. If you must wait, keep components warm and separate.
Make ahead
The soft-boiled eggs can be cooked up to 2 days ahead and stored in their shells in the refrigerator (peel just before eating or eat whole). The asparagus can be cooked 1 day ahead, cooled, and stored in an airtight container; reheat gently in a skillet with a touch of butter over medium heat for 2–3 minutes. The bread can be toasted up to 4 hours ahead and stored in an airtight container to stay crisp.
Storage & reheating
Fresh sandwiches are best eaten immediately. Store components separately: soft-boiled eggs (unpeeled) in the refrigerator up to 2 days; cooked asparagus in an airtight container up to 2 days (reheat gently); toasted bread in an airtight container up to 4 hours. Do not store the assembled sandwich, as the bread will become soggy from the runny yolk. To reheat components: eggs can be enjoyed cold or warmed gently in hot water; asparagus reheats in a skillet over medium heat with a touch of butter.
Substitutions
- Gruyere cheese → Emmental, Jarlsberg, or sharp aged Cheddar. These cheeses have similar melting properties and complementary nutty or rich flavors; use the same amount
- bread → Sourdough, brioche, ciabatta, or English muffins. Choose bread sturdy enough to support the weight of soft-boiled eggs without falling apart; avoid thin sandwich bread
- fresh asparagus → Green beans (haricots verts), baby broccoli, or thick-cut green beans. Cook green beans for 3–4 minutes (they're thinner); baby broccoli for 4–5 minutes. Both offer a similar tender-crisp texture
- mayonnaise → Crème fraîche, Greek yogurt, or softened cream cheese. Use about 1 tablespoon per sandwich for creaminess; these alternatives add tanginess or richness
