Air Fryer Crispy Pancetta and Fontina Egg Sandwich
A restaurant-quality Italian breakfast sandwich made entirely in the air fryer. Crispy pancetta, a perfectly cooked egg with options for runny or set yolk, melted fontina cheese, and toasted crusty bread come together in about 20 minutes with minimal cleanup.
Steps
Before you start
- Preheat air fryer to 380°F (193°C) while you prep ingredients
- Slice pancetta, bread (about ½ inch thick), and fontina cheese ahead if not pre-sliced
- Have a small oven-safe ramekin (2–3 inches diameter) ready for cooking the egg
- Gather softened butter and parchment paper near your air fryer
Slice and ready ingredients
- If using whole pancetta, block fontina, and crusty loaf, slice them now: pancetta into 3 pieces or keep slices whole (about 2 oz / 55g total), cheese into 2 slices about ¼ inch thick, and bread into 2 slices about ½ inch thick.
- Place small oven-safe ramekin on counter next to your cooking station.

Ready when: All ingredients sliced and ramekin is ready on counter
Tip: Pre-sliced pancetta and cheese will save you time; use the thickest slices available
Cook pancetta until crispyOven 380°F / 195°C
- Arrange pancetta slices in air fryer basket on a piece of parchment paper, spacing them in a single layer so they cook evenly and don't stick together.
- Place basket in air fryer preheated to 380°F (193°C).
- Cook for 7–8 minutes, stirring or flipping pieces halfway through, until edges are deeply browned and the pancetta is crispy and releases easily from the parchment.

Ready when: Pancetta edges are deeply browned and crispy; it curls slightly and releases easily from parchment
Tip: Don't overlap slices; they need air circulation to crisp evenly. Set a timer so you don't forget to flip halfway through
Toast bread slicesOven 375°F / 190°C
- While pancetta finishes cooking (around the 3–4 minute mark), brush both sides of bread slices lightly with softened butter.
- Arrange in a clean air fryer basket in a single layer.
- Set air fryer to 375°F (190°C) and cook for 3–4 minutes until golden brown on the exterior but still tender inside.
- Remove and set aside on a plate.

Ready when: Bread is golden brown on the outside, still tender inside; crust is crispy
Tip: Light, even buttering prevents the bread from drying out while toasting; too much butter makes it soggy. Toast immediately before serving for the crispiest result
Prepare egg and ramekin
- While bread toasts, crack the egg into the small oven-safe ramekin.
- Sprinkle with a tiny pinch of salt and black pepper.
- Stir gently with a fork if you prefer scrambled-style; leave whole and undisturbed for a fried-egg appearance.

Ready when: Egg is in ramekin, seasoned, and ready to cook
Tip: Use a ceramic or glass ramekin that can safely handle 320°F; metal can work too. Don't overseason at this stage; you can always add more later
Cook egg to your preferenceOven 320°F / 160°C
- After pancetta and bread are removed from the air fryer, carefully place the ramekin with the egg in the basket.
- Set the air fryer to 320°F (160°C) and cook for 5–6 minutes for a runny yolk (whites should be opaque and set, yolk still jiggly in the center), or 7–8 minutes for a fully set, firm yolk.
- Cooking time varies by air fryer model and egg size, so check at the 5-minute mark by gently shaking the ramekin.

Ready when: Egg whites are opaque and fully set; yolk is either slightly runny (145°F / 63°C, center jiggles gently) or fully firm (160°F / 71°C, no jiggle)
Tip: Most air fryer baskets are transparent or semi-transparent, so you can watch the egg cook without opening the door. Once the whites turn fully opaque, you can assess yolk firmness by gently shaking the ramekin; if it jiggles, it's runny
Layer and assemble sandwich
- Place one slice of toasted bread on a plate or cutting board.
- Layer half of the fontina cheese on the bread, then the crispy pancetta slices, then the cooked egg (carefully pour or slide it from the ramekin), then the remaining cheese slice.
- Top with the second slice of toasted bread, pressing down gently.
- The residual heat from all components will begin to soften the cheese naturally.

Ready when: Sandwich is fully stacked with all layers in place and ready to eat or optionally melt
Tip: Work steadily and while components are warm so the cheese softens naturally. If your ramekin egg is hard to slide, run a small spatula or butter knife around the edges to loosen it first
Quick melt (optional) and serveOven 350°F / 175°C
- For extra-melted, gooey cheese, place the assembled sandwich (on a piece of parchment paper or directly in the basket) back in the air fryer at 350°F (175°C) for 1–2 minutes until the cheese visibly melts.
- Alternatively, skip this step if you prefer crispy bread with slightly softened cheese, or if you're eating immediately.
- Remove the sandwich (carefully—it's hot), slice diagonally if desired for easier eating and presentation, and serve at once while bread is crispy and cheese is warm.

Ready when: Cheese is fully melted and gooey (if you opted to melt); bread is still crispy or slightly warmed through
Tip: Watch closely during this final step; the bread can brown quickly on a second pass. If you prefer crispy bread over melted cheese, skip this step and serve immediately. Be very careful when slicing if the yolk is runny—it may squirt hot egg onto your plate or hands
Good to know
Tips
- For a more well-done yolk, cook the egg 1–2 minutes longer; for a runnier, more liquid yolk, reduce cooking time by 1–2 minutes. Check at the 5-minute mark and adjust from there.
- Pancetta crisps best when arranged in a single layer without overlapping—crowding prevents proper air circulation and even cooking.
- Light buttering of bread prevents drying while toasting and adds rich, savory flavor. Use barely 1 teaspoon total, spread thin on both slices.
- If you don't have a small oven-safe ramekin, you can fold a piece of parchment paper into a small pouch or bowl shape and crack the egg directly into it—parchment is air-fryer safe
Make ahead
You can prep all ingredients (slicing pancetta, portioning cheese, slicing bread) up to 4 hours ahead and store them separately in airtight containers in the fridge. Assemble and cook the sandwich fresh for best texture and flavor.
Storage & reheating
Best consumed immediately while warm. Leftovers are not recommended, as the bread becomes stale and the egg dries out quickly. If you must store components: cooked pancetta and bread can be kept separately in airtight containers in the fridge for up to 2 days. To reheat, toast bread and warm pancetta in the air fryer at 350°F (175°C) for 1–2 minutes, then cook a fresh egg for best results.
Substitutions
- pancetta, thinly sliced → 3–4 slices of bacon (preferably thick-cut). Cook at the same temperature (380°F); bacon may take 9–10 minutes to crisp. It's more widely available than pancetta but has a slightly smokier, less savory flavor
- fontina cheese, sliced → 2 slices of provolone or asiago cheese. Both have similar melting properties and Italian heritage; use the same amount and quantity of slices
- crusty Italian bread → Focaccia, ciabatta, or sourdough bread. Use 1 thick slice (about ½ inch) or 2 thinner slices. Adjust toasting time by 1–2 minutes depending on thickness and bread type
- large egg → Scrambled egg cooked in the ramekin. Beat egg with salt and pepper in the ramekin, cook at 320°F for 4–5 minutes, stirring gently halfway through, until soft-scrambled. Texture will be custardy rather than firm
