Steps

Before you start
  • Pat chicken thighs dry with paper towels
  • Have all toppings and tortillas ready before starting
  • Check that your Instant Pot is clean and dry
  1. Build the pot

    • Place the Instant Pot trivet (or wire rack) in the bottom of the 6-quart Instant Pot.
    • Pour in the ½ cup (120 ml) of water.
    • Arrange the patted-dry chicken thighs on the trivet in a single layer, slightly overlapping if needed.

Tip: Patting chicken dry helps it cook more evenly and prevents excess steam.

  2. Season and add salsa

    • Sprinkle the chicken with 1 tsp (3 g) ground cumin, ½ tsp (1.5 g) garlic powder, and a pinch each of salt and black pepper.
    • Pour the 1¼ cups (300 ml) of salsa evenly over the chicken.
    • Arrange the lime halves on top, pressing them lightly into the salsa.

Tip: Don't stir; let the salsa naturally drape over the chicken.

  3. Pressure cook

    • Lock the Instant Pot lid in place and set the valve to sealing.
    • Select high pressure and cook for 12 minutes.
    • This will build pressure and cook the chicken through.

Ready when: High pressure display shows cooking time counting down

Tip: Do not open the lid during cooking; pressure must build and maintain.

  4. Natural release

    • When the timer beeps, allow the pot to sit undisturbed for 10 minutes.
    • This allows pressure to release gradually and keeps the chicken moist.
    • The pressure valve will lower on its own.
    + Show details

Ready when: Pressure valve drops to low or disappears completely

Tip: Do not use quick release; natural release prevents the chicken from drying out.

  5. Release remaining pressure

    • After 10 minutes, carefully move the valve to venting to release any remaining pressure.
    • Wait another 30 seconds, then remove the lid, lifting it away from you to avoid steam.
    + Show details

Ready when: No steam comes from the valve

Tip: Always tilt the lid away from your face to protect from residual steam.

  6. Shred the chicken

    • Using two forks or shredding claws, shred the chicken directly in the pot, breaking it into bite-sized pieces.
    • Remove the lime halves and discard.
    • Stir the shredded chicken into the salsa broth, which will season it further.
    • Taste and adjust seasoning with salt and pepper as needed.
    + Show details

Ready when: Chicken shreds easily and mixes smoothly into salsa; no pink remains

Tip: Shred while the chicken is still warm—it's much easier and more tender.

  7. Warm tortillasOven 350°F / 175°C

    • While the chicken rests, warm the corn tortillas.
    • You can do this directly over a gas flame for 10–15 seconds per side until pliable, in a dry skillet over medium heat for 20 seconds per side, or wrapped in a damp cloth in the oven at 350°F (175°C) for 2 minutes.
    • Stack them and keep covered until serving.

Ready when: Tortillas are warm, soft, and pliable without cracking

Tip: Never serve cold tortillas with hot chicken; the temperature difference makes them harder to fold.

  8. Serve

    • Arrange warm tortillas on a platter.
    • Using a slotted spoon, fill each tortilla with about 2–3 tablespoons (30–45 g) of shredded chicken.
    • Top with fresh cilantro, thin slices of white onion if using, and a squeeze of lime juice.
    • Serve immediately with extra salsa on the side.

Tip: Use a slotted spoon to drain excess sauce, keeping the chicken moist but the tortillas from becoming soggy.

Good to know

Tips
  • For extra richness, stir 2 tablespoons (28 g) of cream cheese into the shredded chicken just before serving.
  • Make a taco bar: set out the warm chicken, tortillas, cilantro, onion, lime wedges, and extra salsa so guests build their own.
  • If your salsa is very spicy, reduce the amount to 1 cup (240 ml) and add ¼ cup (60 ml) chicken broth to maintain liquid levels.
  • Shredded chicken freezes beautifully; make a double batch and freeze extras for quick weeknight meals.
Make ahead

Shred the chicken and prepare the sauce up to 2 days ahead; store in an airtight container in the refrigerator. Reheat gently in the Instant Pot on sauté mode or in a skillet over medium heat for 3–4 minutes, stirring occasionally, until warmed through.

Storage & reheating

Refrigerator: Store shredded chicken with sauce in an airtight container up to 3 days. Reheat gently over medium heat or in the microwave (2–3 minutes, stirring halfway). Freezer: Freeze up to 3 months in a freezer-safe container or bag; thaw overnight in the refrigerator and reheat as above. Tortillas: Store in an airtight container at room temperature up to 5 days or freeze up to 2 months.

Substitutions
  • medium or mild salsa (fresh or canned) → diced tomatoes (1¼ cups/300 ml fresh or canned) plus 1 tsp chile powder and ½ tsp oregano. Creates a less chunky sauce but similar flavor. Adjust salt to taste.
  • corn tortillas (6-inch/15 cm) → flour tortillas or soft taco shells. Increases calories and changes texture slightly; flour tortillas hold filling better than corn.
  • fresh cilantro → fresh parsley or diced jalapeños. Parsley gives color without the distinctive cilantro taste; jalapeños add heat.
  • boneless, skinless chicken thighs → boneless, skinless chicken breasts (1.5 lbs/680 g). Breasts cook faster (10 minutes) but dry out more easily; reduce cook time and watch carefully.
