Air Fryer Crispy Carnitas Tacos

Tender, citrus-braised pork shoulder shredded and crisped in the air fryer until the edges are golden and caramelized. Served in warm corn tortillas with fresh cilantro and your choice of toppings. Steps

Before you start
  • Preheat air fryer to 400°F (200°C)
  • Have all toppings prepped and ready to serve
  • Use a pork shoulder cut from the butt or picnic; avoid lean cuts
  • Read through timing—there's a steam-release rest after braising
  1. Braise pork with aromaticsOven 325°F / 165°C

    • In a 6-quart Dutch oven or heavy pot, combine the pork chunks, orange halves (squeezed to release juice, then halved again), lime halves, crushed garlic, bay leaves, cumin, oregano, salt, and black pepper.
    • Pour in chicken broth.
    • Stir to distribute spices evenly.
    • Cover the pot and place it in a preheated 325°F (163°C) oven.
    • Braise for 45 minutes until the pork is very tender and easily shreds with a fork.
    • The liquid will reduce slightly and infuse the meat with flavor.

Ready when: Pork shreds easily with a fork and is pale and very tender

Tip: Do not skip this braising step; it renders the fat and tenderizes the meat. The broth-braised method is faster than traditional carnitas but yields similar results.

  2. Rest and drain pork

    • Remove the pot from the oven and carefully pour the contents into a fine-mesh strainer set over a bowl.
    • Discard the bay leaves, garlic, and citrus.
    • Let the pork rest in the strainer for 10 minutes, allowing excess liquid to drain.
    • Reserve 3 tablespoons (45 ml) of the braising liquid for crisping.
    • Discard the rest.

Ready when: Liquid has drained from the pork; it will be warm and tender

Tip: Save a small amount of the braising liquid—it adds moisture and flavor when crisping in the air fryer.

  3. Shred and season pork

    • Using two forks or a meat shredder, pull the pork into bite-sized shreds.
    • Transfer the shredded pork to a bowl and drizzle with the reserved 3 tablespoons of braising liquid.
    • Season lightly with an additional pinch of salt if needed, tossing gently to distribute the liquid evenly.
    • The pork can be prepared up to this point and refrigerated for up to 2 days.
    + Show details

Ready when: Pork is in uniform, bite-sized shreds with no large chunks

Tip: Shred while the pork is still warm—it shreds cleanly and quickly. If it cools, you can warm it gently in the braising liquid first.

  4. Prepare air fryerOven 400°F / 205°C

    • Preheat the air fryer to 400°F (200°C) for 5 minutes.
    • Line the air fryer basket or baking tray with parchment paper if desired (it makes cleanup easier).
    • If your air fryer is smaller than 6 quarts, you may need to work in two batches.
    + Show details

Ready when: Air fryer has reached 400°F (200°C)

Tip: Preheat thoroughly so the pork crisps quickly and evenly.

  5. Crisp pork in air fryerOven 400°F / 205°C

    • Spread the shredded pork evenly in a single layer (or two layers if necessary, working in batches) in the preheated air fryer basket or on a baking tray, breaking up any clumps.
    • Air fry at 400°F (200°C) for 12–15 minutes, shaking the basket or stirring the pork halfway through (at about 7 minutes) to ensure even browning.
    • The pork is done when the edges are dark golden brown and some pieces have crispy, caramelized edges.

Ready when: Edges are dark golden to caramelized brown; some pieces are crispy; the pork is very fragrant

Tip: Stir halfway through to prevent the bottom from burning. Watch carefully in the last 2 minutes—the line between perfectly crispy and overdone is narrow.

  6. Warm tortillas

    • While the pork crisps, warm the corn tortillas.
    • If you have a gas stovetop, place a tortilla directly over a medium flame for about 10 seconds per side until warm and pliable.
    • Alternatively, wrap them in a damp paper towel and microwave on high for 45–60 seconds, or warm them in a dry skillet over medium heat for 20–30 seconds per side.
    • Stack them in a clean kitchen towel to keep them warm.
    + Show details

Ready when: Tortillas are warm, pliable, and beginning to show light charring (if charred method is used)

Tip: Warm tortillas just before serving—they dry out quickly. A damp towel keeps them moist.

  7. Assemble tacos

    • Transfer the crispy pork to a serving bowl or platter.
    • Set out the warm tortillas, minced onion, fresh cilantro, and radish slices (if using).
    • Let each diner fill their own tacos: place a small handful of pork (about 2 tablespoons / 30 g) on each tortilla, top with a pinch of onion, a few cilantro leaves, and radish slices.
    • Serve with lime juice on the side for squeezing over the tacos.

Ready when: Tacos are assembled and ready to eat

Tip: Keep the pork warm in a low oven (200°F / 93°C) if you need a few minutes between batches. Do not assemble tacos ahead of time—they will become soggy.

Tips
  • Traditional carnitas are cooked in lard for hours. This air fryer version achieves crispy, caramelized edges in a fraction of the time by braising first, then air frying—it's a modern shortcut without sacrificing texture or flavor.
  • The key to great carnitas is contrast: tender, juicy meat with crispy, caramelized edges. Do not skip the air frying step or simply serve the braised meat—the crispness is essential.
  • If you don't have fresh cilantro, use fresh parsley or omit it. Cilantro is traditional but not essential if you dislike its flavor.
  • For extra richness, serve with crema (Mexican sour cream) or a dollop of regular sour cream thinned with lime juice on the side.
Make ahead

The pork can be braised and shredded up to 2 days ahead, then refrigerated in an airtight container. Reheat gently in a 325°F (163°C) oven for 10 minutes before air frying, or proceed directly to the crisping step without reheating (add 2–3 extra minutes to the air fryer time if cold).

Storage & reheating

Refrigerate leftover shredded pork in an airtight container for up to 3 days. To reheat, air fry at 350°F (175°C) for 5–7 minutes until warmed through. Freeze for up to 3 months; thaw in the refrigerator overnight, then reheat as above.

Substitutions
  • low-sodium chicken broth → beef broth or vegetable broth. Use beef broth for a deeper flavor; vegetable broth will be milder and slightly less traditional.
  • dried Mexican oregano → dried marjoram or dried thyme. Mexican oregano has a distinct flavor; other oregano varieties will work but taste more peppery. Marjoram is milder and closer to oregano's sweetness.
  • boneless pork shoulder → pork butt or pork picnic. These are the same cut, just labeled differently at different butchers. Avoid pork loin or pork tenderloin—they are too lean.
  • corn tortillas (5-inch / 12.7 cm diameter) → flour tortillas. Flour tortillas will work but taste less authentic. Warm them the same way; they hold up well to the moisture from the pork.
