Steps
Before you start
- Soak the basmati rice in cold water for at least 15 minutes, then drain
- Have all spices measured and ready before you begin
- Pat the lamb dry with paper towels to help browning
- Warm your flatbread just before assembling the wraps
Marinate the lamb
- In a large bowl, combine the 0.5 cup yogurt with the ginger-garlic paste, Kashmiri chili powder, ground coriander, ground cumin, garam masala, turmeric, 1 tsp salt, and black pepper.
- Add the lamb cubes and toss gently until evenly coated.
- Let sit for 10 minutes at room temperature while you prep the remaining ingredients.
- This brief marinating begins to tenderize the meat and infuse flavor.

Tip: Don't marinate longer than 30 minutes or the yogurt will break down the meat too much, making it mushy.
Brown the lamb
- Set the Instant Pot to the sauté function on high.
- When hot, add 2 tbsp ghee.
- Working in two batches so as not to crowd the pot, brown the marinated lamb on all sides, about 6–7 minutes total per batch.
- Remove the browned lamb to a plate.
- The meat should develop a golden crust; it doesn't need to cook through at this stage.

Ready when: Lamb is golden brown on all sides
Tip: Don't skip browning—it builds deep flavor. If the pot isn't hot enough, the meat will steam instead of sear.
Caramelize the onion
- Add the thinly sliced onion to the same pot (don't clean it—the browned bits add flavor) and stir occasionally for 4–5 minutes until the onion is golden and soft.
- Turn off the sauté function.

Ready when: Onion is golden and caramelized
Tip: If the pot starts to stick, stir more often and lower the heat slightly to medium-high.
Layer the biryani
- Return the browned lamb and any accumulated juices to the pot and stir to combine with the onions.
- Spread the drained basmati rice evenly over the lamb layer.
- Do not stir.
- Pour the 2 cups water evenly over the rice.
- Place the bay leaf, cinnamon stick, crushed cardamom pods, and cloves on top.
- These whole spices perfume the rice and are removed before serving.

Tip: Don't stir after adding the rice; layering keeps the grains separate and fluffy.
Pressure cook the biryani
- Close the Instant Pot lid, set the valve to sealing, and cook on high pressure (9 psi) for 8 minutes.
- This cooks the rice perfectly and finishes cooking the lamb.
- The pressure locks in steam, which fully cooks the grains and makes the meat tender.

Ready when: Instant Pot comes to pressure and timer counts down
Tip: Make sure the valve is sealed or pressure won't build.
Natural release and rest
- When the timer beeps, turn off the heat and allow the pot to release pressure naturally for 10 minutes.
- This is crucial—the continued gentle heat finishes cooking the rice grains and allows the lamb to relax and become more tender.
- After 10 minutes, if the float valve has dropped, carefully open the lid away from you to avoid steam burns.

Ready when: Float valve drops and lid opens safely
Tip: Don't rush to quick-release or the rice will be mushy and the lamb tough.
Fluff and separate
- Use a fork to gently fluff the rice, breaking up any clumps.
- Remove and discard the bay leaf, cinnamon stick, cardamom pods, and cloves.
- Stir the lamb and rice together gently, being careful not to mash the grains.
- The rice should be fluffy and separate, and the lamb tender and infused with spice.

Ready when: Grains are fluffy and separate; lamb shreds easily with a fork
Tip: If the biryani seems wet after fluffing, keep the lid off for a minute or two to let excess steam evaporate.
Prepare the raita
- While the biryani finishes cooking, combine the 1 cup chilled yogurt with the diced cucumber, chopped mint, chopped cilantro, 0.25 tsp salt, and the toasted ground cumin (if using).
- Stir gently until combined.
- This cooling raita balances the warm, spiced lamb and rice.
- It can be made up to 4 hours ahead and refrigerated.

Ready when: Raita is well combined and chilled
Tip: Don't add the raita to the warm rice; serve it on the side so it stays cool and creamy.
Warm the flatbread
- Just before assembling the wraps, warm the naan or roti.
- You can place them on a dry skillet over medium-high heat for 30 seconds per side, or wrap them in a damp kitchen towel and microwave for 20 seconds.
- They should be warm and pliable for wrapping.

Ready when: Flatbread is warm and soft
Tip: Warm bread just before serving so it doesn't cool down before eating.
Assemble the wraps
- Lay a warm flatbread on a clean surface.
- Spoon 0.75 to 1 cup of the warm biryani (lamb and rice together) down the center of each bread.
- Top with 3–4 tablespoons of chilled raita.
- Add a pinch of fresh mint leaves if desired, and serve with lemon wedges on the side.
- Fold or roll the flatbread around the filling, tucking the sides in as you go.
- Serve immediately while the rice is warm and the raita is cold—the contrast is essential to the dish.

Ready when: Wraps are assembled and ready to eat
Tip: Don't overfill the wraps or they'll be difficult to fold and eat. You can serve the biryani and raita separately if your guests prefer to assemble their own.
Good to know
Tips
- The key to perfect Instant Pot biryani is the natural release. Don't skip it or use quick release, or the rice will be mushy and the meat tough.
- For extra color and flavor, toast the cumin seed for the raita in a dry skillet over medium heat for 30 seconds until fragrant, then grind. It's optional but adds a subtle depth.
- If you prefer spicier biryani, add an extra 0.5 tsp Kashmiri chili powder to the marinade. If you prefer milder, reduce it to 1.5 tsp and ensure your raita is creamy to balance.
- Ramadan Iftar is the perfect time to serve this—the warm biryani, cool raita, and soft flatbread together create a satisfying, celebratory meal that's quick enough for busy gatherings.
Make ahead
The biryani can be made up to 2 days ahead and refrigerated in an airtight container. The raita can be prepared up to 4 hours ahead. Reheat the biryani gently in the Instant Pot on low sauté for 2–3 minutes, stirring occasionally, or in a covered pan over medium-low heat, then assemble fresh wraps with warm flatbread.
Storage & reheating
Store leftover biryani and raita separately in the refrigerator in airtight containers for up to 3 days. Reheat the biryani gently in a covered pan over medium-low heat or in the Instant Pot on low sauté until warmed through, about 5 minutes. The raita should be eaten cold. Biryani freezes well for up to 3 months in a freezer container; thaw overnight in the refrigerator and reheat as above. Flatbread is best fresh, but can be warmed from cold just before serving.
Substitutions
- boneless lamb shoulder, cut into 1-inch cubes → 1.5 lb (680 g) boneless chicken breast or thigh, cut into 1-inch pieces. Chicken will cook slightly faster; reduce pressure-cooking time to 6 minutes.
- basmati rice → jasmine rice or long-grain white rice. Jasmine rice works well and has a delicate flavor, though basmati is traditional. The cooking time remains the same.
- warm naan or roti → paratha, roti, or even large flour tortillas. Any soft, pliable flatbread works. Adjust warming time as needed.
- plain yogurt → Greek yogurt (use 0.75 cup and thin with 2–3 tbsp water to match consistency). Greek yogurt is thicker, so thinning it prevents the raita from becoming too dense.
