Instant Pot Eid Spiced Goat Cheese and Date Wrap

A warm, celebratory wrap inspired by North African flavors, featuring creamy goat cheese and sweet dates infused with warming spices like cinnamon, cardamom, and ginger. Steps

Before you start
  • Remove goat cheese from the refrigerator 15 minutes before cooking so it softens slightly
  • Have all spices measured and ready
  • Warm your flatbread just before serving (wrap in a clean kitchen towel or warm in a dry skillet)
  1. Fill Instant Pot with water

    • Pour 0.75 cup (180 ml) water into the inner pot of the Instant Pot.
    • Place the stainless steel steamer rack (trivet) inside the pot.

Tip: Using the trivet prevents the filling from sitting directly in liquid, keeping it creamy rather than watery.

  2. Prepare filling bowl

    • In a small stainless steel or glass bowl (4–5 inches diameter) that fits inside the Instant Pot, combine the halved dates, crumbled goat cheese, chopped walnuts, cinnamon, cardamom, ginger, a pinch of sea salt, and a grind of black pepper.
    • Stir gently to distribute the spices evenly without over-mashing the dates.
    • Dot the top with the butter pieces.
    + Show details

Ready when: Spices are evenly distributed; dates, cheese, and walnuts are mixed but still retain their shape.

Tip: Don't over-stir—you want the goat cheese to remain in soft curds that will melt gently, not become a paste.

  3. Set bowl on trivet

    • Carefully place the filled bowl on top of the trivet inside the Instant Pot.
    • The bowl should sit above the water level.

Ready when: Bowl is stable and centered on the trivet.

Tip: Make sure the bowl doesn't touch the sides of the pot—it needs steam to circulate underneath for even warming.

  4. Cook under pressure

    • Lock the Instant Pot lid in place.
    • Turn the steam release valve to 'Sealing.' Press the 'Pressure Cook' or 'Manual' button and set to HIGH pressure for 5 minutes.
    + Show details

Ready when: The pot comes to pressure and the timer counts down for 5 minutes.

Tip: The Instant Pot will take 1–2 minutes to come to pressure before the timer begins; this is normal.

  5. Release pressure and cool

    • When the timer beeps, turn the steam release valve to 'Venting' to quick-release the pressure.
    • Once all steam has escaped and the lid hisses have stopped, carefully open the lid by tilting it away from you.
    • Let the bowl cool in the pot for 2 minutes, then carefully remove it using tongs or a folded towel, as it will be hot.
    + Show details

Ready when: All steam has escaped; the filling is warm and cohesive, with goat cheese softened and dates plump.

Tip: Quick-release is safe here; the filling won't foam or splatter. Always tilt the lid away from your face.

  6. Gently warm flatbread

    • While the filling rests, warm your flatbread.
    • You can wrap it in a damp paper towel and microwave for 30–45 seconds, or place each piece in a dry skillet over medium heat for 15–20 seconds per side until pliable and warm.
    + Show details

Ready when: Flatbread is warm and pliable, not crispy.

Tip: Warm flatbread just before assembling so it stays soft and doesn't dry out while the filling is being prepared.

  7. Assemble the wraps

    • Lay each warmed flatbread on a plate or clean work surface.
    • Spoon roughly one-quarter of the warm filling into the center of each piece, leaving a 1-inch border around the edges.
    • Drizzle each wrap with about 2 teaspoons (10 ml) of honey, and scatter a pinch of orange zest on top if using.
    • Fold two opposite sides of the flatbread toward the center and then fold one of the remaining sides up and over, creating a loose wrap or envelope.
    + Show details

Ready when: Wraps are folded and filling is visible and warm inside.

Tip: Don't fold too tightly—the filling should be visible in the wrap, and it's easier to eat when gently folded. The residual heat will keep everything warm for a few minutes.

  8. Serve immediately

    • Transfer wraps to a serving platter or plates, and serve at once while still warm.
    • Serve with extra honey on the side, if desired.

Tip: These wraps are best enjoyed immediately while the goat cheese is creamy and the dates are still tender and warm.

Good to know

Tips
  • Toast your walnuts fresh if possible: spread them on a baking sheet and toast at 350°F (175°C) for 5–8 minutes, stirring once, until fragrant. This deepens their flavor and removes any stale taste.
  • If your goat cheese is very cold or firm, let it sit at room temperature for at least 15 minutes before cooking so it softens and blends smoothly with the dates.
  • For a larger gathering, you can easily double the filling recipe—just use a slightly larger bowl (6–7 inches diameter) that still fits inside the Instant Pot, and keep the cooking time the same.
  • Orange blossom honey is traditional in North African pastries; if you have it, it's worth seeking out for this recipe. Regular wildflower or acacia honey works equally well.
Make ahead

You can prepare the filling ingredients in their bowl up to 4 hours ahead, cover, and refrigerate. When ready to serve, add the butter and proceed with step 3. Alternatively, you can toast the walnuts and chop all ingredients the day before.

Storage & reheating

Leftover filling can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in a small saucepan over low heat or in the microwave (in 15-second intervals, stirring between each) until warmed through. The wraps are best assembled and eaten fresh, though leftover filling works wonderfully as a spread on toast or crackers the next day.

Substitutions
  • soft, creamy goat cheese (chèvre), at room temperature → Ricotta cheese or mascarpone, at room temperature. These will give a slightly creamier, richer texture but work beautifully and are easier to find in some regions.
  • walnuts, toasted → Toasted almonds, pistachios, or a mix of both. All are equally delicious and provide a similar nuttiness and texture; toast them lightly before chopping.
  • ground cinnamon → Ground sumac (use same amount). Sumac brings a bright, tangy note instead of warmth, creating a more savory profile—still very North African.
  • honey, preferably orange blossom or acacia → Maple syrup or date syrup. Date syrup is especially authentic and adds depth; maple brings an earthier sweetness that pairs well with the spices.
