Harissa Pomegranate Chickpea Bowl

A warm or room-temperature bowl of spiced chickpeas marinated in harissa paste, pomegranate juice, and olive oil, served over grains or greens with fresh herbs, pomegranate seeds, and a drizzle of tahini. The deep heat of harissa is balanced by tart pomegranate and finished with coriander's citrus notes. Naturally vegan and full of plant-based protein.

Steps

Before you start
  • Have all spices measured and ready before you start cooking
  • If using dried chickpeas, cook and cool them completely before marinating
  • Pomegranate juice should be unsweetened; check the label for no added sugar
  1. Toast coriander seeds

    • Place coriander seeds in a dry medium saucepan over medium heat.
    • Toast for 1–2 minutes, stirring occasionally, until fragrant and lightly golden.
    • Transfer to a small bowl, let cool for 30 seconds, then crush lightly with the back of a spoon.
    • You want some seeds broken and some whole for texture.

Ready when: Seeds are fragrant and turning light golden brown

Tip: Watch closely—coriander burns quickly and turns bitter. Stop before they darken significantly.

  2. Make harissa marinade

    • In a small bowl, whisk together harissa paste, pomegranate juice, olive oil, minced garlic, crushed coriander seeds, kosher salt, and black pepper until well combined.
    • The mixture should be smooth and emulsified.
    • Taste and adjust seasoning—it should be bold and slightly spicy.

Ready when: Marinade is smooth, emulsified, and no harissa lumps remain

Tip: Whisk vigorously for 30 seconds to help the harissa and oil emulsify. If it separates, whisk again before adding chickpeas.

  3. Combine chickpeas and marinade

    • Place drained and rinsed chickpeas in a large bowl.
    • Pour the harissa marinade over them and stir gently but thoroughly to coat every chickpea.
    • All the chickpeas should glisten with the marinade and be evenly distributed in the liquid.

Ready when: All chickpeas are coated and surrounded by marinade

Tip: Use a gentle hand to avoid breaking the chickpeas. A rubber spatula works well for folding.

  4. Marinate chickpeas

    • Let the marinated chickpeas sit at room temperature for at least 30 minutes, stirring gently once or twice during that time to redistribute the marinade.
    • The chickpeas will absorb the flavors and the pomegranate juice will deepen their color.

Ready when: Chickpeas have darkened and absorbed the marinade; liquid is mostly absorbed or coating the beans

Tip: For deeper flavor, marinate for up to 4 hours or overnight in the refrigerator. Bring to room temperature before serving for best flavor.

  5. Warm chickpeas (optional)

    • If serving warm, transfer the marinated chickpeas and any remaining marinade to the medium saucepan and warm gently over medium-low heat for 3–4 minutes, stirring occasionally, until steaming but not boiling.
    • Do not skip this step if your grain base is warm—temperature contrast is unpleasant.
    + Show details

Ready when: Chickpeas are steaming and reach about 160°F (70°C)

Tip: Stir gently and often to avoid scorching the bottom. If the marinade is too thick, add 2–3 tbsp water to loosen it.

  6. Prepare tahini drizzle

    • If using tahini, whisk tahini with 2 tablespoons of water and 1 teaspoon of lemon juice in a small bowl until thin, pourable consistency is reached.
    • Add more water 1 tablespoon at a time if needed.
    • Season lightly with a pinch of salt.
    + Show details

Ready when: Tahini is pourable and coats the back of a spoon lightly

Tip: Tahini thickens as it cools; make it slightly looser than you think you need. You can always add more water.

  7. Build the bowls

    • Divide the warm or room-temperature cooked grains (if using) among four serving bowls.
    • Top each with a generous portion of marinated chickpeas and their marinade.
    • Scatter pomegranate seeds, chopped cilantro, and chopped mint over each bowl.
    • Add a few slices of red onion if desired.
    • Drizzle each bowl with tahini sauce and a squeeze of fresh lemon juice.
    + Show details

Ready when: Bowls are assembled with even distribution of chickpeas, herbs, and seeds

Tip: Build bowls just before eating so herbs stay bright and pomegranate seeds don't release too much juice and become soggy.

Good to know

Tips
  • Toast your own coriander seeds if possible—ground coriander loses its bright citrus notes quickly and tastes musty. Toasting brings them back to life.
  • Pomegranate seeds are traditional in North African cuisine but seeds from a fresh pomegranate are far superior to jarred versions, which lose their juice and snap. Cut the pomegranate in half and hold it cut-side down over a bowl, then tap the skin with a spoon to release the arils.
  • This bowl is naturally vegan and gluten-free if you use quinoa or another certified GF grain. Farro and bulgur contain gluten.
  • Harissa marinade is an excellent base for roasted vegetables, grilled fish, or marinated tofu. Double the recipe and keep it in the fridge for 1 week to transform other proteins throughout the week.
Make ahead

Marinate chickpeas up to 4 hours ahead or overnight in the refrigerator in an airtight container. The flavor deepens with time. Warm gently before serving, or serve cold in summer. Tahini drizzle can be made up to 2 hours ahead; store in an airtight container and thin again with a teaspoon of water before use.

Storage & reheating

Store marinated chickpeas in an airtight container in the refrigerator for up to 5 days. The flavor remains excellent for 3 days. Do not freeze—the texture of canned chickpeas suffers. Reheat gently on the stovetop over medium-low heat with a splash of water, or serve cold. Store fresh herbs separately in a sealed bag and add just before serving to maintain brightness.

Substitutions
  • harissa paste → 1½ tsp smoked paprika + 1½ tsp cayenne pepper + 1 tsp tomato paste mixed with 1 tbsp water. A spice blend creates similar heat and depth if harissa is unavailable, though slightly less complex. Adjust cayenne to taste.
  • unsweetened pomegranate juice → Red wine vinegar (¼ cup / 60 ml) mixed with 2 tbsp honey and 2 tbsp water. Vinegar brings tartness; honey adds body. The flavor will be brighter and less fruity but still excellent.
  • coriander seeds → 1 tsp ground cumin or ½ tsp caraway seeds, toasted and crushed. Cumin brings earthiness; caraway adds nuttiness. Neither is quite the same citrus note, but both work well.
  • tahini → Labneh (strained yogurt) thinned with lemon juice and water, or store-bought tzatziki. Labneh adds tang and creaminess. Use sparingly if the bowl is already marinated in harissa. Not vegan.
