Steps
Before you start
- Cook the lentil pasta 1–2 hours ahead or the morning of serving to allow time for cooling
- If using canned lentils, drain and rinse them well
- Have pomegranate seeds ready (fresh or frozen work; thaw frozen seeds 10 minutes before)
- Juice the lemon and measure tahini at room temperature for a smooth dressing
Cook the lentil pasta
- Bring a large pot of salted water to a rolling boil.
- Add the lentil pasta and cook according to package directions, usually 8–10 minutes, until al dente (tender but with a slight bite).
- Drain in a colander and rinse briefly under cool water to stop the cooking.
- Spread on a clean kitchen towel or large plate to cool to room temperature, about 5–10 minutes.
- (You can prepare this 1–2 hours or even the morning of serving; once cool, transfer to an airtight container in the refrigerator.)

Ready when: Pasta is tender but still has a slight firmness when bitten
Tip: Do not overcook lentil pasta; it becomes mushy quickly. Taste at the lower end of the package time.
Make the tahini-lemon dressing
- In a medium bowl, whisk together the tahini, lemon juice, minced garlic, ground cumin, and warm water.
- Whisk until smooth and emulsified; the mixture should be pourable but creamy, similar to a thin yogurt.
- If the dressing is too thick, add a little more warm water, 1 tablespoon at a time.
- Season generously with sea salt and freshly ground black pepper to taste.
- Drizzle in the extra-virgin olive oil and whisk to combine.
- Taste and adjust seasoning.

Ready when: Dressing is smooth, creamy, and slightly thinner than peanut butter
Tip: Whisk the dressing thoroughly to prevent lumps; if tahini is too thick before mixing, warm the bowl with hot water first to soften it.
Chop fresh herbs
- While the dressing sits, finely chop the flat-leaf parsley and fresh mint.
- Keep them separate for now, or combine them in a small bowl if you prefer.
- The herbs will stay bright green if not chopped too far ahead; chop just before assembly if possible.

Ready when: Herbs are finely and uniformly chopped
Tip: Use a sharp knife or kitchen shears to chop herbs quickly and cleanly, preventing bruising and browning.
Assemble the bowls
- Divide the cooled lentil pasta evenly among four serving bowls, using about ¾ cup (190 ml) pasta per bowl.
- Top each portion with ⅜ cup (90 ml) of the cooked lentils.
- Add optional diced cucumber and red onion if desired, distributing evenly.
- Drizzle each bowl with about 3 tablespoons (45 ml) of the tahini-lemon dressing.
- Sprinkle generously with the chopped parsley and mint, and top with pomegranate seeds (about 3 tablespoons / 45 ml per bowl).
- Season with a small pinch of salt and pepper to taste.

Ready when: All bowls are evenly filled and garnished
Tip: Dress the bowls just before serving to keep the pasta from absorbing too much dressing and becoming dense. If making ahead, keep components separate and assemble at serving time.
Good to know
Tips
- Tahini dressing can separate if made too far ahead; whisk or shake well before serving.
- For a heartier bowl, add 2–3 tablespoons of crumbled feta cheese, toasted chickpeas, or a dollop of Greek yogurt per serving.
- Pomegranate seeds burst with juice; add them last to prevent dressing and pasta from becoming too wet and darkened.
- This bowl is naturally vegan as written; it provides about 12–14 grams of plant-based protein per serving from the lentil pasta and lentils, making it energizing for breaking the fast.
Make ahead
Lentil pasta can be cooked, cooled, and refrigerated up to 2 days ahead. The tahini-lemon dressing keeps refrigerated up to 5 days; stir or whisk to recombine before serving. Cooked lentils can also be made ahead and chilled up to 3 days. For best results, assemble bowls just before serving to preserve the brightness of the herbs and the texture of the pasta.
Storage & reheating
Assembled bowls are best enjoyed immediately but can be stored in an airtight container in the refrigerator for up to 4 hours; the pasta will soften slightly as it absorbs dressing. Store components separately for longer storage: pasta and lentils for up to 3 days, dressing for up to 5 days, fresh herbs (loosely wrapped in paper towels in a container) for 3–4 days, and pomegranate seeds (in a covered container) for up to 4 days. The bowls do not freeze well due to the delicate pasta and fresh herbs.
Substitutions
- lentil pasta (penne, fusilli, or orzo) → Whole-grain pasta, barley pasta, or regular durum wheat pasta. Cooking times may vary; check package directions. Regular pasta will have a milder, slightly softer texture than lentil pasta.
- tahini (sesame paste) → Natural almond butter or sunflower seed butter. Use the same amount. These will yield a slightly nuttier, less earthy flavor but provide similar creaminess.
- pomegranate seeds (arils) → Diced red bell pepper, chopped dried cranberries, or tart cherry pieces. Pomegranate offers tart-sweet bursts; alternatives add brightness, sweetness, or chew. Use the same volume.
- fresh mint leaves → Fresh cilantro or additional parsley. Cilantro adds a different herbal note; extra parsley keeps the brightness but without mint's cooling effect.
