Greek Saganaki-Spiced Fried Cheese Dip
A warm, crispy-edged cheese dip inspired by saganaki, the classic Greek fried cheese. Halloumi and feta are air-fried until the edges turn golden and crispy, then tossed with a warm olive oil, lemon, and oregano mixture. Serve hot with crusty bread, pita chips, or vegetables for dipping. The combination of melted, creamy cheese with crispy fried edges and bright citrus is deeply satisfying and bursting with Mediterranean flavor.

Steps
Before you start
- Pat the halloumi and feta dry with paper towels—moisture prevents proper browning
- Preheat your air fryer to 380°F (193°C) for 3 minutes
- Have all ingredients measured and ready; the final step is quick
Coat the cheese
- In a small shallow bowl, whisk together the flour, dried oregano, black pepper, and salt.
- Pat the halloumi slices and feta crumbles completely dry with paper towels.
- Working in batches, dredge the halloumi and feta in the flour mixture, coating lightly on all sides.
- Shake off excess flour and place on a plate.

Ready when: All cheese pieces are lightly dusted with flour mixture
Tip: Drying the cheese is crucial—any moisture will create steam and prevent browning
Air fry the halloumiOven 380°F / 195°C
- Arrange the floured halloumi slices in a single layer in the air fryer basket, without overlapping.
- Air fry at 380°F (193°C) for 6 to 7 minutes, shaking the basket gently at the 3-minute mark.
- The halloumi should be golden brown on the edges and just beginning to ooze slightly at the edges—it will not melt completely.

Ready when: Halloumi is golden brown on edges with a soft, slightly yielding center
Tip: Don't skip the shake—it ensures even browning on all sides
Add feta to air fryerOven 380°F / 195°C
- Carefully open the air fryer and add the feta crumbles to the basket with the halloumi, stirring gently with a wooden spoon or heatproof spatula to mix them.
- Air fry for another 4 to 5 minutes at 380°F (193°C) until the feta begins to soften and the halloumi edges deepen in color.
- The mixture should be fragrant and begin to smell nutty and caramelized.

Ready when: Halloumi edges are deeply golden and feta is soft and starting to break down
Tip: Feta crumbles will be fragile—stir very gently to avoid pulverizing them into dust
Make the warm oil drizzle
- While the feta air-fries, warm the olive oil in a small saucepan over medium-low heat.
- Add the minced garlic and cook for about 30 seconds, swirling constantly, until fragrant but not browned.
- Remove from heat.
- Stir in the lemon juice, lemon zest, and crushed red pepper flakes (if using).
- Season to taste with a pinch more salt if needed.
- Keep warm.

Ready when: Garlic is fragrant and the oil is warm (not smoking)
Tip: Cook the garlic very briefly—overcooking makes it bitter and overpowering
Transfer and dress the dip
- Once the air-fried cheese is done, immediately transfer it to a shallow serving bowl or plate.
- Drizzle the warm lemon-garlic oil over the top, pouring slowly and allowing it to pool around and coat the cheese.
- Toss gently with a wooden spoon, mixing the oil, halloumi, and feta together.
- Taste and adjust seasoning with salt, pepper, or a squeeze of additional lemon juice if desired.

Ready when: Cheese is coated with warm oil and glistening; flavors are balanced
Tip: Work quickly so the warm oil coats the cheese while it's still hot
Garnish and serve
- Top with fresh oregano leaves if desired.
- Serve immediately while the cheese is warm and crispy on the outside.
- Offer alongside crusty bread slices, pita chips, toasted pita triangles, or fresh vegetables (bell peppers, cucumbers, tomatoes) for dipping.

Tip: Serve this dip immediately—halloumi cools and firms up quickly, losing its appeal
Good to know
Tips
- For the deepest golden color and best texture, make sure the cheese is completely dry before coating. Even small droplets of moisture create steam that interferes with browning.
- If your air fryer runs hot, start checking the halloumi at 5 minutes rather than 6—some models brown faster than others.
- This dip is meant to be warm and pourable, not piping hot. If it begins to cool, reheat gently in the air fryer for 2 to 3 minutes, then redress with warm oil.
- The contrast between crispy exterior edges and creamy interior is the signature of saganaki—don't rush the cooking or the cheese won't brown properly.
Make ahead
You can coat the cheese with the flour mixture up to 2 hours ahead; store in the refrigerator on a plate, uncovered. The oil drizzle can be prepared and kept warm in a small saucepan on very low heat for up to 30 minutes. Air fry the cheese fresh just before serving for the best crispy-outside, creamy-inside texture.
Storage & reheating
This dip is best served immediately and does not store well. Leftover fried cheese can be refrigerated in an airtight container for up to 1 day, but it will lose its crispy texture. Reheat briefly in the air fryer at 350°F (177°C) for 2 to 3 minutes to restore some crispiness, then drizzle with fresh warm oil and lemon juice before serving. Freezing is not recommended.
Substitutions
- halloumi cheese, cut into ½-inch (1.3 cm) thick slices → Kefalotyri or graviera cheese. Use other Greek fried cheeses with a high melting point. Cut into the same thickness and proceed as directed.
- crumbled feta cheese → Crumbled kashkaval or aged pecorino. For a nuttier flavor, use aged pecorino in place of feta. Reduce the salt slightly since pecorino is very salty.
- extra-virgin olive oil → Garlic-infused olive oil. If you prefer more garlic flavor, use good-quality garlic-infused oil and reduce the fresh garlic to a whisper (¼ clove).
- fresh lemon juice → Fresh lime juice. Lime offers a different but equally bright citrus note. Use the same amount and adjust to taste.
