Steps

Before you start
  • Take the feta and yogurt out of the fridge 10 minutes before blending; room-temperature cheese whips smoother.
  • Use block feta packed in brine if you can. Pre-crumbled feta is drier and can leave the dip grainy.
  • Taste your feta first. If it is very salty, skip adding any extra salt at the end.
  • Have a rubber spatula ready to scrape the bowl of the food processor a few times.
  1. Prep the feta

    • Remove the feta from its brine and pat it very dry with paper towels.
    • Crumble it into large chunks and leave it on the counter with the yogurt for 10 minutes to take the chill off.

    Tip: Wet feta makes a runny dip, so dry it well.

  2. Zest and juice lemon

    • Finely grate 1 teaspoon of zest from the lemon, then cut it in half and squeeze 1 tablespoon (15 ml) juice, removing any seeds.
    • Peel and roughly chop the garlic clove.

    Ready when: Zest is fluffy and fragrant; juice is seed-free

    Tip: Zest before juicing; a squeezed lemon is nearly impossible to grate.

  3. Blend feta and yogurt

    • Add the feta, yogurt, 3 tablespoons olive oil, lemon juice, zest, garlic and black pepper to the food processor.
    • Process for 1 minute, then stop and scrape down the sides and bottom with a spatula.

    Ready when: Mixture looks thick and mostly smooth with a few small bits of feta

    Tip: Don't skip the scrape; unblended feta hides under the blade.

  4. Whip until silky

    • Add 1 tablespoon ice-cold water and process for 2 more minutes, scraping once halfway.
    • If the dip is still stiff or grainy, add up to 1 more tablespoon (15 ml) water and process 30 seconds longer.

    Ready when: Dip is completely smooth, pale, fluffy and holds a soft swoop when lifted with a spatula

    Tip: Add water a tablespoon at a time; too much makes it loose and hard to scoop.

  5. Taste and adjust

    • Taste the dip.
    • Add a few more drops of lemon juice if it needs brightness or another pinch of pepper if it needs bite.
    • Only add salt if your feta was mild, as most are salty enough.

  6. Swirl into bowl

    • Scoop the dip into a shallow 2-cup (480 ml) serving bowl.
    • Use the back of a spoon to make a wide swirl with a shallow well in the center.

  7. Add the toppings

    • Drizzle 1 tablespoon olive oil over the dip, then drizzle the honey on top in a thin stream.
    • Sprinkle with the za'atar and Aleppo pepper if using.

    Tip: Top just before serving so the za'atar stays vibrant and doesn't clump.

  8. Serve

    • Warm the pita rounds in a dry skillet over medium heat for 30 seconds per side, or in a toaster, then cut into wedges.
    • Arrange the pita and cucumber rounds around the dip and serve immediately.

  • Process longer than you think: a full 3 minutes total transforms crumbly feta into a whipped, mousse-like dip.

  • Choose feta sold in brine, preferably sheep's milk, for the creamiest, most flavorful result.
  • For a warm, mellow version, drizzle the olive oil and honey and broil the dip briefly, though serve it right away.
Make ahead

"Make the dip through step 5 up to 3 days ahead and refrigerate in an airtight container. Let it sit at room temperature for 20 minutes, stir briefly, then swirl and add the toppings just before serving."

Storage & reheating

"Room temperature: up to 2 hours. Fridge: store undressed dip in an airtight container for up to 4 days; stir well before using. Freezer: not recommended, as the texture turns grainy after thawing. Serve cold or at room temperature; no reheating needed."

Substitutions
  • full-fat plain Greek yogurt → Cream cheese or labneh, same amount. Cream cheese gives a richer, denser dip; labneh is tangier and thicker, so you may need an extra tablespoon of water.
  • za'atar → 1 teaspoon dried oregano + ½ teaspoon toasted sesame seeds + ¼ teaspoon ground sumac. A quick homemade approximation if you can't find za'atar.
  • honey → Hot honey or maple syrup, same amount. Hot honey adds heat (skip the chili flakes); maple gives a deeper sweetness and makes it non-honey.
  • pita bread → Sturdy crackers, crostini or raw vegetables like bell pepper strips and carrots. Makes the spread gluten-free or lower-carb.
