Greek Kataifi Shredded Pastry Rolls with Pistachios and Honey

Crispy, golden kataifi nests filled with roasted pistachios and cinnamon, baked until shattered and fragrant, then finished with a warm spiced honey drizzle. These elegant rolls are lighter than traditional baklava, with delicate shreds that shatter on the bite and a floral honey finish.

Steps

Before you start
  • Preheat oven to 350°F (175°C) with a rack in the middle position.
  • Let frozen kataifi thaw at room temperature for 30 minutes before opening the package.
  • Toast the pistachios lightly for 5 minutes to intensify their flavor.
  • Have honey, butter, and all other ingredients measured and ready to go.
  1. Mix the filling

    • In a medium bowl, combine the finely chopped pistachios, ground cinnamon, and granulated sugar.
    • Stir until evenly mixed.
    • Set aside.

Tip: Pulse the pistachios in a food processor for more consistent texture, but don't overprocess—you want crumbs, not a paste.

  2. Prepare the dough

    • Line a 9×13-inch baking sheet with parchment paper.
    • Gently separate the thawed kataifi strands with your fingers, fluffing them to loosen any clumps.
    • You should have a loose, airy pile.

Tip: Work gently—kataifi tears easily. If you're rough, it won't crisp properly in the oven.

  3. Layer and form rolls

    • Take about 2 tablespoons of loose kataifi strands and arrange them on your work surface in a small rectangle about 3 inches wide.
    • Brush lightly with warm melted butter (about 0.5 tsp).
    • Sprinkle 1 tablespoon of the pistachio-cinnamon filling across the center.
    • Roll tightly from one short end, tucking the sides in as you go to create a compact cylinder about 3 inches long and 1.5 inches wide.
    • Place seam-side down on the prepared baking sheet.
    • Repeat with remaining dough and filling to make 12 rolls, spacing them about 1 inch apart.

Tip: Use your fingers to gently pack each roll—they should hold together but still feel light and airy, not compressed.

  4. Brush and bakeOven 350°F / 175°C

    • Brush the tops and sides of each roll generously with the remaining warm melted butter.
    • Place in a preheated 350°F (175°C) oven and bake for 32–35 minutes, until the kataifi is deep golden brown and crispy all over, with the shreds starting to curl slightly at the edges.

Ready when: Kataifi is deep golden brown, crispy, and shreds are curled at the edges.

Tip: If the tops brown too quickly (after 20 minutes), loosely tent with foil, but most ovens don't require this.

  5. Warm the honey syrup

    • While the rolls bake, combine the honey, water, lemon juice, vanilla extract, and sea salt in a small saucepan.
    • Heat over medium heat, stirring gently, until the mixture is warm and just beginning to steam (about 3–4 minutes).
    • Do not boil.
    • Remove from heat and let cool slightly while the rolls finish baking.

Ready when: Honey mixture is warm and steaming but not boiling.

Tip: The lemon juice and vanilla brighten the honey—don't skip them, even in small amounts.

  6. Drizzle and cool

    • Remove the rolls from the oven and place the baking sheet on a wire rack.
    • Immediately drizzle the warm honey syrup evenly over all the rolls, allowing it to soak into the crevices.
    • The rolls will sizzle slightly as the warm honey meets the hot pastry.
    • Let cool on the baking sheet for at least 15 minutes before serving.
    • The rolls will continue to crisp up as they cool.

Ready when: Rolls are cool enough to handle and honey has set.

Tip: Drizzling while the rolls are hot ensures the honey soaks in. Waiting to cool makes them crispier and easier to pick up.

Good to know

Tips
  • Kataifi must be fully thawed and loosely separated before rolling, or it will clump and won't bake evenly. Thaw at room temperature in the sealed package for 30 minutes, then gently pull apart with your fingers—don't force it.
  • Brush each roll with butter before baking to encourage even crisping and golden color. The butter also prevents the shreds from drying out too much.
  • Timing matters for the honey drizzle: it must go on while the rolls are still hot so it absorbs into the crevices, but cool slightly so you don't get a thin, runny glaze. Aim for 5 minutes out of the oven.
  • Serve these the day they're made for maximum crispness. They're best at room temperature, not warm from the oven, when the texture really shatters and the honey has fully set.
Storage & reheating

Store cooled rolls in an airtight container at room temperature for up to 3 days. They will soften slightly but can be recrisped in a 300°F (150°C) oven for 5 minutes. Do not refrigerate, as this accelerates sogginess. Freezing is not recommended for kataifi—the delicate texture will not recover well after thawing.

Substitutions
  • roasted unsalted pistachios → roasted unsalted almonds, finely chopped. Almonds will be slightly milder and less buttery but create an equally crispy, delicious roll. Use the same amount.
  • honey (preferably Greek or floral) → light corn syrup or agave nectar. For a less floral sweetness. Warm and drizzle the same way. The result will be less complex but still pleasant.
  • ground cinnamon → ground cardamom or a blend of cinnamon and cardamom (1 tsp cinnamon + 0.5 tsp cardamom). Cardamom is more aromatic and traditional in some Greek preparations. Start with less and taste as you mix.
  • vanilla extract → ¼ tsp of rose water or orange blossom water. These add a more Mediterranean floral note. Use sparingly—both are potent and can easily overpower the honey.
