Steps
Before you start
- Gather all ingredients and have your Instant Pot ready
- If using canned beans instead of dried, skip step 1 and start at step 2
- Ensure your salsa is at room temperature for best blending
Pressure cook the beans
- Pour the dried pinto beans into the inner pot of a 6-quart Instant Pot.
- Add 2 cups of water and the salsa.
- Stir well to combine.
- Secure the lid, set the valve to sealing, and cook on high pressure for 12 minutes.

Ready when: Beans are fork-tender and slightly soft throughout
Tip: No need to soak dried beans; they cook quickly under pressure with the liquid and salsa for flavor.
Sauté the onions
- While the beans cook, heat 1 tablespoon of olive oil in a small skillet over medium heat.
- Add the diced onion and cook for 4–5 minutes, stirring occasionally, until softened and lightly golden at the edges.
- Set aside.

Ready when: Onions are soft, translucent, and lightly caramelized at edges
Tip: Cooking onions separately ensures they stay flavorful and add texture to the finished dip rather than dissolving into the beans.
Natural pressure release
- When the Instant Pot beeps, remove it from the heat.
- Allow the pressure to release naturally for 5 minutes, then carefully turn the valve to venting to release any remaining pressure.
- Open the lid slowly.

Ready when: Pressure indicator drops and lid opens without resistance
Tip: Natural release keeps the beans intact; quick release can make them mushy.
Blend the beans
- Using an immersion blender directly in the Instant Pot inner pot, blend the beans and liquid until mostly smooth with a few small chunks remaining (about 30–40 seconds of blending).
- If you prefer a completely smooth dip, blend longer; for a chunkier texture, blend briefly.
- If you don't have an immersion blender, carefully transfer the beans to a regular blender in batches, blend, and return to the pot.

Ready when: Mixture is creamy and holds together, with optional small chunks
Tip: Leaving a few small chunks gives the dip a more rustic, appetizing texture rather than looking too much like baby food.
Add spices and cheese
- Stir in the cumin, garlic powder, and the sautéed onions.
- Turn the Instant Pot to sauté mode on medium heat.
- Once the mixture is warm (about 1 minute), add the shredded cheddar cheese in two additions, stirring well after each addition until melted and smooth.
- Add salt and black pepper to taste.

Ready when: Cheese is fully melted, mixture is creamy and hot throughout (about 170°F / 77°C on a thermometer)
Tip: Adding cheese in two batches ensures it melts smoothly without clumping; if the mixture is too thick, you can stir in 1–2 tablespoons of water or salsa.
Garnish and serve
- Transfer the dip to a serving bowl or leave in the Instant Pot on warm mode (not sauté).
- Top with fresh cilantro and minced jalapeño, if using.
- Serve warm with tortilla chips, crackers, or crudités.

Ready when: Dip is in serving vessel, ready to eat
Tip: Keeping the dip on the Instant Pot warm setting during serving prevents it from cooling and thickening; stir occasionally if serving over more than 30 minutes.
Good to know
Tips
- For a spicier dip, use hot salsa, add minced jalapeño to the beans in step 1, or stir in ¼ teaspoon cayenne pepper in step 5.
- If your Instant Pot doesn't have a sauté mode or you prefer not to use it for step 5, transfer the bean mixture to a slow cooker on low or a pot on the stovetop over medium heat to warm and melt the cheese.
- To make this dip extra creamy, blend in 2–3 tablespoons of sour cream or Mexican crema after the cheese melts in step 5.
- Serve with a variety of accompaniments: crispy tortilla chips, warm flour tortillas, bell pepper strips, celery sticks, or even warm cornbread for a heartier option.
Make ahead
Prepare the dip up to step 5 (before garnish) and refrigerate in an airtight container for up to 3 days. Reheat in the Instant Pot on sauté mode over medium-low heat, stirring often, until warm (about 3–4 minutes). Add a splash of water or salsa if the dip has thickened.
Storage & reheating
Room temperature: up to 1 hour in a covered serving bowl (if at a party). Refrigerator: transfer to an airtight container and store for up to 3 days. To reheat, place in a pot over medium-low heat, stirring frequently until hot, or microwave in 30-second intervals, stirring between each, until warmed through. Freezer: not recommended due to the cheese content, which can separate; the dip is best enjoyed fresh or refrigerated.
Substitutions
- dried pinto beans, unsoaked → 2 cans (15 oz / 425 g each) pinto beans, drained and rinsed. Reduce water to 0.5 cup (120 ml) and cooking time to 2 minutes at high pressure, or skip the pressure-cooking step entirely and stir canned beans directly into the blending step.
- salsa (mild or medium) → 1.5 cups (360 ml) diced tomatoes with green chiles or a mix of fresh pico de gallo and tomato sauce. Fresh pico will add brightness; tomato sauce will make the dip richer. Adjust salt accordingly.
- sharp cheddar cheese, shredded → 1 cup (110 g) shredded Monterey Jack, pepper Jack, or a blend of cheddar and cotija cheese. Jack cheese melts smoothly; pepper Jack adds heat. Cotija adds a tangy, crumbly texture (mix 50/50 with cheddar).
- ground cumin → 1 teaspoon smoked cumin or replace with 0.5 teaspoon cumin plus 0.5 teaspoon smoked paprika. Smoked cumin and paprika add depth and a subtle smoky flavor that complements the beans and salsa.
