Budget Stovetop Creamed Corn and Green Chili Dip
A vibrant, creamy Tex-Mex dip made entirely on the stovetop using pantry staples. Canned corn and roasted green chilies blend with melting cream cheese and sharp cheddar for a dip that's tangy, slightly spicy, and deeply savory. Ready in under 15 minutes and perfect for game day, potlucks, or casual entertaining.
Steps
Before you start
- Have a 2-quart saucepan ready
- Drain canned corn well using a fine-mesh strainer
- Chop green chilies into small, even pieces so they distribute throughout the dip
Melt butter and bloom spices
- In a 2-quart saucepan over medium heat, melt 2 tablespoons butter.
- Once foaming, add 2 minced garlic cloves, ½ teaspoon ground cumin, and ¼ teaspoon smoked paprika.
- Stir constantly for 30 seconds until fragrant, being careful not to let the garlic brown.

Ready when: Garlic is fragrant and just beginning to color at the edges
Tip: Don't let the spices burn—they'll taste bitter. Keep the heat at medium.
Add cream cheese and begin melting
- Reduce heat to medium-low.
- Add the 8 oz cold cream cheese, broken into ½-inch cubes, directly to the pan.
- Stir gently and constantly, breaking up the cream cheese as it softens, for about 2 minutes.
- The mixture will look broken and separated at first.

Ready when: Cream cheese is mostly melted and beginning to combine with the butter
Tip: Use medium-low heat so the cheese melts smoothly without breaking. Patience is key here.
Stir in cheddar cheese
- Add 1.5 cups freshly grated sharp cheddar cheese, a handful at a time, stirring constantly between additions.
- Keep the heat at medium-low.
- The mixture will become creamy and glossy as the cheddar melts in.
- This takes about 2 minutes total.

Ready when: Cheese is fully melted and the mixture is smooth and creamy with no visible lumps
Tip: Add cheese in small batches so each addition melts evenly. Pre-grated cheese can clump; freshly grated is best.
Fold in corn and green chilies
- Add the 1.5 cans (about 430 g) well-drained corn and the 1 can (113 g) drained green chilies, roughly chopped.
- Stir gently to fold them into the cheese base without breaking up the corn kernels excessively.
- Heat for 1 minute until everything is warm and evenly distributed.

Ready when: Corn and chilies are evenly distributed throughout and warmed through
Tip: Drain the canned vegetables very thoroughly so excess liquid doesn't thin the dip.
Season and finish
- Remove from heat.
- Stir in 1 tablespoon fresh lime juice.
- Taste the dip and add kosher salt and freshly ground black pepper to taste, starting with ¼ teaspoon salt and a pinch of pepper.
- Adjust seasoning as needed.
- If using, stir in 2 tablespoons chopped fresh cilantro just before serving.

Tips
- For a spicier dip, add ⅛ teaspoon cayenne pepper in step 1, or stir in a few dashes of your favorite hot sauce in step 5.
- Keep the dip on low heat and stir gently to prevent the cheese from breaking or becoming grainy. If it does, whisk in 1–2 tablespoons whole milk off the heat to smooth it out.
- This dip is best served with sturdy vehicles: tortilla chips, thick-cut corn chips, or crackers. Thin chips will break under the dip's weight.
- Double the recipe easily for a crowd—just increase all ingredients by half and use a larger saucepan (3-quart). Cooking time remains the same.
Make ahead
Make the dip up to 2 days ahead. Cool completely, then transfer to an airtight container and refrigerate. Reheat gently on the stovetop over medium-low heat, stirring frequently, until warmed through (3–4 minutes). You can also reheat in a slow cooker on low for 30–45 minutes. If the dip seems too thick when reheating, stir in a splash of whole milk or cream (1 tablespoon at a time) to loosen it.
Storage & reheating
Room temperature: Serve immediately or keep warm in a small slow cooker on the lowest setting for up to 2 hours. Refrigerator: Store in an airtight container for up to 3 days. Reheat on the stovetop over medium-low heat or in a 325°F (163°C) oven in a covered baking dish for 10–12 minutes. Freezer: Not recommended—the texture of the cheese becomes grainy upon thawing.
Substitutions
- sharp cheddar cheese, freshly grated → Monterey Jack cheese or a blend of mild white cheddar and Oaxaca. Monterey Jack will be slightly creamier; Oaxaca adds a wonderful stretch and mild flavor. Avoid pre-shredded varieties with anti-caking agents, which don't melt smoothly.
- roasted green chilies, canned (4 oz), chopped → 1 poblano pepper, roasted, peeled, and chopped, or ½ jalapeño, minced. Fresh poblanos are milder and more buttery; jalapeños are spicier. Add them in step 4. If using jalapeños, reduce the amount or keep seeds for more heat.
- whole kernel corn, canned (15.25 oz) → Frozen corn kernels (thawed and drained) or fresh corn (about 1.5 cups). Fresh corn is sweeter and more delicate; add it at the very end to avoid overcooking.
- fresh lime juice → Lemon juice or a splash of white vinegar (½ tablespoon). Vinegar adds brightness without citrus flavor. Start with less and taste, as it's more assertive than lime.
