Egyptian Sugarcane Lime Smoothie
A frosty, slushy blend inspired by Egypt's beloved street-side asab (sugarcane juice), brightened with fresh lime and mint. Naturally sweet, tart, and incredibly refreshing, it comes together in five minutes.

Steps
Before you start
- Chill the sugarcane juice in the fridge for at least 2 hours so the smoothie stays frosty and doesn't melt the ice too fast.
- Roll the limes firmly on the counter before juicing; this breaks up the pulp and gives more juice.
- Use fresh or frozen unsweetened sugarcane juice (thawed, if frozen). Shelf-stable bottled juice works but tastes less grassy and more sweet.
- Chill your serving glasses in the freezer for 10 minutes if you like.
Zest and juice limes
- Finely grate 1 teaspoon of zest from the 2 large limes using a microplane, avoiding the white pith.
- Cut the limes in half and juice them to get ¼ cup (60 ml).
- Remove any seeds.
- Slice the small garnish lime into 2 thin wheels and cut a small slit in each.

Ready when: You have ¼ cup (60 ml) seed-free juice and about 1 tsp fragrant zest.
Tip: Zest before juicing; a squeezed lime is nearly impossible to grate.
Prep the mint
- Pick ½ cup (10 g) mint leaves from the stems.
- Set aside 2 small sprigs for garnish.
- Gently pat the leaves dry if they are wet so they don't dilute the drink.

Ready when: Leaves are separated from stems and dry to the touch.
Tip: Keep stems out; they taste bitter when blended.
Load the blender
- Pour the chilled sugarcane juice, lime juice, lime zest, mint leaves, and salt into the blender jar.
- Add the honey now if using.
- Top with the 2½ cups (330 g) ice.

Tip: Add liquids first and ice last so the blades catch easily and spin freely.
Blend until slushy
- Secure the lid and blend on low for 5 seconds, then increase to high for 30 to 40 seconds.
- The mixture should be pale green, thick, and slushy with no large ice chunks, and the mint should be broken into tiny flecks.

Ready when: Smooth, pale green slush that pours slowly from a spoon, with no ice chunks.
Tip: Over-blending warms and thins the drink. Stop as soon as the ice is fully crushed.
Taste and adjust
- Taste a spoonful.
- If it's too tart, add the optional honey or a splash more sugarcane juice and pulse 3 times.
- If too sweet, add 2 teaspoons lime juice and pulse.
- If it's too thick, pulse in 2 tablespoons (30 ml) cold water.

Ready when: Balance of sweet and tart, with a light grassy sugarcane flavor.
Tip: A tiny pinch of salt makes the sweetness taste rounder, but don't overdo it.
Serve immediately
- Divide the smoothie between 2 tall glasses, about 12 oz (350 ml) each.
- Garnish each with a lime wheel perched on the rim and a mint sprig.
- Serve right away with a wide straw or spoon.

Ready when: Frosty glasses with thick, evenly mixed slush.
Tip: Drink within 10 minutes; it separates as the ice melts.
Good to know
Tips
- Chill everything first: cold juice means less ice is needed, so the drink stays flavorful rather than watery.
- Include a little zest; the lime oils add aroma that juice alone lacks.
- For a more traditional street-style drink, skip the ice, blend only the juice, lime, and mint, strain, then serve over crushed ice.
- Ginger is a nice addition: blend in a ½-inch (1 cm) slice of fresh ginger for a warm kick.
Make ahead
"Juice the limes and chill them with the sugarcane juice up to 24 hours ahead in sealed containers. Pick the mint and store it between damp paper towels. Blend just before serving."
Storage & reheating
"Best served immediately. Leftovers keep in a sealed jar in the fridge up to 24 hours; shake or re-blend with a few ice cubes before drinking. Freeze in an ice cube tray up to 1 month and re-blend with a splash of lime juice. Fresh sugarcane juice oxidizes and darkens quickly, so use it the day it's pressed."
Substitutions
- fresh sugarcane juice → Coconut water plus 2 tablespoons light brown sugar or simple syrup. Gives a similar light sweetness, though without the grassy sugarcane flavor.
- fresh lime juice → Fresh lemon juice. Slightly sweeter and less floral; use the same amount.
- fresh mint leaves → Fresh basil leaves (¼ cup). Gives a more herbal, anise-like note.
- honey or simple syrup → Agave syrup or simple syrup. Use the same amount; makes it vegan.
