Steps
Before you start
- Drain and pat the canned chickpeas dry so they crisp properly in the oven
- Have all your vegetables prepped before you start roasting
- Preheat the oven to 425°F (220°C) for the chickpeas
Cook the freekeh
- In a medium saucepan, bring 2½ cups (600 ml) of water to a boil.
- Add 1¼ cups (200 g) of freekeh and ¾ teaspoon (4 g) of kosher salt.
- Stir once, then reduce heat to low, cover with a lid, and simmer for 20 minutes.
- The freekeh should be tender and the water mostly absorbed.
- If liquid remains, drain it off.
- Fluff with a fork and set aside to cool for about 10 minutes while you prepare the other components.

Ready when: Grains are tender and fluffy, water mostly absorbed
Tip: Don't skip the cooling step—it helps the freekeh firm up slightly and makes it easier to mix without becoming mushy.
Roast the chickpeasOven 425°F / 220°C
- Preheat the oven to 425°F (220°C).
- While the freekeh cooks, drain, rinse, and thoroughly pat dry 2¾ cups (480 g) of canned chickpeas using paper towels—this is crucial for crisping.
- In a small bowl, whisk together 2 tablespoons (30 ml) of olive oil, 1½ teaspoons (3 g) of ground cumin, ½ teaspoon (1 g) of sweet paprika, ½ teaspoon (3 g) of kosher salt, and ¼ teaspoon (0.5 g) of black pepper.
- Toss the dried chickpeas with this mixture until evenly coated.
- Spread on a rimmed baking sheet in a single layer.

Ready when: Chickpeas are coated evenly in spiced oil
Tip: Thorough drying of the chickpeas is essential—wet chickpeas will steam rather than crisp. Don't skip the paper towel step.
Roast until crispyOven 425°F / 220°C
- Roast the chickpeas in the preheated 425°F (220°C) oven for 25–30 minutes, shaking the baking sheet halfway through to ensure even browning.
- The chickpeas are done when golden, crispy on the outside, and no longer moist to the touch.
- They will firm up further as they cool.

Ready when: Golden brown, crispy exterior, firm to the touch when cooled slightly
Tip: If your oven runs hot, check at 20 minutes to avoid burning. Crispy chickpeas will harden completely as they cool.
Make the dressing
- In a small bowl, whisk together 3 tablespoons (45 ml) of pomegranate molasses, 1 tablespoon (15 ml) of fresh lemon juice, and 3 tablespoons (45 ml) of extra-virgin olive oil.
- Taste and adjust salt to your preference with kosher salt.
- The dressing should taste tart and rich.
- Set aside until ready to use.

Ready when: Dressing is emulsified and well combined
Tip: Pomegranate molasses is tart—if you don't have it, substitute 2 tablespoons of pomegranate juice mixed with 1 tablespoon of balsamic vinegar, though the flavor will differ slightly.
Assemble the salad
- In a large salad bowl, combine the cooled freekeh, 4 cups (120 g) of mixed greens (roughly torn if large), ¾ cup (135 g) of pomegranate arils, and 2 sliced scallions (white and light green parts).
- Pour the pomegranate-lemon dressing over the salad and gently toss until everything is evenly coated.
- Top with the roasted crispy chickpeas and scatter torn fresh mint leaves over the top if using.

Good to know
Tips
- Freekeh's nutty, slightly smoky flavor is what makes this salad special—it's roasted green wheat, not an ordinary grain, so don't substitute lightly.
- The key to crispy chickpeas is drying them thoroughly before roasting. Moisture is the enemy of crispness; dedicate 2 minutes to patting them very dry.
- Pomegranate arils burst when aggressively tossed; fold them in gently at the end, or scatter them on top just before serving.
- This salad works as a side dish for grilled fish or chicken, or eaten on its own as a light lunch. It's hearty enough to stand alone thanks to the freekeh and chickpeas.
Make ahead
The freekeh and roasted chickpeas can be prepared up to 1 day ahead. Store them separately in airtight containers in the refrigerator. The dressing keeps for 3 days refrigerated. Assemble the salad no more than 15 minutes before serving to keep the greens fresh and the chickpeas crispy.
Storage & reheating
Store leftovers in an airtight container in the refrigerator for up to 2 days. The greens may soften and the chickpeas will lose some crispness over time. To refresh, reheat the freekeh and chickpeas gently in a low oven (300°F/150°C for 10 minutes) and serve with fresh greens and a drizzle of additional dressing. The salad does not freeze well due to the greens and arils.
Substitutions
- pomegranate molasses → 2 tablespoons (30 ml) pomegranate juice mixed with 1 tablespoon (15 ml) balsamic vinegar. This mimics the tartness but is less concentrated; the flavor will be slightly different and less distinct.
- freekeh (roasted green wheat) → farro, spelt berries, or finely cracked wheat. Use the same weight and cooking liquid. These have a similar nutty flavor and chewy texture, though freekeh's roasted edge is unique.
- mixed greens (spinach, arugula, romaine) → arugula, baby spinach, romaine, or kale (thinly sliced if using kale). Use the same volume. Adjust bite and texture as preferred.
- fresh mint leaves → fresh cilantro or flat-leaf parsley. Keeps the fresh herb component; cilantro adds earthiness, parsley a milder green note.
