
Crispy Chicken Parmesan
Thin chicken cutlets coated in a crunchy panko-Parmesan crust, pan-fried until golden, then topped with marinara and mozzarella and baked briefly until bubbling. The crust stays crisp because only the center of each cutlet gets sauce. The cutlets are generous (about 6 oz / 170 g raw each), so slice them in half after baking if you want smaller portions.

Steps
Before you start
- Keep the chicken refrigerated until you are ready to slice it, and don't leave raw chicken out for more than 30 minutes total.
- Grate the Parmesan and mozzarella yourself from blocks if you can; pre-shredded cheese often has anti-caking starch and melts less smoothly. Use low-moisture mozzarella, not fresh mozzarella packed in water.
- Raw chicken juices spread easily: have hot soapy water, paper towels, and two separate plates ready. One plate is for raw breaded cutlets only. Cooked chicken goes only on the wire rack.
- Keep the wire rack and baking sheet away from raw chicken until the chicken is fully cooked. The oven is preheated later, during the breading rest, so you don't need to turn it on yet.
- You will fry in two batches, so plan to keep the first batch on the wire rack rather than stacking the cutlets.
Slice and pound chicken
- Lay one breast flat on the cutting board and, holding your palm on top, slice it horizontally into two even cutlets.
- Repeat with the second breast to get 4 cutlets.
- Place the cutlets between sheets of plastic wrap, a few inches apart, and pound with a mallet from the center outward until they are an even ½ inch (1.25 cm) thick.
- Pounding can spray raw juices, so keep the work area clear of other food.

Bread the cutlets

Pan-fry in batches

- Using tongs, lay 2 cutlets in the pan, away from you.
- Fry 2 to 2½ minutes per side, flipping with the spatula, until deep golden brown.
- Use the clean spatula, not the tongs, to move them to the wire rack in the baking sheet.
- Wipe out any burnt crumbs, add the remaining oil, heat it, and fry the other 2 cutlets the same way.

Storage & reheating
Refrigerate leftovers within 2 hours of cooking, in an airtight container, for up to 3 days. Freeze for up to 2 months, with parchment between cutlets. Reheat on a rack-lined baking sheet at 375°F (190°C) for 12 to 15 minutes (20 to 25 from frozen), until hot in the center (165°F / 74°C). The oven keeps the crust crisper than the microwave.
Substitutions
- plain panko breadcrumbs → plain dry fine breadcrumbs. Use about ¾ cup (85 g); the crust will be finer and less crunchy.
- boneless, skinless chicken breasts → boneless, skinless chicken thighs. Pound to ½ inch (1.25 cm); they are juicier, and need the same 165°F (74°C) minimum.
- all-purpose flour → gluten-free all-purpose flour with gluten-free panko. Makes the dish gluten-free; the crust is slightly more delicate.
