
Stuffed Zucchini Boats with Italian Sausage

Steps
Before you start
- Choose straight, medium zucchini about 7–8 inches (18–20 cm) long and 8 oz (225 g) each. Very large ones are watery and seedy.
- Heat the oven to 425°F (220°C) with a rack in the center before you start cutting.
- Remove the sausage casings if you're using links. Bulk sausage can go straight into the pan.
- The shells are baked once empty and again once filled, so read the steps through to plan your timing.

Halve and scoop zucchini
- Cut each zucchini in half lengthwise.
- Use a spoon to scoop out the seedy center, leaving a wall about ¼ inch (6 mm) thick on the sides and bottom.
- Chop the scooped flesh into ¼-inch (6 mm) pieces, place it on a clean towel, and squeeze firmly to remove as much liquid as you can.
- You should have about 1½ cups of chopped flesh.

Tip: Scoop gently. If you pierce the bottom, the filling will leak and the boat will turn soggy.
Pre-bake the shellsOven 425°F / 220°C
- Arrange the 8 shells cut side up on the lined baking sheet.
- Brush the insides and edges with the olive oil and sprinkle evenly with the salt.
- Bake for 12 minutes at 425°F (220°C), until the edges are just starting to soften and the cut surface looks slightly dry.
- Leave the oven on.

Tip: Pre-baking drives off water so the finished boats aren't soggy. Start the filling while they bake.
Brown the sausage
- Heat a 12-inch (30 cm) skillet over medium-high heat for 1 minute.
- Add the sausage and break it into ½-inch (1 cm) crumbles with a wooden spoon.
- Cook, stirring occasionally, for 6–8 minutes.
- Spoon off all but about 1 tablespoon of the rendered fat.

Tip: Don't crowd the pan. If the sausage steams instead of browning, cook it in two batches.
Cook the vegetables
- Reduce the heat to medium.
- Add the diced onion and the squeezed zucchini flesh to the sausage.
- Cook, stirring often, for 5–6 minutes.
- Stir in the garlic, oregano and red pepper flakes (if using) and cook for 30 seconds more, until fragrant.

Tip: Garlic burns quickly and turns bitter. Stir it constantly and move on as soon as it smells fragrant.
Mix the filling
- Remove the skillet from the heat.
- Stir in 1 cup (240 ml) of the marinara, ½ cup (30 g) of the panko and ¼ cup (20 g) of the Parmesan.
- Let the filling sit for 5 minutes so the panko absorbs the sauce and the mixture holds together.

Tip: If the mixture looks wet, stir in another tablespoon of panko.
Fill and top the boats
- Mound the filling into the pre-baked shells, dividing it evenly (about ⅓ cup each) and pressing lightly.
- Spoon the remaining ½ cup (120 ml) marinara over the filling.
- Mix the remaining ½ cup (40 g) Parmesan with the remaining ¼ cup (15 g) panko and sprinkle it evenly over the tops.

- The boats are done when the topping is deeply golden, the sauce is bubbling at the edges and a paring knife slides easily into the zucchini wall.

Tips
- Squeeze the chopped zucchini flesh in a towel. Skipping this is the main cause of watery boats.
- Choose similar-sized zucchini so all the shells cook at the same rate.
- Taste the marinara before you use it. Jarred sauces vary a lot in salt, which affects the whole dish.
- Serve with a green salad or crusty bread to soak up the sauce on the pan.
Make ahead
"Assemble the boats through step 7 up to 24 hours ahead. Cover the baking sheet tightly and refrigerate. Hold the Parmesan-panko topping back and sprinkle it on just before baking. Bake straight from the fridge, adding 5–8 minutes to the bake time, until the filling reaches 165°F (74°C)."
Storage & reheating
"Room temperature: up to 2 hours. Refrigerator: store cooled boats in an airtight container for up to 3 days. Freezer: freeze baked boats on a tray, then wrap individually for up to 2 months. Reheat refrigerated boats at 350°F (175°C) for 12–15 minutes, or frozen ones for 25–30 minutes, covered with foil for the first half, until hot throughout. A microwave works but softens the topping."
Substitutions
- Italian sausage, mild or hot → ground turkey or chicken plus ½ tsp fennel seed and an extra ¼ tsp salt. Cook poultry until it reaches 165°F (74°C). It's leaner, so add 1 tbsp olive oil to the skillet.
- panko breadcrumbs → plain dried breadcrumbs. Use ⅔ of the amount, as fine crumbs absorb more. The topping will be less crunchy.
- Parmesan cheese → Pecorino Romano. Saltier and sharper, so you may want to skip the added kosher salt on the shells.
- medium zucchini → yellow summer squash or small eggplant. Squash cooks the same. Eggplant needs 5–10 extra minutes in the pre-bake.
