Chicken Parmesan Pasta Bake

All the flavor of chicken Parmesan in one easy dish: seared chicken pieces and al dente penne tossed in garlicky marinara, blanketed with melted mozzarella, and finished with a crisp, buttery Parmesan-panko crust.

Steps

Before you start
  • Position an oven rack in the center and preheat the oven to 400°F (200°C) before you start cooking.
  • Buy a block of low-moisture mozzarella and shred it yourself if you can; it melts more smoothly than pre-shredded cheese, which is coated to prevent clumping.
  • The pasta is deliberately undercooked (about 3 minutes less than the package says) because it finishes cooking in the oven. Check your package time first.

    • Set a rack in the center of the oven and preheat to 400°F (200°C).
    • Lightly grease a 9×13-inch (23×33 cm) baking dish with a little olive oil or cooking spray.
    • Cut the chicken into 1-inch (2.5 cm) pieces, dice the onion, mince the garlic, and shred the mozzarella.
    • Fill a large pot with water for the pasta and set it over high heat.

  2. Boil the pasta

    • When the water is at a full rolling boil, stir in 1 tablespoon kosher salt, then add the penne.

    • Scoop out ½ cup (120 ml) of the cooking water, then drain the pasta in a colander.
    • Do not rinse.

  4. Sear the chicken

    • Heat 1 tablespoon of the olive oil in a 12-inch (30 cm) deep skillet over medium-high heat until it shimmers.
    • Add the chicken in a single layer (work in two batches if it crowds the pan).
    • Cook without moving for 2 minutes until golden underneath, then stir and cook another 2–3 minutes.
    • Transfer to a clean plate.

  5. Cook the aromatics

    • Add the onion and a pinch of salt and cook, stirring, for 3–4 minutes until soft and translucent, scraping up the browned bits.

Make ahead

"Assemble through the mozzarella layer up to 1 day ahead, cover, and refrigerate; keep the panko topping separate in an airtight container. Add the topping just before baking and add 5–10 minutes to the bake time, until bubbling hot in the center."

Freezer: freeze portions in airtight containers for up to 3 months; thaw overnight in the fridge. Reheat covered with foil at 350°F (175°C) for 20–25 minutes (single portions in the microwave for 2–3 minutes) until steaming hot to 165°F (74°C); uncover for the last 5 minutes to re-crisp the top."

Substitutions
  • dried penne → rigatoni, ziti, or rotini. Use the same weight and still cook 3 minutes short of the package time.
  • boneless, skinless chicken breasts → boneless, skinless chicken thighs. Thighs are juicier and more forgiving; cook to 175°F (80°C) for best texture.
  • panko breadcrumbs → crushed Italian-style breadcrumbs or gluten-free panko. Use the same volume; regular fine crumbs are denser, so use ¾ cup (90 g).
  • low-moisture mozzarella → provolone or a mozzarella-provolone blend. Provolone adds a little sharpness; use the same weight.
