Crème Fraîche Strawberry Rhubarb Smoothie

A silky, tart-sweet smoothie that balances fresh strawberries and cooked rhubarb with the subtle tang of crème fraîche. The rhubarb is briefly stewed with honey to soften its acidity, then blended smooth with cold strawberries and a dollop of crème fraîche for luxurious creaminess. Naturally sweetened and elegant enough for breakfast or a light dessert.

Steps

Before you start
  • Have your blender ready and clean
  • Chill two serving glasses in the freezer for 5 minutes before serving
  • If using fresh rhubarb, wash and trim the ends
  1. Stew the rhubarb

    • Place rhubarb pieces and water in a small saucepan (8-inch) over medium heat.
    • Bring to a gentle simmer and cook, stirring occasionally, for 5 minutes until the rhubarb begins to soften but still holds its shape.
    • Stir in honey until dissolved.
    • Remove from heat.

Ready when: Rhubarb pieces break apart easily when pressed with a spoon but don't completely disintegrate

Tip: Don't overcook the rhubarb or it will become mushy and bitter; 5 minutes is enough.

  2. Cool the rhubarb

    • Transfer the rhubarb mixture to a small bowl and let it cool to room temperature, about 5 minutes.
    • You can speed this by placing the bowl in an ice bath for 2 minutes.

Ready when: Mixture is no longer steaming and feels cool to the touch

Tip: Cool it completely to preserve the freshness and richness of the crème fraîche.

  3. Blend the smoothie

    • Pour the cooled rhubarb mixture, strawberries, crème fraîche, milk, and vanilla extract (if using) into the blender.
    • Blend on high speed for 60–90 seconds until completely smooth and creamy, with no chunks of rhubarb or strawberry remaining.

Ready when: Mixture is smooth, pale pink, and moves freely in the pitcher when the blender is turned off

Tip: Start on low speed for 5 seconds, then increase to high to avoid splattering. If the smoothie is too thick, add 2 tbsp cold milk at a time until you reach desired consistency.

  4. Serve immediately

    • Pour the smoothie into two chilled glasses and serve right away.
    • The smoothie is best enjoyed cold and fresh.

Tip: Chilling the glasses beforehand keeps the smoothie cold longer, especially important if your blender generates heat during blending.

Good to know

Tips
  • If your rhubarb is particularly thick, cut it into thinner pieces (¼-inch) so it softens evenly in just 5 minutes.
  • For a tangier smoothie, add 2 tablespoons of freshly squeezed lemon juice to the blender; it brightens the rhubarb flavor.
  • The ratio of crème fraîche to milk is important: too much crème fraîche makes it heavy; too little loses the elegant tang. Stick to the 2:3 ratio.
  • This smoothie pairs beautifully with a plain butter biscuit or shortbread cookie on the side.
Make ahead

Stew the rhubarb and cool it completely up to 4 hours ahead; store in an airtight container in the refrigerator. Blend the smoothie just before serving so it stays cold and doesn't separate.

Storage & reheating

Serve immediately. If you have leftover smoothie, refrigerate it in a sealed glass for up to 1 day, but the texture will separate slightly. Stir or re-blend briefly before drinking.

Substitutions
  • fresh strawberries, hulled and halved → frozen strawberries (thawed and drained). Use if fresh aren't available. Frozen actually work well here; reduce milk to ¼ cup if the smoothie becomes too thick.
  • crème fraîche, cold → Greek yogurt or sour cream. Both provide tang and creaminess. Greek yogurt will make it slightly thicker and more protein-rich; use the same amount.
  • honey → maple syrup or agave nectar. Use the same amount (2 tbsp). Maple syrup adds earthiness; agave is milder and more neutral.
  • whole milk or oat milk, cold → coconut milk, almond milk, or cashew cream. Coconut milk will add tropical notes; almond milk is neutral. Cashew cream is the closest to the richness of whole milk.
