French Crème Brûlée Vanilla Smoothie
A silky, decadent smoothie inspired by classic French crème brûlée. Creamy Greek yogurt and heavy cream blend with vanilla bean paste and a homemade caramel sauce to create a dessert drink that tastes like the custard without the eggs or oven time. The caramel drizzle on top mimics the signature burnt sugar crust.

Steps
Before you start
- Chill your blender cup in the freezer for 5 minutes if you don't have ice
- Make the caramel sauce first so it can cool slightly before blending
- Have all ingredients measured and ready
Make the caramel sauceOven 350°F / 175°C
- In a medium saucepan over medium heat, combine 3 tablespoons (43 g) butter and ½ cup (100 g) granulated sugar.
- Stir with a wooden spoon until the sugar dissolves and the mixture turns amber-colored, about 3–4 minutes.
- Do not stir after the mixture begins to caramelize; just let it bubble.
- When it reaches a deep golden-brown color (around 350°F / 177°C if using a candy thermometer), carefully remove from heat.

Ready when: Deep golden-brown color, fragrant and bubbling at the edges
Tip: Watch carefully once the mixture starts to brown—it can go from perfect to burnt in seconds. If you go too dark, start over; burnt caramel tastes bitter.
Temper the caramel
- Remove the saucepan from heat and carefully pour ¼ cup (60 ml) warm heavy cream into the caramel.
- It will bubble vigorously—this is normal.
- Stir until smooth, then add ¼ teaspoon (1.5 g) sea salt and ¼ teaspoon (1.25 ml) vanilla extract.
- Stir well to combine.
- Let cool for 5 minutes on the counter.

Ready when: Smooth, glossy sauce with no lumps; cooled enough to handle the saucepan comfortably
Tip: Adding warm cream rather than cold prevents a temperature shock that can cause the caramel to seize.
Blend the smoothie
- Pour 1 cup (227 g) cold Greek yogurt, ½ cup (120 ml) cold heavy cream, ½ cup (120 ml) cold whole milk, and 1.5 teaspoons (7.5 ml) vanilla bean paste into a high-speed blender.
- Add ⅓ cup (100 ml) of the cooled caramel sauce.
- Reserve the remaining caramel for drizzling.
- Add 1 cup (150 g) ice cubes and blend on high for 45–60 seconds until smooth, creamy, and thick.
- The smoothie should be slushy but pourable.

Ready when: Smooth, creamy texture with no lumps or ice visible; pale tan color with caramel ribbons
Tip: Blend in two batches if your blender is small; overfilling prevents proper blending and can strain the motor.
Pour and garnish
- Pour the smoothie into two chilled 12–14 oz (350–400 ml) blender cups or tall glasses.
- Drizzle the remaining caramel sauce over the top in a crosshatch pattern, then add a light sprinkle of sea salt.
- Serve immediately with a thick spoon or straw.

Ready when: Visually appealing with caramel stripes and salt crystals on top
Tip: Chill your glasses in the freezer while blending to keep the smoothie cold longer.

Tips
- For a vegan version, use coconut yogurt, coconut cream, and oat milk, and use coconut sugar in the caramel for a richer flavor.
- If your caramel sauce is too thick, warm it gently or thin it with a splash of cream before adding to the blender.
- Toast a small amount of vanilla bean paste in a dry pan for 30 seconds before adding to the smoothie for extra depth.
- This smoothie is indulgent—serve it as a dessert drink rather than a breakfast smoothie, or pair it with fresh berries for balance.
Make ahead
You can prepare the caramel sauce up to 2 days ahead and store it in an airtight container in the refrigerator. Warm it gently before adding to the smoothie, or use it cold for a thicker result.
Storage & reheating
Best served fresh, but store leftover smoothie (without ice) in an airtight container in the refrigerator for up to 1 day. The texture will become thinner as the ice melts. Caramel sauce keeps refrigerated in an airtight container for up to 5 days.
Substitutions
- vanilla bean paste → 1 teaspoon vanilla extract or the seeds scraped from ½ vanilla bean. Vanilla extract is slightly less rich; vanilla bean seeds deliver more speckle and intensity.
- Greek yogurt, plain, full-fat → 1 cup (240 ml) heavy cream or crème fraîche. Will be richer and less tangy; reduce added cream to ¼ cup (60 ml) to maintain body.
- heavy cream → whole milk or oat milk. Will be lighter; the smoothie will be less creamy but still delicious.
- ice cubes → 1 cup (227 g) frozen Greek yogurt or ½ cup (120 ml) sweetened condensed milk chilled. Frozen yogurt keeps the smoothie cold and adds creaminess; condensed milk adds sweetness.
