Before you start
  • Plan on about 3 hours from start to serving: the salad needs at least 2 hours in the fridge for the flavors to meld.
  • Cut the potatoes into even ¾-inch (2 cm) cubes so they all cook at the same rate.
  • Fill a large bowl with ice and water before you cook the eggs so it is ready when they finish.
  • Choose a mayonnaise you love; it is the main flavor of the dressing.
  1. Cut the potatoes

    • Peel the potatoes and cut them into even ¾-inch (2 cm) cubes.
    • Drop the cubes into the large pot as you go, then add enough cold water to cover them by 1 inch (2.5 cm).

    Tip: Starting in cold, salted water lets the potatoes cook evenly from outside to center.

  2. Boil potatoes

    • Set the pot over high heat and bring to a boil, then reduce to medium so the water bubbles gently.
    • Cook, uncovered, 10–12 minutes after it boils, until a cube is easily pierced with a fork but still holds its shape.

  3. Drain and season warm

    • Drain the potatoes in the colander and let steam for 1 minute.

    • Drizzle with the 2 tbsp vinegar and sprinkle with ½ tsp of the 1 tsp salt for the dressing.

  6. Mix the dressing

  7. Fold it together

Make ahead

"Make the salad up to 24 hours ahead and keep it covered in the fridge. Add the sliced egg and paprika just before serving. Boiled potatoes and eggs can also be cooked and refrigerated separately a day ahead."

Storage & reheating

"Refrigerate in an airtight container up to 4 days. Do not leave out at room temperature more than 2 hours (1 hour if above 90°F / 32°C). Not recommended for freezing, as the potatoes turn watery and the mayonnaise separates. Serve cold; no reheating."

Substitutions
  • Yukon Gold potatoes → Red potatoes or russet potatoes. Red potatoes hold their shape better; russets give a softer, creamier, more broken-down salad.
  • sweet pickle relish → Finely chopped dill pickles plus 1 tsp sugar. Gives a similar tang and sweetness; use dill relish for a less sweet salad.
  • mayonnaise → ½ cup mayonnaise plus ¼ cup sour cream. Slightly tangier and lighter.
  • sweet or red onion → Thinly sliced scallions (green onions). Milder onion flavor.
