- Plan on a 5–6 quart (4.7–5.7 L) basket-style air fryer. Smaller models need to cook the fries in 3 batches.
- Choose sweet potatoes of similar thickness so the fries cut to a uniform size and cook evenly.
- The 30-minute cold water soak removes surface starch and is key to crispness, so don't skip it.
- Do not crowd the basket. Fries steam instead of crisp when piled deep.
Cut the fries
- Scrub the sweet potatoes well.
- Peel them if you like, or leave the skin on for more texture.
- Trim the ends, then cut each potato lengthwise into ¼-inch (6 mm) thick planks, and stack the planks and cut into ¼-inch (6 mm) sticks about 3 inches (7.5 cm) long.

Soak in cold water

Substitutions
- cornstarch → arrowroot powder or potato starch. Use the same amount, 2 tablespoons (16 g). Results are equally crisp.
- olive oil → avocado oil. Has a higher smoke point and a more neutral flavor.
- smoked or sweet paprika → chili powder or cajun seasoning. Use 1 teaspoon and reduce the salt slightly if the blend is salty.
- garlic powder → onion powder. Same amount for a slightly sweeter savory flavor.
