Corn and Tomato Garden Sauce

A bright, vegetable-forward pasta sauce that combines sweet corn and juicy tomatoes with aromatic garlic and basil. Steps

Before you start
  • Have all ingredients prepped before you start cooking
  • If using fresh corn, shuck and cut kernels from the cob
  • Tear basil by hand just before using to avoid bruising
  1. Sauté aromatics

    • Heat 2 tbsp (30 ml) olive oil in a medium 10-inch skillet over medium heat.
    • Once shimmering, add the diced onion and sauté for 4–5 minutes, stirring occasionally, until softened and beginning to turn translucent.
    • The onion should smell sweet and fragrant.

Ready when: Onion is softened and translucent

Tip: Don't brown the onion; you want it soft and sweet, not caramelized.

  2. Add garlic and corn

    • Stir in the minced garlic and cook for 30 seconds until fragrant.
    • Add the 2 cups (320 g) corn kernels and stir well to combine.
    • Cook for 1–2 minutes, letting the corn warm through and slightly release its natural sugars.

Ready when: Garlic is fragrant; corn is heated through

Tip: Don't skip this brief cooking—it brings out the corn's sweetness and removes any raw garlic bite.

  3. Add crushed tomatoes

    • Pour in the entire 28 oz (800 g) can of crushed tomatoes, including the juice.
    • Stir well to combine with the corn and onion mixture.
    • If using fresh cherry tomatoes, add them now along with ¼ tsp (0.5 g) red pepper flakes if desired.

Ready when: Sauce is well combined

Tip: Stir the canned tomatoes well before pouring; some of the best flavor settles at the bottom of the can.

  4. Simmer until flavors meld

    • Bring the sauce to a gentle simmer over medium heat.
    • Once simmering, reduce heat to medium-low and let the sauce bubble gently for 20–25 minutes, stirring occasionally.
    • The sauce should reduce slightly, the tomatoes will break down further, and the flavors will deepen and unite.

Ready when: Sauce is thickened slightly; flavors taste unified and deep

Tip: Simmer gently—aggressive boiling will cause the oil to separate and the tomatoes to lose their brightness.

  5. Finish with basil and seasoning

    • Remove the skillet from heat.
    • Stir in the ½ cup (12 g) fresh basil leaves (torn by hand just before adding).
    • Taste and season generously with kosher salt and freshly ground black pepper to your preference.
    • The sauce should taste vibrant, balanced, and slightly sweet from the corn.

Ready when: Basil is incorporated; sauce is seasoned to taste

Tip: Add basil off the heat to preserve its fresh color and delicate flavor. Taste before serving—you want a balance of sweet corn, bright acid from tomatoes, and herbaceous notes.

Good to know

Tips
  • This sauce is best served immediately, but tastes wonderful over fresh pasta, polenta, grilled chicken, or roasted vegetables.
  • For a creamier version, stir in 2–3 tbsp (30–45 ml) heavy cream or a splash of pasta cooking water just before serving to emulsify the sauce.
  • If the sauce tastes too acidic, add a pinch of sugar (¼ tsp) to balance it; if too sweet, add a squeeze of fresh lemon juice.
  • Don't overcook the basil—add it right at the end of cooking to preserve its bright color and fresh flavor.
Make ahead

Make the sauce up to 2 days ahead; store in an airtight container in the refrigerator. Reheat gently over medium-low heat, stirring occasionally. If the basil was added before storage, stir in fresh basil just before serving to restore brightness.

Storage & reheating

Room temperature: up to 2 hours. Refrigerator: up to 3 days in an airtight container. Freezer: up to 3 months in a freezer-safe container. Thaw overnight in the refrigerator and reheat gently on the stovetop over medium-low heat, stirring frequently. Add fresh basil after reheating.

Substitutions
  • fresh corn kernels (or frozen, thawed) → Frozen corn kernels (thawed and drained), or canned corn (drained and rinsed). Fresh is ideal for peak sweetness, but frozen works beautifully and is available year-round. Avoid canned corn with added sugar.
  • canned crushed tomatoes (San Marzano preferred) → 2 lbs (900 g) fresh ripe tomatoes, roughly chopped (best in late summer). If using fresh tomatoes, increase the simmer time to 30–35 minutes so they fully break down and the sauce thickens.
  • fresh basil leaves → Fresh mint leaves, or a combination of basil and oregano. Basil is traditional, but fresh mint adds a cool, unexpected note. Use the same amount if substituting.
  • yellow onion → 1 medium shallot, diced. Shallots provide a more delicate, slightly sweet onion flavor.
