Steps
Before you start
- Preheat oven to 425°F (220°C) with a large baking sheet inside for at least 10 minutes
- Measure all dry ingredients and spices in advance
- Have yogurt at room temperature if serving alongside
Mix dry ingredients
- In a large bowl, whisk together chickpea flour, all-purpose flour, curry powder, cumin, coriander, turmeric, salt, and black pepper.
- If using kashmiri chili powder, add it here.
- Create a well in the center.

Ready when: Dry mixture is evenly combined with no streaks
Tip: Whisk thoroughly so spices distribute evenly and there are no clumps
Make the dough
- Pour yogurt and water into the well.
- Stir with a whisk, gradually incorporating the dry mixture from the sides until a thick, sticky batter forms.
- The consistency should be thicker than pancake batter but pourable—like thick cake batter.
- Don't overmix; a few small lumps are fine.

Ready when: Batter is thick and homogeneous with no dry streaks
Tip: Overmixing develops gluten in the all-purpose flour, making the flatbread dense; mix just until combined
Fold in aromatics
- Gently fold in the diced onion and chopped cilantro until evenly distributed.
- If using nigella seeds, fold them in now.
- Let the batter rest at room temperature for 15 minutes so the chickpea flour fully hydrates and flavors meld.

Ready when: Batter looks slightly thicker and holds its shape better
Tip: Resting is important for chickpea flour; it absorbs liquid and produces a tender flatbread
Oil the baking sheetOven 425°F / 220°C
- Carefully remove the preheated baking sheet from the 425°F (220°C) oven.
- Brush or drizzle 1.5 tbsp (22 ml) of olive oil evenly across the hot surface.
- Tilt the pan to coat completely.

Ready when: Oil is shimmering and fully covers the pan
Tip: A hot, well-oiled surface creates a crispy, golden bottom; don't skip preheating
Pour first flatbreadOven 425°F / 220°C
- Working quickly, pour 1 cup (240 ml) of batter into the center of the oiled hot baking sheet.
- Using the back of a spoon or an offset spatula, gently spread it into a thin, even 8-inch round.
- Don't overspread—it will spread slightly on its own as it cooks.

Ready when: Batter is spread in a thin, even round about 8 inches in diameter
Tip: Work quickly so the oil stays hot. If batter sticks to your spoon, dip it in water
Bake until edges setOven 425°F / 220°C
- Place the baking sheet in the preheated 425°F (220°C) oven.
- Bake for 5–6 minutes until the edges are set and just beginning to turn golden and crispy, but the center is still slightly soft.

Ready when: Edges are golden, crispy, and slightly curled; center is cooked but still tender
Tip: Don't wait for the center to be completely firm—it will continue to cook and firm as it cools
Flip and finishOven 425°F / 220°C
- Carefully flip the flatbread with a spatula.
- If it sticks, gently loosen it with the spatula first.
- Drizzle about 0.5 tbsp (7 ml) of olive oil on the cooked side.
- Bake for another 3–4 minutes until the second side is golden and the flatbread is cooked through.

Ready when: Both sides are golden brown; flatbread is firm and makes a slight crackle when squeezed gently
Tip: If the flatbread tears when flipping, it hasn't cooked long enough on the first side—let it bake 1 more minute before trying again
Transfer and cool slightly
- Transfer the finished flatbread to a cutting board or serving plate.
- It will continue to crisp as it cools for 2–3 minutes.

Repeat for remaining flatbreadsOven 425°F / 220°C
- Wipe the baking sheet clean or add more oil as needed.
- Repeat steps 4–7 with the remaining batter, working in batches of one flatbread at a time.
- You should have enough batter for 4 flatbreads total.
- Keep finished flatbreads warm on a plate covered loosely with foil while you cook the rest.

Ready when: All 4 flatbreads are cooked through and golden brown
Tip: If flatbreads cool and soften, you can briefly return them to a 350°F (175°C) oven for 2 minutes to re-crisp
Serve warm

- They can also be topped with chutney, drizzled with hot oil, or served with curried vegetables.

Good to know
Tips
- Chickpea flour is naturally nutty and earthy; don't skip the resting time, as it needs time to fully absorb the yogurt and water for a tender result. Underhydrated batter will produce a dense, crumbly flatbread.
- A hot baking sheet is essential for a crispy, golden bottom. Preheat for at least 10 minutes. If your oven doesn't hold heat well, preheat for 15 minutes.
- The batter is quite thick and is meant to be spread, not poured thinly like a crêpe. An 8-inch round is the right thickness for a tender interior with crispy edges.
- If nigella seeds are not available, omit them or use black sesame seeds for visual interest and a subtle nutty flavor.
Make ahead
The batter can be made up to 4 hours ahead and stored in an airtight container in the refrigerator. Stir gently before using; if the batter is very thick, whisk in 1–2 tbsp of water to return it to the correct consistency. Bake the flatbreads fresh just before serving.
Storage & reheating
Cooked flatbreads keep in an airtight container at room temperature for up to 2 days. Reheat in a dry skillet over medium heat for 1–2 minutes per side, or wrapped in foil in a 350°F (175°C) oven for 5 minutes to warm through and re-crisp. Freeze cooked flatbreads for up to 1 month; thaw at room temperature and reheat as above.
Substitutions
- plain yogurt → Greek yogurt or labneh (thinned with a little water to reach 180 ml liquid). Greek yogurt is thicker and tangier; thin it slightly for proper batter consistency
- all-purpose flour → rice flour or a mix of chickpea flour and rice flour (use 2 cups total chickpea flour and rice flour). Rice flour makes the flatbread slightly crisper and lighter; may need 1–2 tbsp less water
- curry powder → garam masala plus 1 tsp of ground fenugreek. Garam masala is warmer and more complex; add the fenugreek for an earthy, slightly bitter depth
- fresh cilantro → mint, parsley, or scallions (green parts only). Each adds a different flavor; mint is cooling, parsley is fresh and mild, and scallions add bite
