Steps
Before you start
- Remove cream cheese from the fridge 30 minutes ahead so it's soft and blendable
- Have all spices measured before you start—the charring happens quickly
- Preheat a skillet (cast iron works best) over medium-high heat while you prep
Toast the almonds
- Place the raw almonds in the hot skillet over medium-high heat.
- Toast for 2–3 minutes, stirring frequently with a wooden spoon, until fragrant and the skins begin to darken.
- Transfer to a small bowl and set aside.

Ready when: Almonds smell nutty and skins darken slightly
Tip: Stir constantly; they char quickly and can burn.
Char the apricots
- Add the dried apricots to the same skillet (no need to wipe it).
- Spread them in a single layer and let them sit undisturbed for 1–2 minutes until the bottoms caramelize and blacken slightly.
- Stir and cook for another 1–2 minutes, moving them often, so they char unevenly without burning all over.
- They should smell sweet and slightly smoky, with some dark patches.
- Transfer to the bowl with the almonds.

Ready when: Apricots have dark caramelized spots and smell sweet and smoky
Tip: A brief char develops depth; avoid heavy burning, which tastes bitter.
Cool briefly
- Let the charred apricots and almonds cool in the bowl for about 5 minutes so they're safe to blend and won't overheat the cream cheese.
Blend the dip base
- Transfer the cooled apricots and almonds to a food processor.
- Pulse 8–10 times until the mixture is roughly chopped but not completely smooth; you want some texture.
- Add the softened cream cheese, honey, rose water, ground cardamom, and ground cinnamon.
- Blend for 30–45 seconds, scraping down the sides as needed, until the dip is creamy and the fruit and nuts are finely combined but still slightly chunky.

Ready when: Dip is creamy with small flecks of fruit and nuts; swirls smoothly in the processor
Tip: Don't overblend—a little texture is better than a paste. Stop and check consistency often.
Season to taste
- Transfer the dip to a serving bowl.
- Taste it and add a pinch of sea salt and a small grind of black pepper.
- Stir gently to combine.
- Adjust rose water (a little more for floral intensity) or honey (for sweetness) if desired.

Ready when: Flavors are balanced—not too sweet, with a subtle floral note and warm spice
Tip: Rose water is potent; add sparingly and taste before adding more.
Garnish and serve
- Top the dip with pomegranate seeds and chopped pistachios if using.
- Drizzle with a small amount of olive oil.
- Serve at room temperature with pita bread, crackers, or fresh vegetables.

Tip: Garnish just before serving so pomegranate seeds stay juicy and pistachios stay crisp.
Good to know
Tips
- Cast iron retains heat and gives the best char; if you don't have it, use a heavy stainless-steel or nonstick skillet.
- Unsulfured dried apricots are paler in color and have a cleaner, natural taste. They also char more visibly than sulfured apricots.
- For a gathering, set out small pita wedges, cucumber slices, and radishes alongside the dip. The cool vegetables balance the warmth and sweetness of the dip.
- This dip is naturally lower in sugar than store-bought versions because the charring and spices do most of the flavor work.
Make ahead
Yes. Make the dip up to 2 days ahead (before garnish), cover it tightly, and refrigerate. Bring to room temperature for 20 minutes before serving, then add fresh pomegranate seeds and pistachios on top.
Storage & reheating
Room temperature: up to 2 hours. Refrigerator (covered): up to 3 days. Freezer (in an airtight container): up to 3 weeks. Thaw in the fridge overnight and bring to room temperature before serving. Do not refreeze.
Substitutions
- cream cheese, softened → mascarpone or Greek yogurt (⅔ cup / 160 ml of yogurt for a tangier dip). Greek yogurt makes the dip lighter and slightly tart; mascarpone is richer and silkier. Both work well.
- rose water, edible → orange blossom water or omit entirely for a spice-forward dip. Orange blossom water is slightly less intense; if omitting, add 1 tbsp of freshly grated orange zest for brightness.
- raw almonds, skin on → walnuts, pistachios, or a mix of nuts. Walnuts add earthiness; pistachios add color and a slightly sweet note. Toast the same way.
- honey → maple syrup or date syrup. Date syrup is traditional in Middle Eastern cooking and pairs beautifully with apricots; use the same amount.
