Carob Pod & Date Syrup Drink
A warm, naturally sweetened Levantine-inspired drink blending roasted carob powder with date syrup, milk, and warm spices. Rich in flavor and comfort, this beverage celebrates the region's tradition of using carob—historically called "poor man's chocolate"—as a wholesome, caffeine-free alternative. The date syrup adds depth and complexity to the earthy carob notes.

Steps
Before you start
- Measure all ingredients before you start—the drink comes together quickly on the stovetop
- Use quality carob powder (not instant carob drink mix, which contains added sugar)
- Have mugs warming by pouring hot water into them first, then discarding
Combine carob and water
- Pour the water into a medium saucepan (2-quart / 2 L) and bring to a gentle boil over medium-high heat.
- While the water heats, whisk the carob powder in a small bowl with 2 tablespoons (30 ml) cold water to form a smooth paste, breaking up any lumps.
- Once the water boils, slowly pour the carob paste into the saucepan while whisking constantly to prevent lumps from forming.
- Stir until fully incorporated.

Ready when: Carob mixture is smooth and fully dissolved with no visible lumps
Tip: Whisking the carob powder with cold water first prevents clumping, which is key to a silky texture.
Add date syrup
- Reduce the heat to medium.
- Stir in the date syrup until fully incorporated, about 1 minute of steady stirring.
- The mixture should be smooth and slightly darker.

Ready when: Date syrup is fully dissolved and the mixture is uniform in color
Pour in milk and heat gently
- Slowly pour in the milk while stirring continuously.
- Bring the mixture to just below a simmer—you should see small, slow bubbles forming around the edges, but not a rolling boil.
- This takes about 3–4 minutes.
- Avoid boiling, which can cause the milk to scald and develop a cooked flavor.

Ready when: Tiny bubbles form around the edges; steam rises from the surface but no rolling boil
Tip: Keep stirring to ensure even heat distribution and to prevent a skin from forming on top.
Season and finish
- Add the cinnamon, cardamom (if using), and a pinch of sea salt.
- Whisk for about 30 seconds to distribute the spices evenly.
- Taste and adjust sweetness with more date syrup if desired, or spice with a bit more cinnamon.
- Remove from heat immediately.

Ready when: Spices are evenly distributed with no visible particles floating on top
Tip: Add salt sparingly—it enhances the carob and date flavors without making the drink taste salty.
Strain (optional) and serve
- For a silkier texture, pour the drink through a fine-mesh sieve into a heatproof pitcher, pressing gently with the back of a spoon to extract all liquid (this removes any fine carob particles).
- Divide among four warm mugs and serve immediately while steaming.

Tip: Straining is optional but recommended if you prefer a completely smooth drink. Without straining, you'll have a slightly thicker, more rustic texture.
Good to know
Tips
- For extra richness, add 1 tablespoon (15 ml) of tahini or almond butter along with the milk. Whisk well to emulsify.
- Carob powder can settle at the bottom of mugs; give the drink a final stir before drinking to resuspend any particles.
- This drink is naturally caffeine-free, making it a perfect evening beverage or for anyone avoiding caffeine.
- If your date syrup is very thick or crystallized, warm it slightly before adding to the hot carob mixture for easier stirring.
Storage & reheating
Serve immediately for best texture and warmth. Leftovers can be refrigerated in an airtight container for up to 2 days. Reheat gently in a saucepan over low heat on the stovetop, stirring frequently, until warmed through (do not boil). The drink will separate slightly when chilled; stir well during reheating to recombine. Do not freeze.
Substitutions
- whole milk → unsweetened almond milk, oat milk, or coconut milk. Use a 1:1 ratio. The drink will be slightly less creamy with plant-based milk but equally delicious. Stir well to prevent separation.
- date syrup → honey or maple syrup. Use the same amount (¼ cup / 80 ml). The flavor will be slightly different but equally sweet and natural.
- ground cinnamon → ground ginger or a pinch of nutmeg. Use ¼ teaspoon (0.5 g). Ginger adds spice; nutmeg adds warmth and nuttiness.
- roasted carob powder → raw carob powder. Roasted carob has a richer, deeper flavor, but raw carob will work. Use the same amount; the drink may taste slightly lighter and less chocolate-like.
