Steps
Before you start
- Preheat your panini press or skillet to medium-high heat
- Drain the sardine can well, discarding liquid and any loose bones
- Have all fillings prepped and within arm's reach before assembly
Zest and juice the lemon
- Zest the lemon into a small bowl, then juice it.
- You need about 1 tsp zest and 2 tbsp juice.
- Set both aside.

Ready when: Lemon zest is bright yellow and finely grated; juice is extracted
Tip: Use a microplane zester for finest texture, or a vegetable peeler followed by mincing
Combine sardines with herbs and lemon
- In a small bowl, gently toss the drained sardines with the chopped parsley, lemon zest, 1 tbsp lemon juice, a pinch of salt, and red pepper flakes if using.
- Mix lightly to avoid breaking up the fish.
- Taste and adjust seasoning with salt and pepper.

Ready when: Sardines are coated evenly with herbs and lemon; no lumps of parsley
Tip: Don't over-mix—keep sardine pieces intact for better texture in the finished panini
Assemble the panini
- Place both ciabatta halves on a cutting board, cut-side up.
- Brush the bottom half of each piece lightly with olive oil.
- Layer on the bottom half: half of the white cheddar slices, then half of the sardine-lemon mixture, then the remaining cheddar.
- Drizzle the remaining 1 tsp lemon juice over the top layer.
- Top with the other ciabatta half, cut-side down, and press gently.

Ready when: Both panini are stacked, bread halves are together, and cheese is sandwiched between layers
Tip: Build on the bottom half first so the top doesn't slide; cheese on both sides of the sardines keeps everything in place
Butter and grill
- If using a panini press: brush the top and bottom of each assembled sandwich very lightly with softened butter.
- Place both on the press, close the lid, and grill for 3–4 minutes until the bread is golden and crispy and the cheese is melted (you'll see a little ooze at the edges).
- If using a skillet: butter the outside of the bread lightly, place one panini in the skillet over medium-high heat, press gently with a flat spatula for 2 minutes until the bottom is golden, flip, and press again for another 2 minutes.
- Repeat with the second panini.

Ready when: Bread is golden brown and crispy on both sides; cheese is melted (visible at the edges); interior is warm to the touch
Tip: Don't press too hard or too long or the bread will compress and become dense—light pressure for crust, then let heat do the work
Rest and serve
- Transfer the panini to a cutting board and let rest for 1 minute to allow the cheese to set slightly.
- Cut each panini in half on the diagonal if desired, and serve immediately.

Good to know
Tips
- Choose canned sardines packed in olive oil, not water or tomato sauce, for the best flavor and texture
- Drain the sardine can thoroughly over a small sieve and discard the liquid to prevent a soggy sandwich
- If your bread is very thick, carefully slice off a thin layer from the cut side to make assembly easier without creating a lopsided sandwich
- For extra creaminess, add a thin spread of good-quality mayonnaise or a touch of Dijon mustard to the bread before layering
Storage & reheating
These panini are best eaten fresh. If you have leftovers, wrap in foil and store in the refrigerator for up to 1 day. Reheat gently in a 300°F (150°C) oven for 5–7 minutes, wrapped in foil, to warm through and restore some crispness to the crust. Do not freeze.
Substitutions
- ciabatta bread → focaccia or sturdy sourdough. Choose bread with an open crumb structure that can handle the moisture from the sardines and lemon without becoming soggy
- white sharp cheddar cheese → aged gouda or smoked provolone. Both have enough character to stand up to the briny sardines; avoid mild cheeses that will disappear
- fresh flat-leaf parsley → fresh dill or a mix of parsley and mint. Dill is classic with fish; mint adds brightness. Use the same amount
- canned sardines in olive oil → canned or jarred anchovies, or smoked mackerel. Adjust lemon juice slightly if using a milder fish; anchovies may need less salt overall
