Shrimp and Garlic Aioli Panini
Succulent grilled shrimp tossed with fresh herbs, layered with peppery arugula and silky garlic aioli on crusty ciabatta, then griddled until the bread is golden and crispy. A quick, elegant Mediterranean meal ready in under 30 minutes.
Steps
Before you start
- Bring the egg yolk to room temperature for proper aioli emulsification—this takes about 15 minutes out of the fridge
- Pat the shrimp completely dry with paper towels right before cooking for better searing
- Preheat your panini press or griddle to medium-high heat while you prepare ingredients
Make the garlic aioli
- Place the minced garlic in a small bowl and mash it with the back of a spoon to a smooth paste (or use a mortar and pestle).
- Add the egg yolk and lemon juice to the garlic, then whisk together with a fork until well combined.
- Begin adding the olive oil extremely slowly—just a few drops at a time—while whisking constantly and vigorously.
- This slow incorporation is critical for emulsification.
- As you whisk, the mixture will thicken and lighten in color, becoming pale and creamy.
- Once it is noticeably thick and creamy (after about 1/4 cup of oil is incorporated), add the remaining oil in a thinner, slower stream while continuing to whisk.
- The finished aioli should be thick, pale, and hold soft peaks when you lift the whisk.
- Season to taste with salt and white pepper.
- If the aioli becomes too thick to whisk, thin it by whisking in 1 teaspoon of warm water.

Ready when: Mixture is thick, pale, and creamy; holds soft peaks when whisked
Tip: Add oil drop by drop at the start—rushing this step causes the emulsion to break, resulting in curdled mixture instead of creamy aioli. If it breaks, start with a fresh egg yolk and slowly whisk in the broken mixture until it re-emulsifies.
Sear the shrimp
- Heat the olive oil in a large skillet over medium-high heat until shimmering and just beginning to smoke, about 1–2 minutes.
- Add the minced garlic and cook, stirring, for about 30 seconds until fragrant.
- Add the shrimp all at once to the hot skillet.
- Season with salt, black pepper, and red pepper flakes.
- Do not stir for 2–3 minutes; let the shrimp sear undisturbed on the first side and turn opaque pink on top.
- Stir once, and cook for another 1–2 minutes, stirring occasionally, until all shrimp are opaque throughout, firm, and no longer translucent (internal temperature of 145°F / 63°C).
- Remove from heat immediately, squeeze the lemon juice over the shrimp, and fold in the fresh parsley.
- Let rest in the warm pan for 2 minutes to allow flavors to meld.

Ready when: Shrimp are opaque throughout, firm to the touch, and no longer translucent
Tip: Avoid stirring immediately—let the shrimp develop a flavorful golden sear on the first side without moving them.
Assemble the sandwiches
- Spread about 1.5–2 tablespoons of the garlic aioli on the cut side of each ciabatta roll bottom.
- Layer half the fresh arugula on each bottom half, dividing it evenly.
- Spoon the cooked shrimp from Step 2 (with any pan juices) equally between the two sandwiches, distributing evenly over the arugula.
- Top the shrimp with the remaining arugula, pressing gently so the ingredients nestle together.
- Place the ciabatta top on each sandwich, pressing gently to compress slightly.

Ready when: Panini are fully assembled with all components layered
Tip: Divide the arugula between the bottom and top layers so it won't slip out when biting—this leafy framing keeps fillings contained.
Grill until golden and crispyOven 375°F / 190°C
- Spread a thin, even layer of softened butter on the outside of each assembled panini (on both top and bottom).
- Place the buttered panini on your preheated panini press set to medium-high (375°F / 190°C), and gently close it.
- Grill for 3–4 minutes until the bread is deep golden brown and crispy and the interior is warm and the filling is heated through.
- Alternatively, if using a large skillet or griddle over medium-high heat, place the buttered panini on the hot surface, pressing gently with a spatula to maintain contact.
- Grill for 2–3 minutes on the first side until golden, then flip and grill the second side for another 1–2 minutes until deep golden brown and crispy.
- If the bread browns too quickly before the interior warms, reduce heat to medium and add 30–60 seconds more cooking time per side.
- Transfer to a plate and serve immediately while hot and crispy.

Ready when: Bread is deep golden brown and crispy on the outside; interior is warm; filling is heated through
Tip: If you lack a panini press, use a second heavy cast-iron skillet or griddle placed on top of the sandwich while it cooks to simulate even pressing and ensure even grilling without flipping.
Good to know
Tips
- Resist the urge to stir the shrimp immediately—let them sit undisturbed for the first 2–3 minutes to develop a flavorful golden sear on the underside.
- Work slowly when adding oil to the egg yolk for aioli—hurrying causes the emulsion to break. If this happens, start with a fresh egg yolk in a clean bowl and very slowly whisk in the broken mixture until it re-emulsifies.
- Preheat your panini press or skillet thoroughly—a properly hot surface ensures crispy bread, even grilling, and properly warm fillings inside.
- For a flavor boost, add 1/4 teaspoon smoked paprika or Old Bay seasoning to the cooked shrimp just after removing from heat, right before adding the parsley.
Make ahead
The garlic aioli can be made up to 2 days ahead and stored in an airtight container in the refrigerator. Bring it to room temperature or thin with a touch of water before using. The shrimp can be seared up to 2 hours ahead and refrigerated, then gently reheated in a skillet over low heat before assembling. Assemble the panini no more than 10–15 minutes before grilling to prevent the bread from absorbing moisture and becoming soggy.
Storage & reheating
Finished panini are best consumed immediately. Leftover panini do not keep well due to soggy bread. Refrigerate any remaining cooked shrimp and aioli in separate airtight containers for up to 2 days. To reheat shrimp, place in a skillet over low heat with a splash of water or lemon juice, stirring gently until warm through (1–2 minutes). Do not reheat in the microwave, as shrimp can become rubbery.
Substitutions
- garlic cloves → Use 1 cup (240 ml) of high-quality store-bought mayonnaise mixed with 2 minced garlic cloves and 1 tablespoon fresh lemon juice instead of making aioli from scratch. This shortcut saves 8 minutes. Store-bought mayo is made with pasteurized eggs, addressing food-safety concerns about raw yolk.
- fresh arugula → Fresh spinach, watercress, or mixed greens. Arugula adds peppery bite, but milder greens work well if you prefer less sharpness.
- ciabatta rolls → Focaccia, Italian bread rolls, or sourdough. Any sturdy artisan bread works; avoid soft white bread, which will fall apart under the panini press.
- unsalted butter → Olive oil (use 1 tablespoon brushed onto bread instead). For a lighter option or to enhance Mediterranean flavor, brush softened olive oil on the bread instead of butter before grilling.
