Steps
Before you start
- Use beets that are already cooked (roasted, boiled or steamed) and fully cooled; vacuum-packed plain cooked beets work well.
- Freeze the banana slices and use frozen raspberries for a thick, cold smoothie with no ice needed.
- Wear an apron: beet juice stains clothing and countertops, so wipe spills right away.
- Peel the ginger with the edge of a spoon, then grate it finely so no fibrous strands remain.
Prep the ginger
- Scrape the skin from a piece of fresh ginger with the edge of a spoon.
- Finely grate on a microplane until you have 1 tablespoon (6 g) of pulp.
- Squeeze the lemon and strain out the seeds to get 1 teaspoon (5 ml) juice.

Ready when: Ginger is a moist, fine pulp with no long fibers.
Tip: Grate across the grain of the ginger to cut through fibers.
Prep the beets
- Cut the cooled cooked beets into ½-inch (1 cm) cubes and measure 1 cup (150 g).
- Smaller cubes blend more smoothly and are easier on the blender motor.

Ready when: Cubes are uniform and the beets feel fork-tender, not firm or raw.
Tip: Warm beets will melt the frozen fruit and make a thin smoothie, so make sure they are fully cooled.
Load the blender
- Pour the orange juice into the blender first, then add the yogurt, grated ginger, lemon juice and honey if using.
- Top with the beet cubes, frozen banana slices and frozen raspberries.

Ready when: Liquids are on the bottom and frozen items on top.
Tip: Liquid first helps the blades pull the frozen fruit down and prevents air pockets.
Blend until smooth
- Secure the lid.
- Start on low speed for 10 seconds, then increase to high and blend for 45–60 seconds, stopping once to scrape down the sides if needed.

Ready when: Smoothie is a uniform deep magenta, thick and pourable, with no visible beet flecks or raspberry seed clumps.
Tip: If the blender stalls, add 2 tablespoons of orange juice at a time to loosen it.
Taste and adjust
- Taste the smoothie.
- Add the honey if it needs more sweetness, or another ½ teaspoon of lemon juice if the beet flavor tastes too earthy.
- Blend for 10 seconds more to mix.

Ready when: Flavor is balanced: sweet, tangy and gently spicy from the ginger.
Serve right away
- Divide the smoothie between two glasses, about 12 oz (350 ml) each.
- Serve immediately with a straw while cold and thick.

Ready when: Smoothie holds a thick, spoonable texture and pours slowly.
Tip: Rinse the blender jar right away; dried beet pigment is hard to remove.
Good to know
Tips
- Use frozen fruit rather than ice so the smoothie stays thick without being watered down.
- Roasted beets taste sweeter and more concentrated than boiled ones, which gives a better flavor.
- Start with 1 teaspoon of grated ginger if you are sensitive to heat, and increase next time.
- For a smoother texture without raspberry seeds, strain the blended smoothie through a fine-mesh sieve.
Make ahead
Peel, cube and chill the cooked beets up to 3 days ahead. Portion the banana, raspberries and beets into freezer bags up to 1 month ahead so you only need to add the liquids, yogurt and ginger.
Storage & reheating
Best enjoyed immediately. Refrigerate in a sealed jar filled to the top for up to 24 hours; shake or stir well before drinking. Freeze in ice cube trays or jars for up to 2 months; thaw in the fridge overnight or re-blend the cubes with a splash of orange juice. Not recommended to keep at room temperature for more than 30 minutes.
Substitutions
- raspberries → frozen strawberries or blackberries. Same quantity; strawberries make it sweeter, blackberries slightly more tart.
- plain Greek yogurt → unsweetened coconut or soy yogurt. Makes the smoothie dairy-free with a similar creamy body.
- honey → maple syrup. Use the same amount; also works for a vegan version.
- orange juice → clementine or tangerine juice. Use 1 cup (240 ml); flavor is slightly sweeter.
