Steps
Before you start
- Preheat your air fryer to 375°F (190°C) for 3 minutes
- Drain and thoroughly dry the canned chickpeas—pat them very dry with paper towels to ensure crispiness
- Have all ingredients measured and ready to go
Mix the coating
- In a medium bowl, whisk together the melted butter, maple syrup, sea salt, black pepper, cinnamon, and cayenne pepper (if using) until smooth and well combined.
- The mixture should smell fragrant and warm.

Ready when: Mixture is smooth and spices are evenly distributed
Tip: If your maple syrup is thick or cold, warm it gently for 10 seconds in the microwave to make it easier to whisk with the butter.
Coat chickpeas and pecans
- In a second medium bowl, combine the dried chickpeas and pecan halves.
- Pour the butter-maple mixture over them and toss gently but thoroughly with a wooden spoon, making sure every piece is well coated.
- It's okay if some coating pools at the bottom—you'll be shaking the air fryer basket to redistribute it.

Ready when: All chickpeas and pecans are evenly coated with the sticky glaze
Tip: Avoid breaking the pecans while tossing; the halves should stay mostly intact for a better presentation.
Air fry until crispyOven 375°F / 190°C
- Transfer the coated chickpeas and pecans to the air fryer basket in a single layer (working in batches if needed).
- Air fry at 375°F (190°C) for 10 minutes, shaking the basket or stirring with a spatula halfway through (at the 5-minute mark) to ensure even cooking and prevent sticking.
- The chickpeas should be golden and very crispy, and the pecans should be toasted.

Ready when: Chickpeas are deep golden brown and crispy when bitten; pecans are fragrant and toasted
Tip: If your air fryer is smaller, work in two batches rather than overcrowding—overcrowding prevents crisping and even browning.
Cool and crisp up
- Pour the hot chickpeas and pecans onto a clean plate or parchment paper.
- They will continue to crisp as they cool for 2–3 minutes.
- Gently stir occasionally to prevent them from sticking together and to allow steam to escape.

Ready when: Mixture is no longer steaming and pecans and chickpeas separate easily
Tip: Don't skip this cooling step—the glaze hardens and the texture becomes much crunchier.
Good to know
Tips
- Drying the chickpeas thoroughly is the single most important step for crispiness—wet chickpeas will steam rather than roast, no matter how long you cook them.
- If you don't have an air fryer, roast on a lined baking sheet at 375°F (190°C) for 12–15 minutes, stirring every 4 minutes, until golden and crispy.
- Make these just before your party or event; they're best within 1–2 hours of cooking when the texture is at its crunchiest.
- For a spicier version, increase the cayenne to ½ teaspoon or add a pinch of smoked paprika to the glaze.
Make ahead
You can prepare the coating mixture and dry the chickpeas up to 1 day ahead. Store them separately in airtight containers. Assemble and air fry just before serving for maximum crispiness.
Storage & reheating
Store in an airtight container at room temperature for up to 4 days. They will lose some crispness over time but can be refreshed in the air fryer at 350°F (175°C) for 3–4 minutes. Do not refrigerate or freeze, as moisture will soften the coating.
Substitutions
- raw pecans → raw almonds, halved, or whole cashews. These have a slightly different flavor but will crisp up beautifully. Watch for slightly faster toasting with almonds.
- pure maple syrup → honey or agave nectar. Honey will brown darker and caramelize faster; agave is milder. Both work, but reduce heat to 350°F (175°C) if using honey to prevent burning.
- ground cinnamon → pumpkin pie spice, smoked paprika, or cumin. Pumpkin pie spice adds fall warmth; smoked paprika adds a savory twist; cumin gives an earthier note.
- unsalted butter → olive oil or coconut oil. Use the same amount. Extra virgin olive oil will taste more savory; coconut oil adds a subtle sweetness.
