Steps
Before you start
- Preheat your air fryer to 350°F (175°C) for 3 minutes
- Drain and thoroughly dry the chickpeas—pat them very dry with paper towels so they get crispy
- Have all seasonings measured out before cooking
Toss chickpeas with oil and spices
- In a medium bowl, combine the dried chickpeas, olive oil, garlic powder, fresh rosemary, sea salt, and black pepper.
- Toss until every chickpea is lightly coated and the seasonings are evenly distributed.

Ready when: Chickpeas are evenly coated with the oil and seasonings, with no dry spots
Tip: Don't skip drying the chickpeas—any moisture will make them soft, not crispy
Air fry until golden and crunchyOven 350°F / 175°C
- Spread the chickpeas in a single layer in your air fryer basket (they should be in mostly one layer, though some overlap is fine).
- Air fry at 350°F (175°C) for 15–18 minutes, shaking the basket halfway through (at the 8-minute mark), until the chickpeas are golden brown and sound crispy when stirred.

Ready when: Chickpeas are deep golden brown, feel hard and crunchy when bitten, and make a crackling sound when stirred
Tip: If your chickpeas are large or you've filled the basket very full, they may need 18–20 minutes. Start checking at 15 minutes—overcooked ones turn dark brown and bitter
Finish with Parmesan and optional heat
- Transfer the hot chickpeas to a clean bowl.
- While they are still warm, immediately toss with the finely grated Parmesan cheese.
- If you like a little heat, add the red pepper flakes and toss again.

Ready when: Parmesan is melted and clinging to the warm chickpeas
Tip: Add the Parmesan while the chickpeas are hot so the cheese sticks to them; if you wait until they cool, it will fall to the bottom
Cool slightly before serving
- Let the chickpeas cool for 3–5 minutes on the counter or in the bowl—they will crisp up even more as they cool.
- Taste and adjust salt if needed.

Ready when: Chickpeas have cooled to warm or room temperature and are fully crunchy
Tip: Don't skip this rest—it's when they develop maximum crunch
Good to know
Tips
- For maximum crunch, make sure every chickpea is completely dry before seasoning. Wet chickpeas will steam rather than crisp up. If you rinse canned chickpeas and they're very wet, spread them on paper towels and let them air-dry for 5 minutes
- Air fryer models vary in power and heat distribution. If your chickpeas aren't crunchy after 18 minutes, give them another 2–3 minutes, but watch carefully so they don't burn. Lighter-colored chickpeas may need less time than darker varieties
- For a crowd, double this recipe, but air fry in two batches rather than packing the basket too full—crowding prevents air circulation and results in uneven cooking and soft spots
- These chickpeas are best served warm or at room temperature the same day. Store any leftovers in an airtight container to protect them from humidity, and reheat briefly in the air fryer before serving to restore crunch
Make ahead
Yes—roast the chickpeas with garlic powder, rosemary, salt, and pepper up to 2 days ahead and store in an airtight container at room temperature. Add the Parmesan (and red pepper flakes, if using) fresh just before serving so the cheese remains flavorful and doesn't absorb moisture from storage
Storage & reheating
Room temperature (in an airtight container) for up to 3 days; they stay crunchy. Do not refrigerate, as condensation will soften them. Reheat in the air fryer at 300°F (150°C) for 2–3 minutes if they soften slightly from humidity
Substitutions
- fresh rosemary, finely chopped → 1 teaspoon (0.3 g) dried rosemary or 1.5 teaspoons (1.5 g) dried Italian seasoning. Use half as much of the dried herb, as it is more concentrated. Dried oregano also works well for an Italian flavor
- finely grated Parmesan cheese → Pecorino Romano cheese (sharp and aged) or a combination of half Parmesan and half finely grated aged Cheddar. Pecorino will give a saltier, more peppery bite; stay with finely grated for even coating
- canned chickpeas, drained and rinsed → Cooked dried chickpeas (1.5 cups/370 g cooked), drained and thoroughly dried. Cook dried chickpeas until tender but not mushy, then dry very thoroughly. They may take 2–3 extra minutes in the air fryer
- extra-virgin olive oil → Avocado oil or refined grapeseed oil. Use oils with a higher smoke point if you prefer to increase the air fryer temperature to 375°F (190°C) for even crisper results, though 350°F is ideal for even cooking
