About Flatbreads
Flatbreads are made from a simple dough of flour, water and salt. Some use yeast, and some use yogurt or baking powder to puff up fast. The dough is rolled thin and cooked in a hot skillet or oven until it blisters and turns soft and pliable.
Unlike pizza, flatbreads usually have no sauce or heavy toppings. They are made to go with a meal, for dipping, scooping or wrapping. They also differ from manakish, which is baked with a topping already spread on it. A flatbread is the plain, flexible bread on your table.
Questions folks ask
Do flatbreads need yeast?
Not always. Many quick flatbreads use yogurt, baking powder or just flour and water.
How do I keep flatbread soft?
Wrap each one in a clean towel as it comes off the heat. The steam keeps it tender.
Can I make flatbread without an oven?
Yes. A hot skillet or griddle on the stovetop works well.
Kitchen tips
- Roll the dough thin and even so it cooks through quickly.
- Use a dry, very hot pan and cook for just a minute or two per side.
- Stack warm flatbreads in a clean towel to keep them soft.
- Rest the dough for a short while so it rolls out easily.
- Brush with a little butter or oil right after cooking.
