About Rolls & Buns
Rolls and buns are small portions of bread dough, shaped by hand and baked together. Milk, butter and a little sugar often make them extra soft. They can be plain, sprinkled with seeds, or filled and glazed.
They use much of the same dough as Yeast Breads, but they bake faster and are easy to share. Unlike Flatbread Doughs, they puff up tall. Unlike Sourdough or Quick Breads, most rely on yeast and a short rise.
Questions folks ask
How do I make rolls extra soft?
Use milk and butter in the dough, and do not add too much flour. Brush with butter right after baking.
Can I make rolls ahead of time?
Yes. Shape them and chill overnight, then bake in the morning. You can also freeze baked rolls.
What is the difference between rolls and buns?
They are very close. Buns are often larger or sweeter, and rolls are usually served with dinner.
Kitchen tips
- Weigh the pieces of dough so the rolls bake evenly.
- Place rolls close together in the pan for soft sides.
- Brush with melted butter or egg wash for a shiny top.
- Cover and let them rise until puffy before baking.
- Reheat day-old rolls wrapped in foil in a warm oven.
