Steps
Before you start
- Chill the milk and yogurt ahead if you prefer a colder final dish
- Prepare this recipe in the evening for a quick breakfast the next morning
- Have all ingredients measured and ready for assembly
- Gather optional toppings (fresh berries, nuts, seeds) for serving
Prepare the apple
- Peel, core, and finely grate the medium apple using a microplane grater or box grater.
- Grate just before mixing to prevent the apple from browning and to keep its texture bright.

Ready when: Apple is finely grated with no large chunks
Tip: If you're preparing hours ahead, toss the grated apple with a tiny squeeze of lemon juice to prevent browning
Combine yogurt and milk
- In a medium mixing bowl, combine the 7 oz (200g) Greek yogurt, 1/2 cup (120ml) milk, and 2 tablespoons (30ml) honey.
- Stir with a spoon or whisk until the mixture is smooth and creamy.

Ready when: All oats are evenly coated and incorporated, no dry oats visible
Add vanilla and cinnamon
- If using vanilla extract and ground cinnamon, add them now.
- Stir until the flavorings are evenly distributed throughout the mixture.
- If skipping these, move to the next step.
Divide into serving bowls
- Divide the muesli mixture evenly between 2 serving bowls, or transfer the entire batch to an airtight container for storage.
- If using individual bowls, you can cover and refrigerate them separately.
Refrigerate to set
- Cover the bowls or container with lids or plastic wrap.
- Refrigerate for at least 4 hours, but preferably 8+ hours overnight.
- The rolled oats will gradually absorb the liquid and soften, creating a creamy, pudding-like texture.
- The grated apple will become tender, and its flavors will blend with the tangy yogurt and sweet honey.

Ready when: Oats are softened and plump, mixture is creamy and thickened, most liquid is absorbed
Stir and adjust consistency
- Remove from the refrigerator and stir the muesli well to redistribute any liquid that may have separated from the oats.
- If the muesli seems too thick, stir in 1–2 tablespoons (15–30ml) additional cold milk and mix well.
- If it's too thin, let it sit for 5 minutes to allow the oats to absorb more liquid.

Ready when: Consistency is creamy, spoonable, and tailored to your preference
Tip: Always stir well the morning of serving to redistribute any separated liquid and ensure every spoonful has fruit and oats
Top with garnishes and serve
- Transfer the muesli to a serving bowl if needed (if it was refrigerated in a container).
- Top with your choice of fresh berries, chopped nuts, seeds, and an extra pinch of cinnamon.
- Serve immediately while chilled.

Tips
- Grate the apple fresh, just before mixing, to preserve color and prevent browning. If preparing far ahead, toss the grated apple with a tiny squeeze of lemon juice.
- The ratio of yogurt to milk is key to texture: more yogurt creates a creamier, denser muesli; more milk creates a thinner, more porridge-like consistency. Adjust to your preference.
- Always stir well the morning of serving to redistribute any separated liquid and ensure every spoonful has an even distribution of fruit and oats.
- Add fresh toppings right before serving to keep them crisp and prevent them from becoming soggy in the moist muesli.
Make ahead
This recipe IS a make-ahead dish and works best when prepared the evening before. Prepare up to 3 days ahead, but consume within 2 days for best texture and freshness. The oats continue to soften and absorb liquid over time, so stir and adjust with milk if needed when serving.
Storage & reheating
Cover and refrigerate in an airtight container for up to 3 days. As the oats continue to absorb liquid during storage, add 1–2 tablespoons cold milk when serving if the mixture seems too thick. Stir well before each serving to redistribute any separated liquid. Not suitable for freezing, as the oats and apple will break down and become mushy upon thawing.
Substitutions
- Greek yogurt, full-fat or 2% → Regular plain yogurt (not Greek) or dairy-free yogurt (coconut, almond, or cashew milk–based). Non-Greek or dairy-free yogurts are thinner; use the same weight but the final muesli will be less creamy. Mix well to combine.
- milk → Any milk alternative (almond, oat, coconut, soy, or whole milk). Oat milk creates a creamier, more luxurious result similar to dairy milk; coconut milk adds subtle sweetness; almond milk is neutral.
- rolled oats, old-fashioned → Steel-cut oats or quick-cooking oats. Steel-cut oats require 10–12 hours of soaking; quick oats soften faster (4 hours minimum). Do not use instant oats, as they will become mushy.
- apple, medium → Pear, unsweetened applesauce, or pre-soaked dried apricots (chopped). Toss fresh fruit with a tiny squeeze of lemon juice to prevent browning if preparing ahead. Dried fruit should be softened in warm water first.
