Steps
Before you start
- Use whole milk ricotta for the creamiest texture
- Have all ingredients at room temperature for smooth blending
- Make dukkah ahead or use a store-bought blend
Prep ingredients
- Mince the garlic clove finely, finely zest the lemon, and finely chop the fresh thyme leaves.
- Make sure the ricotta is at room temperature—it should feel cool but not cold to the touch.
- If it's been refrigerated, let it sit on the counter for 30 minutes before blending.

Ready when: All ingredients are prepped and ricotta feels cool but not cold
Tip: Cold ricotta won't whip properly—this step is essential for achieving the fluffy texture.
Combine and blend
- In a food processor, combine the room-temperature ricotta, minced garlic, lemon zest, lemon juice, chopped fresh thyme, and 2 tablespoons of olive oil.
- Blend on medium speed for 2–3 minutes, scraping down the sides once halfway through.
- Continue blending until the mixture becomes light, fluffy, and completely smooth, with the ricotta roughly tripled in volume and looking cloud-like.

Ready when: Mixture is light, fluffy, and smooth with visible air incorporated; volume has increased by about one-third
Tip: Don't skip the blending step—this is what creates the airy texture. Overblending can make it grainy, so stop as soon as it's smooth and fluffy.
Season and adjust
- Taste the whipped ricotta.
- Season with sea salt and freshly ground black pepper, starting with ¼ teaspoon salt and ⅛ teaspoon pepper.
- Blend for 10 seconds to distribute evenly, then taste and adjust as needed.
- The dip should taste bright and garlicky but not sharp.
- If desired, drizzle in the honey (if using) and blend for another 5 seconds to add subtle sweetness that balances the spice and brightness of the lemon.

Ready when: Seasoning is balanced, flavors are well integrated, and honey (if used) is evenly distributed
Tip: Add salt gradually—ricotta can become bitter if over-salted. Honey is optional but recommended for a more rounded flavor profile.
Transfer and top
- Spoon the whipped ricotta into a serving bowl or onto a shallow plate, creating a shallow well in the center with the back of a spoon.
- Drizzle the remaining 1 tablespoon of olive oil around and into the well.
- Sprinkle the dukkah spice blend generously over the top and around the edges, reserving a small pinch for garnish if desired.
- Serve immediately.

Ready when: Dukkah is evenly distributed with visible oil pooling in the well and dip looks mounded and fresh
Tip: Create the well just before serving so the dip stays mounded and looks inviting. The dukkah stays crispest when added last.
Good to know
Tips
- Ricotta should be at room temperature—cold ricotta won't whip properly and will stay dense instead of becoming fluffy.
- The dukkah stays crispest if added right before serving. If you must prepare ahead, keep it in a small bowl and top the dip just as guests arrive.
- Serve with toasted pita bread, crackers, fresh vegetables (cucumber, bell pepper, radish), or even alongside grilled chicken or fish for a Mediterranean spread.
- For extra richness, reserve 1 teaspoon of the olive oil to drizzle on top after the dukkah—the layers of flavor and texture are stunning.
Make ahead
Blend the ricotta mixture up to 4 hours ahead, cover, and refrigerate. Top with dukkah and olive oil just before serving so the spices stay crispy and the dip looks fresh.
Storage & reheating
Room temperature: serve immediately; keeps up to 2 hours covered. Refrigerator: store the whipped ricotta (before topping) in an airtight container for up to 4 days. Freezer: not recommended due to texture loss. To reheat: let come to room temperature for 30 minutes, then whisk gently to restore fluffiness, and top with fresh dukkah and olive oil.
Substitutions
- whole milk ricotta cheese, at room temperature → Greek yogurt or whipped cream cheese. Greek yogurt will be slightly tangier and less rich; cream cheese will be denser. Use 1:1 ratio. Blend well to achieve the same airy texture.
- dukkah spice blend → Za'atar spice blend or sumac with crushed pistachios and sesame seeds. Use about 3 tablespoons za'atar, or mix 2 tbsp sumac with 1 tbsp crushed pistachios and 1 tbsp toasted sesame seeds for a similar crunchy, tangy topping.
- fresh thyme leaves → Fresh mint, oregano, or basil. Use the same amount. Mint will make the dip brighter; oregano will add earthiness; basil will give a lighter herb note.
- raw honey → Drizzle of pomegranate molasses or balsamic reduction. For a more savory-tart profile instead of subtle sweetness. Use ½ teaspoon of either.
