Whipped Mascarpone and Truffle Oil Dip
A luxurious, airy dip with creamy mascarpone whipped until light and fluffy, infused with earthy truffle oil, fresh thyme, and sharp Parmesan. This elegant appetizer takes just minutes to make and feels restaurant-quality. Serve with crostini, crackers, roasted vegetables, or breadsticks for an impressive holiday spread.
Steps
Before you start
- Remove mascarpone from the fridge 30 minutes ahead so it's at room temperature—this whips better
- Have all ingredients measured and ready
- Choose good-quality truffle oil; a little goes a long way
- Use fresh thyme if possible; it makes a difference
Whip the mascarpone
- Add the room-temperature mascarpone to a medium bowl.
- Using an electric mixer on medium speed (or a whisk by hand), beat for 2–3 minutes until it's noticeably lighter in color, fluffier in texture, and increased slightly in volume.
- Stop and scrape the bowl often so all the cheese whips evenly.
- Do not overbeat or it will become grainy.

Ready when: Mascarpone is pale, airy, and roughly 25% larger in volume
Tip: Overbeating breaks the fat globules and makes the mixture oily—mix just until fluffy, then stop.
Prepare the seasonings
- While the mascarpone whips, measure out 1 tablespoon (3 g) of finely chopped fresh thyme, ½ cup (50 g) of finely grated Parmigiano-Reggiano, ¼ teaspoon (a small pinch) of freshly cracked black pepper, and ⅛ teaspoon (a pinch) of sea salt.
- Place each in a small dish so they're ready to fold in together.
- If using lemon zest, have 0.5 teaspoon (1 g) of finely grated zest ready as well.

Ready when: All seasonings and cheese are measured and separated into small bowls
Tip: Measuring everything beforehand keeps you from deflating the whipped mascarpone while searching for ingredients.
Fold in flavorings
- Once the mascarpone is whipped and fluffy, add all the measured thyme, Parmesan, black pepper, and sea salt to the bowl.
- Gently fold together with a rubber spatula using a bottom-up motion, rotating the bowl as you go, for about 1–2 minutes until just combined.
- The mixture should still look airy and retain most of its volume—do not stir vigorously or you'll deflate it.

Ready when: All ingredients are evenly distributed but the mixture is still fluffy
Tip: Fold gently rather than stir vigorously—you want to keep the airiness you created when whipping.
Transfer and finish with oil
- Spoon the whipped mascarpone mixture into a shallow serving bowl or ramekin, making a slight well or depression in the center with the back of a spoon.
- Slowly pour the 1.5 tablespoons (22 ml) of truffle oil into the well and drizzle in a zigzag pattern across the surface.
- If using lemon zest, sprinkle the 0.5 teaspoon (1 g) over the top for a bright pop of color.
- Give it one very gentle stir with a fork to swirl the truffle oil in slightly, without fully blending it—you want ribbons of oil and color visible on top.

Ready when: Dip is in a serving bowl with truffle oil drizzled on top and swirled lightly
Tip: Save some of the truffle oil to drizzle again just before serving if the dip sits for a while—the oil is where the flavor and aroma are.

Tips
- Mascarpone quality matters hugely. Use imported Italian mascarpone if you can find it—it's creamier and more flavorful than domestic brands.
- The truffle oil is the star here. Use a good-quality brand (real truffles infused in oil, not artificial truffle flavor) for the best result.
- This dip is best served at room temperature or slightly chilled—never ice-cold, as the cold dulls the truffle aroma and the texture becomes too firm.
- Serve with high-quality crostini, breadsticks, roasted vegetable chips, or even plain crackers to let the dip shine.
Make ahead
Make the dip up to 4 hours ahead. Cover with plastic wrap and refrigerate. Bring to room temperature for 10 minutes before serving, and drizzle with extra truffle oil just before presenting.
Storage & reheating
Refrigerate in an airtight container for up to 3 days. Let come to room temperature for 10 minutes before serving. Do not freeze.
Substitutions
- truffle oil → White truffle oil or black truffle oil, depending on preference. Black truffle oil is earthier; white truffle oil is more delicate. Both work equally well.
- Parmigiano-Reggiano, finely grated → Aged Pecorino Romano. Pecorino Romano is sharper and slightly more peppery—use the same amount.
- fresh thyme leaves, finely chopped → Fresh rosemary, finely chopped. Rosemary is more pungent; use the same amount but taste as you go.
- lemon zest → Grated orange zest or a tiny pinch of white truffle powder. Orange adds warmth; truffle powder doubles down on the earthy flavor.
